CUCUMBER SALAD WITH VINEGAR
Mom's recipe for Cucumber Salad with Vinegar is a healthy and easy side dish to pair with any summer meal!

Steps:
- Slice cucumbers very thinly and place in a large bowl. I like to use a mandoline to keep the slices even and to make the process very fast, but you can just use a knife if you prefer.
- In a separate small bowl or in a jar, whisk or shake together vinegar, water, sugar, salt, pepper and herbs. Pour over cucumbers. Cover; chill at least one hour or overnight. Drain cucumbers and serve!

- Wash and split the cucumber into 2-4 long spears. To the cucumbers add the salt, dill and garlic. Mix all the ingredients together.

- Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.

- Dissolve yeast in water.
- Scald milk, and add melted butter or margarine, salt, sugar. When lukewarm add to yeast and water. Stir in 4 cups flour. Cover, and place in a warm place. Let rise for about 2 hours, or till doubled in bulk.
- Punch down. Stir in cardamom, cherries, raisins and citron. Work in remaining flour until soft dough forms. Let rise in warm place for 2 to 3 hours, or until doubled.
- Knead slightly, and form into 4 round loaves. Place on greased cookie sheets. Let rise for 1 to 2 hours, or till doubled. Brush loaves with beaten egg white.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until golden brown.
