This is like the best parts of a loaded baked potato and traditional mashed potatoes all rolled into one. For extra fun, take your leftovers, add some milk or cream, reheat, and you've got a kickin' loaded potato soup!

Steps:
- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
- Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
- Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

- Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside.
- Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, andcrumble into pieces.
- Using a fork, mash the potatoes in pan until light and fluffy. Add the cream cheese, butter, and sour cream, and stir until combined and smooth. Add theonion and any onion juice, chives, 2 cups cheese, half the bacon, salt, and pepper. Stir until well combined.
- Transfer to a buttered 3-quart baking dish. Top with remaining 1/2 cup cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

I got this from her magazine and let me tell you that these are amazing!! They were made by a firefighting chef, Mike Wathen, where she visited in Alabama. Here are the adjustments I made: red potaotes, light sour cream, light cheddar cheese, and turkey bacon. I actually just fried up the bacon and then crumbled it. - Preheat the oven to 350 degrees F. Place a cooling rack on top of a baking sheet lined with parchment paper.
- Spread the bacon over the cooling rack so that none of the slices are touching. Slice the top off the head of garlic so the cloves are exposed. Drizzle the exposed cloves with the olive oil and sprinkle with some salt and pepper, then wrap in aluminum foil to create a packet. Roast both until the bacon is crispy and the garlic is soft, about 30 minutes. Set aside to cool.
- Put the potatoes in a pot and cover with water. Add a generous pinch of salt. Bring to a simmer and simmer until the potatoes are tender, about 30 minutes.
- Drain the water from the pot and transfer the potatoes to a stand mixer. Add the cream, butter, sour cream, 6 cloves of the roasted garlic and 1 3/4 cups of the Cheddar to the mixer and whip until combined and smooth. Add additional salt and pepper to taste.
- Transfer the potatoes to a serving dish and top with the remaining Cheddar. Crumble the bacon over the top and sprinkle with the scallions. Serve immediately.
SLOW COOKER LOADED MASHED POTATOES (WITH OPTIONAL BACON)
A seriously easy Crock Pot mashed potato recipe, these loaded mashed potatoes are trashed up (in the best possible way) with butter, sour cream, scallions, cheddar cheese, and - of course - bacon for the meat-eaters.

- Add potatoes to a 3-quart or larger slow cooker. Dot with the butter and sprinkle on the salt. Pour water or vegetable broth over the top. Cook on high for 4-5 hours or low 7-8 hours, or until potatoes are fork-tender. Turn off the slow cooker, remove the lid, and let cool for a few minutes.
- Add 1/2 cup half-and-half and sour cream. Mash and stir with a potato masher until well-combined. Add more half-and-half for a thinner consistency, if desired. Stir in 1 cup cheddar cheese and most of the scallions, reserving some of the green slices for garnish. Taste and add additional salt and some pepper if desired.

- Cook the bacon ahead of time. Fry until crispy, and create little bacon bits to suit your preferred size and texture for the topping.
- Filling:.
- Cook the Simply Potatoes Traditional Mashed Potatoes according to the directions on the package. Once heated and ready to eat, you must add the other filling ingredients to the mashed potatoes. The cream and butter add just that extra traditional flavor and keep the potatoes very moist. Mix all the filling ingredients together.
- Spring Rolls:.
- I like use fresh spring roll wrappers about 4 inches wide x 6 inches long, however it is up to you how big or small you want your rolls to be. Add about 1 1/2 tablespoons of the mashed potato mix to each spring roll. Roll the spring roll. Secure the ends by adding a bit of water to one end and firmly pressing down onto the other end. Repeat until you have either no more mashed potato mix, or no more spring roll wrappers.
- Cook:.
- I prefer to use a deep pan. Add enough olive oil to fill 4 inches of the bottom of the pan. Heat olive oil until it starts to bubble. Add a few spring rolls at a time to the oil, cook for about 1 minute on each side. The trick is, you want the wrapper to stay somewhat soft and easy to bite into. Frying for more than a minute or two will make the wraps too crunchy. Drain the rolls by placing them onto paper towels.
- Assemble Fully Loaded Rolled Mashed Potatoes:.
- Place the potato rolls on a serving plate. Here is where you can get fancy. Garnish with sour cream, green onion, cooked bacon, sundried tomatoes, and shredded goat cheese.

This super yummy recipe is like eating a mashed potato casserole! Savory, creamy, and very filling, I've been known to top it off with a pat of butter too. If you're going to go the comfort food route, go all the way!

- 1. Boil potatoes in water until tender, then drain.
- 2. Preheat oven to 350, and grease 3 qt. casserole dish.
- 3. Return potatoes to pan, add evaporated milk, sour cream, salt and pepper. Beat with hand held mixer or mash with potato masher until smooth. Stir in 1 and 1/2 cups cheese and half of the bacon. Spoon mixture into casserole dish.

THANKSGIVING MASHED POTATOES - LOADED!
A friend brought over a pan of these, along with some meatballs & gravy, when we came home from the hospital with our second son who was born on Thanksgiving Day (1991). Since then these have become a "tradition" at our Thanksgiving feast. The great thing about these potatoes is that they can be made as much as a week ahead of time, then just need to be popped in the oven or microwave to be zapped at the last minute (while the turkey is "resting" and being carved). You can work on the gravy--and NOT worry about also mashing the spuds!!!

- Quarter the spuds, cook in salted water until tender (25-30 min?), drain well, and mash.
- Add remaining ingredients, mixing well (I use my KitchenAid mixer).
- Butter a large casserole dish, spoon spuds into the pan, smoothing off the top.
- Bake at 350 for 30-45 minutes OR zap in the microwave until heated through.
- WARNING: Taste-testing is addictive!

LOADED BAKED RED MASHED POTATOES

- Cook bacon until crispy, place on paper towel to soak up grease, wait until cool.
- Chop bacon into approximately 1/3 inch pieces and set aside for later.
- Clean and cut red potatoes into 1/2 inch to 2/3 inch cubes (leave skin on).
- Boil potatoes until cubes are easily mashed. (Test a couple cubes with a spoon or finger).
- Lightly mash in a large bowl (Avoid over mashing! Red potatoes can become gooey) and set aside for later.
- Preheat oven for 350.
- In a small mixing bowl put: sour cream, milk, parsley, garlic powder, black pepper, salt, and basil.
- Stir until smooth/blended well.
- Fold mixture into mashed potatoes.
- Spoon potatoes evenly into a glass baking dish.
- Take the strips of sharp cheddar and make a loose basket weave pattern on top of the potatoes.
- Sprinkle the chopped bacon on top of the potatoes with cheese.
- Sprinkle the sliced green onions on top.
- Bake for 15 minutes at 350.
