2 ounces rye whiskey or bourbon
1 teaspoon pure maple syrup
Dash of Angostura bitters
Orange peel (for garnish)

Steps:

  • Mix whiskey, maple syrup, bitters, and 1 tsp. water in an old-fashioned glass until syrup is dissolved. Add a single large ice cube, then garnish with orange peel.

2 cups sugar
1 cup canola oil
4 large eggs
2 cups all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
4 cups finely grated peeled carrots
1 cup walnuts, toasted, chopped
Maple-Cream Cheese Icing

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Using electric mixer, beat sugar, oil and eggs in large bowl until well blended. Add flour, baking soda, cinnamon, ginger and salt; beat until blended. Stir in carrots and walnuts. Divide batter between pans.
  • Bake cakes until tester inserted into center comes out clean, about 32 minutes. Cool cakes in pans on rack 15 minutes. Run small knife between pan sides and cakes to loosen. Turn cakes out onto racks; cool completely.
  • Place 1 cake layer, flat side up, on platter. Spread 1 cup icing over. Top with second cake layer, flat side down. Spread remaining icing over top and sides of cake. Refrigerate cake 1 hour or up to 1 day. Serve at room temperature.

1 ounce maple syrup or simple syrup
2 dashes Angostura bitters
1 piece orange peel
1 maraschino cherry, preferably Luxardo

Steps:

  • Combine the bourbon, syrup and bitters in a large glass and stir. Fill a glass with a large ice cube (or 6 regular ice cubes). Pour in the cocktail and stir. Squeeze the orange peel with the skin side down over the glass and drop into the cocktail. Add the cherry.

For crust
2 1/4 cups unbleached all purpose flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
6 tablespoons chilled vegetable shortening, cut into 1/2-inch pieces
3 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
7 tablespoons (about) ice water
For filling
4 cups fresh blueberries (about 23 ounces)
1 cup pure maple syrup
1/4 cup unbleached all purpose flour
1/4 cup quick-cooking tapioca
4 teaspoons fresh lemon juice

Steps:

  • Make crust:
  • Blend first 4 ingredients in processor. Add shortening and butter. Using on/off turns, process until mixture resembles coarse meal. Mix in enough ice water by tablespoonfuls to form moist clumps. Gather dough together; divide into 2 pieces, 1 slightly larger than the other. Flatten into disks; wrap each in plastic and chill 1 hour. (Can be prepared 1 day ahead. Keep chilled. Let soften slightly at room temperature before rolling out.)
  • Make filling:
  • Place baking sheet on bottom of oven and position rack in center; preheat to 375°F. Combine blueberries, syrup, flour, tapioca and juice in bowl; toss to blend. Let stand 15 minutes.Roll out larger dough disk on floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Pour filling into crust. Roll out second dough disk on floured surface to 12-inch round. Arrange over filling. Seal crusts at edge of dish. Trim overhang to 3/4 inch; fold under and crimp edge decoratively. Using small knife, cut several slits in top crust.
  • Bake pie until juices bubble thickly and crust is golden, about 1 hour. Cool pie on rack. Serve at room temperature.

Several dashes Angostura bitters
2 orange wedges
2 lemon wedges
2 ounces bourbon
Sparkling water
Stemmed maraschino cherry

Steps:

  • Pour the maple syrup into an old-fashioned glass. Saturate with bitters, then squeeze in juice from 1 orange wedge and 1 lemon wedge.
  • Add remaining wedges, press with a pestle, add bourbon and stir well. Add ice cubes, fill with sparkling water and stir again. Pour, and garnish with a cherry.

2 teaspoons maple extract
2 cups flour
1/2 teaspoon salt
2 cups finely chopped walnuts
powdered sugar, for rolling

Steps:

  • Set oven to 375 degrees.
  • Prepare an ungreased cookie sheet.
  • Cream butter, sugar and maple extract until fluffy.
  • Sift together flour and salt.
  • Add to the creamed mixture; mix well.
  • Stir in walnuts.
  • Shape dough into 1-inch balls.
  • Place on cookie sheet.
  • Bake for 12-15 minutes.
  • Immediately remove with spatula.
  • When still warm, but cool enough to handle, roll baked cookies in powdered sugar.

COCKTAIL RECIPE: AMARETTO OLD FASHIONED, WITH BOURBON AND MAPLE



Cocktail recipe: Amaretto Old Fashioned, with bourbon and maple image

Recipe for Old Fashioned with bourbon, maple and amaretto: a classic bourbon-based cocktail to which we add the sweetness of amaretto, a touch of maple syrup and a little bitters.

1 part of amaretto
¼ part maple syrup
1-2 dashes of Angostura bitter
Ice
Cherries and orange zest (optional)

Steps:

  • In a mixing glass, add all the cocktail ingredients except the cherries. Mix gently.
  • Fill the rest of the mixing glass with ice cubes.
  • Take a visual measurement of the liquid then, using a large spoon, stir the ice using smooth rotations until the proportion of liquid has doubled.
  • Serve in a short Old Fashioned glass, using a cocktail strainer to retain the ice.
  • Add a cherry and orange zest.

  • 2. Simmer just 7 minutes and remove from heat.

1 cup maple syrup
2 tablespoons unsalted butter, melted
1 cup brown sugar
1/2 cup walnuts
3 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 375°F. Line a 9-inch pie plate with the rolled-out crust. For a crispier crust, consider parbaking.
  • Combine the eggs, maple syrup, butter, brown sugar, walnuts, and flour and stir until thoroughly combined. Spread the filling evenly in the crust.
  • Bake for 45 to 50 minutes, until the filling forms a crust but the pie is still gooey underneath. Cool on a wire rack for 1 hour before slicing. Serve at room temperature or chilled.
