2 large eggs
2 Tbsp cream
a pinch of salt and pepper if desired
1/2 to 1 c cut up fresh or frozen vegetables, thawed. (i used a mix of snow peas, carrots, water chestnuts, and broccoli)
1 Tbsp butter
2-3 Tbsp grated cheese (i used gouda)
1 7 to 8-inch oven proof skillet

Steps:

  • 1. Whirl eggs and cream in blender until well-beaten. Add salt and pepper if desired. Set aside.
  • 2. Melt butter in skillet over medium-low heat. Saute vegetables 2-4 minutes. Pour beaten eggs over vegetables and cover skillet. Cook until eggs are almost set.
  • 3. Preheat broiler. Top frittata with grated cheese. Place under broiler for 2-3 minutes, until cheese is melted and frittata is puffy. Serve immediately.
  • 4. You can double this recipe for two if you use a 9-10 inch skillet. You can also add other herbs, like rosemary or thyme, if you like. Try different cheeses and different vegetable combinations.
