They're summery, but these kabobs really stick to your ribs. A microwave makes quick work of cooking the potatoes, so grilling is done in a flash. -Taste of Home Test Kitchen

1 pound beef top sirloin steak, cut into 1-inch cubes
1-1/2 teaspoons steak seasoning, divided
1 garlic clove, minced
1 cup cola
3 small red potatoes (about 8 ounces), cubed
1 tablespoon water
1 cup cherry tomatoes
1 medium sweet orange pepper, cut into 1-inch pieces
1 teaspoon canola oil
1 cup pineapple chunks

Steps:

  • Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high just until tender, 4-5 minutes; drain. Return to bowl. Add tomatoes, pepper, oil and remaining steak seasoning; gently toss to coat., Drain beef, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread beef, vegetables and pineapple. Grill, covered, over medium heat or broil 4 in. from heat until beef reaches desired doneness and pepper is crisp-tender, 6-8 minutes, turning occasionally.

You can cook these under the broiler. For variation, try marinating shrimp, (which will take 2-4 minutes to grill or broil in all!) Serve with fresh salad, steamed veggies, baked potato or any of your favorite sides.

4 chicken breasts, boneless skinless, cut into bite size pieces
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
1 lime, juiced
1 teaspoon garlic, minded

Steps:

  • In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic.
  • Place cut up chicken in a 1 gallon zip lock bag.
  • Pour marinate into the bag with chicken.
  • Place in the refrigerator at least 30 minutes.
  • Soak bamboo skewers in water for 5 minutes or longer.
  • Grill for 6 to 8 minutes on each side, until juices run clear.

8 large sticks rosemary, each 8-9 inches long
2 small zucchini (about 4 ounces each)
24 cherry tomatoes
2 large slices crusty bread (about 1 ounce each)
2 tablespoons olive oil
Salt and pepper to taste

Steps:

  • Trim the leaves off the bottom 5 inches of each rosemary stick, leaving the wooden stalk exposed. Soak the rosemary sticks in water for 5 minutes.
  • In the meantime, slice the zucchini crosswise into 1/4-inch rounds and quarter each slice of bread.
  • Assemble the kebabs by alternating 1 or 2 slices of zucchini with a tomato on the stalk of the rosemary. When there is about an inch left of the stalk put a piece of bread on the end, spearing the crusty side of the bread. Wrap the leafy part of each stick with foil. Brush the vegetables and bread with olive oil, season with salt and pepper, and grill until the vegetables are tender and the bread is toasted, turning once or twice, about 6 minutes.
  • Remove the foil and serve.

Steps:

  • In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves (shrimp) into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes. For a slightly zestier version, add a teaspoon of freshly chopped cilantro to the marinade. Grill on medium high heat for 6 to 8 minutes on each side, until juices run clear. Shrimp will take 2-4 minutes to grill.
