This is a recipe from Indonesia from a learning packet at my DD's culinary school. I have added approximate cooking times. I have not tried this recipe but my DD has indicated to me that she liked it.

1 cup brown sugar
1 cup water
3/4 cup soy sauce
1/2 cup molasses
1/2 teaspoon ginger (minced)
1/4 teaspoon coriander (ground)
1/4 teaspoon black pepper
1 teaspoon garlic (minced)
1/2 teaspoon salt
1/8 teaspoon white pepper (ground)
2 tablespoons ketjap manis
2 teaspoons lime juice
12 chicken breasts (boneless tenderloins)
2 tablespoons peanut oil

Steps:

  • Ketjap Manis:.
  • Combine water and sugar in a sauce pan, bring to a boil (stir frequently) and then reduce on simmer to a syrup consistency, about 10-15 minutes.
  • Add soy, molasses, coriander, black pepper, and ginger and simmer for an additional 3 minutes.
  • Marinade:.
  • Mix garlic, salt, pepper, ketjap manis, lime juice and oil and add chicken to a resealable plastic bag.
  • Soak bamboo skewers in extra water for 1 hour to help prevent burning.
  • Marinate the chicken for 1 hour in the refrigerator.
  • After marinating is complete, skewer chicken tenderloins and grill them on medium high heat for 2-3 minutes per side or until chicken is cooked thoroughly.
  • Enjoy!

This is Indonesian soy sauce; slightly thicker and sweeter than regular soy sauce. If you cannot buy commercial Ketjap manis in your local market, you can follow this recipe. I use it in my "Barbecued Roast Beef" recipe, for a marinade base, and in spicy peanut sauce.

Yield 3 cups of ketjap manis

Number Of Ingredients 7

1 cup dark brown sugar, packed
1 cup water
1 cup soy sauce
7 tablespoons dark molasses (treacle for my Aussie friends!)
1 teaspoon grated fresh ginger
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine sugar and water in 2 quart saucepan.
  • Bring to simmer over medium heat, stirring constantly just until sugar dissolves.
  • Increase heat to high and continue cooking until syrup reaches 200 degrees on a candy thermometer, about 5 minutes.
  • Reduce heat to low.
  • Stir in remaining ingredients and simmer 3 minutes.
  • This will keep 2-3 months tightly covered in the refrigerator.

I was short of time and wanted a tasty easy quick dish - this worked for me I hope if you try it you will like it too. I served this over a bought kit of "Pad Thai", although not as good as home made Pad Thai it was delicious none the less

1 lb stir-fry beef
1/3 cup ketjap manis
1 large tomatoes, coarsely chopped
1 tablespoon dry garlic flakes
1 tablespoon dry onion flakes
2 tablespoons hot sauce (i use Denzils Kamikazi but your choice) (optional)
2 tablespoons oil

Steps:

  • Brown the beef in the oil for apprx 5 minutes.
  • Add remaining ingredients, stir well and simmer for 10 minutes.
  • Serve over noodles or rice.

2 cups soy sauce
1 1/2 cups light brown sugar, firmly packed, or more to taste
3/4 cup molasses, or more to taste
2 cloves garlic, flattened with the side of a cleaver and peeled
2 slices ginger (each 1/4 inch thick), flattened with the side of a cleaver
2 whole star anise or 1 teaspoon anisette liqueur plus 1/4 teaspoon liquid smoke
1 bay leaf
1 teaspoon coriander seeds

Steps:

  • 1. Combine the soy sauce, 1 1/2 cups sugar, 3/4 cup molasses, the garlic, ginger, star anise, bay leaf, and coriander seeds in a medium-size, heavy saucepan. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce the heat to medium-low and simmer, uncovered, until the mixture is richly flavored and slightly syrupy, about 8 minutes. Stir the mixture as it cooks. Taste for seasoning, adding sugar or molasses as necessary the sauce should be quite sweet.2. Strain the ketjap into a clean jar and let cool it will keep, tightly covered in the refrigerator, for several months.Makes about 3 cups

CHEF JOEY'S KETJAP MANIS

If you enjoy Asian food then Ketjap Manis is a great sauce to have in your fridge. It's dark and sweet and really adds to Satay or Sunflower Butter Sauces. I don't like using sugar so I came up with this sauce using Agave Syrup in its place. I have tried the commercial Ketjap and it's thicker then mine.

2/3 cup dark agave syrup
3/4 cup filtered water
2/3 cup tamari soy sauce
5 tablespoons molasses
1 teaspoon grated ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground black pepper

Steps:

  • Combine the agave and water in a small sauce pan.
  • Bring to a boil.
  • Using a candy thermometer bring the mixture up to 200'F.
  • Once it reaches that temperature reduce the heat to low.
  • Stir in the rest of the ingredients and simmer for 5 minutes.
  • Store in the fridge for 2-3 months in a jar with a lid.

1 garlic clove, minced
1 star anise

Steps:

  • Caramelize 3/4 cup sugar in a heavy pot.
  • Gradually stir in the rest of the ingredients. Bring to a boil, lower heat and simmer for 10 minutes.
  • Cool and strain through cheesecloth.
