SLOW COOKER ITALIAN CHICKEN ALFREDO
I came up with this recipe with ingredients on hand and it instantly became a family favorite! You can even make it using low sodium/fat free/reduced fat ingredients and it still has a wonderful flavor!

Steps:
- Spray the crock of a slow cooker with non-stick cooking spray. Place chicken breasts in crock. Combine Italian dressing mix, and water in a small bowl. Pour over chicken; sprinkle with garlic, cover, and cook on Low 4 hours.
- After 4 hours, whisk softened cream cheese and cream of chicken soup together in a bowl. Pour over chicken; stir in mushrooms. Cover and cook on Low for 1 additional hour.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- To serve, spoon chicken and sauce over hot cooked pasta and sprinkle with parsley.

Steps:
- place breasts in a ziplock bad and dump italian dressing on top.
- let marinade in the refrigerator for at least 2 hours.
- in the meantime combine all of the rub ingredients.
- without wiping off excess dressing, sprinkle rub on one side of chicken and place on grill season side down.
- sprinkle other side of chicken and cook indirectly for 10-12 minutes each side or until done.
FAT FREE ITALIAN DRESSING
I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

- Mix the cornstarch and water together in a small saucepan. Cook, stirring constantly, over high heat until it begins to thicken and is clear. (It will thicken even more once it is cool.).
- Combine all the ingredients, including the cornstarch mixture, in a jar with a lid. Cover and shake to mix thoroughly.
- Let stand for at least 2 hours to blend flavors. Shake well before using. Store at room temperature.
