Okra and onions are fried with bacon, then simmered with tomato and corn in this delicious side dish that is especially good served alongside cornbread. This recipe is a longtime family favorite.

2 slices bacon, chopped
1 medium onion, chopped
1 (10 ounce) package frozen cut okra
1 (14.5 ounce) can diced tomatoes, drained
1 (20 ounce) package frozen corn
1 tablespoon file powder
salt and pepper to taste

Steps:

  • Place bacon in a large skillet over medium-high heat. Cook and stir to release some of the juices, then add the onion and okra. Fry until tender and browned, stirring constantly. Be careful, as this tends to brown quickly.
  • Pour in the tomatoes, and simmer over medium heat for 20 minutes. Mix in the corn, and simmer for another 10 minutes. Season with file powder, salt and pepper, and serve.

2 Tbsp bacon drippings
1 - 16 oz bag of frozen okra slices, thawed or 2 cups fresh, sliced
1 medium onion, chopped
1 clove garlic
1 - 15 oz can, chopped tomatoes & juice
1 - 11 oz can, whole kernel corn with jalapenos ( drained ), or use plain - frozen can be used as well _ or even fresh
1 tsp creole seasoning
fresh cracked black pepper - to taste
pinch sugar if tomatoes are bitter
1/2 Tbsp butter - optional

Steps:

  • 1. In a medium iron skillet, over medium heat, add bacon fat, once hot add okra and onion - continue cooking until okra begins to brown , stickiness diminishes and onions are soft. Add garlic and cook another minute. Stirring occasionally.
  • 2. Add corn, tomatoes, juice and seasonings. Continue cooking until well heated through and begins to thicken - 15 minutes. Right before serving I stir in some butter. Serve hot.
  • 3. So good!

4 slices bacon
1 cup chopped green bell pepper
1 red onion, sliced
2 cloves garlic, minced
1 pound okra - rinsed, trimmed, and sliced 1/2-inch thick
2 cups frozen corn
1 bay leaf
3 large tomatoes - peeled, seeded, and chopped
⅓ cup vegetable broth
salt to taste
black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet. Crumble bacon into a bowl.
  • Heat bacon grease in the same skillet over medium heat and add bell pepper, onion, and garlic. Cook and stir for 3 minutes. Add okra, corn, and bay leaf. Cover skillet and reduce heat to low. Cook, stirring occasionally, 3 to 4 minutes more. Add tomatoes and broth. Cook until okra is tender as desired, about 10 minutes.
  • Remove and discard bay leaf. Season with salt and pepper. Serve garnished with crumbled bacon.

4 corn, ear, husks and silk removed, large
2 cups okra, trimmed, and cut into 1/2 inch rounds
2 tablespoons cornmeal (fine or medium grind)
2 tablespoons butter, unsalted
4 lbs tomatoes, cored and chopped coarse
1 cup water
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cut the kernals from the cob and transfer to a medium bowl. Scrape the cobs with the back of a knife to collect the milk in the same bowl and set aside.
  • Toss the okra with the cornmeal in a large bowl until evenly coated. Melt the butter in a large skillet over medium high heat. Add the okra to the skillet(leaving the excess cornmeal behind) and fry until golden brown, about 2 minutes per side. Stir in the corn, tomatoes, water, and 1/2 t salt, bring to a simmer, then cook over medium-low heat until the tomatoes break down, most of the liquid has evaporated, and and the sauce becomes very thick, 45 to 55 minutes. Season to taste with salt and pepper to taste.

1/2 pound fresh okra
1 medium vine-ripened tomato
1 small onion
1 ear corn
1 1/2 tablespoons vegetable oil
1/2 cup water
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut okra into 1/2-inch-thick slices. Peel and chop tomato. Cut onion into thin slices and cut corn from cob. In a heavy skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking and saut okra with salt to taste, stirring occasionally, until browned, about 3 minutes. With a slotted spoon transfer okra to a bowl.
  • Add remaining‚ tablespoon oil to skillet and sauté onion, stirring, until it begins to soften. Stir in tomato, water, and Worcestershire sauce and simmer, stirring occasionally, 3 minutes. Add corn and simmer until corn is crisp-tender and sauce is thickened, about 3 minutes. Stir in okra with salt and pepper to taste and cook until heated through.

Steps:

  • Cook scallions, jalapeño, bell pepper, and 1/2 teaspoon salt in butter in a 12-inch heavy skillet over medium heat, stirring occasionally, until scallions begin to brown, 7 to 9 minutes. Stir in tomatoes and cook, stirring occasionally, until broken down into a sauce, about 15 minutes.
  • Add corn and okra and cook, stirring occasionally, until just tender, about 15 minutes.
