- In a Dutch oven coated with cooking spray, cook the sausage, onion, carrot and celery over medium heat until meat is no longer pink; drain. , Add the broth, tomatoes, tomato sauce, garlic, seasonings and bay leaf. Bring to a boil. Stir in orzo; cook, uncovered, for 8-10 minutes or until pasta is tender. Discard bay leaf. Sprinkle servings with cheese if desired.

Steps:
- Mix pork, beef, egg white, bread crumbs, and Italian seasoning together in a bowl. Form very small, pea-sized meatballs.
- Heat oil in a soup pot or Dutch oven over medium heat. Add carrots, celery, parsnip, onion, herbes de Provence, red pepper flakes, salt, and pepper. Cook and stir until vegetables are soft, 7 to 10 minutes.
- Pour chicken broth into the pot; bring to a boil. Add the mini meatballs and orzo pasta. Reduce heat to low; let simmer until flavors combine, 15 to 20 minutes. Add spinach; cook until wilted, 2 to 3 minutes. Garnish with Parmesan cheese.

- In a soup pot, brown sausage. Add onions and cook until onions are translucent. Add garlic and saute for another minute or two. Drain meat/veggies. Put back in pot. - Heat oil in a large stockpot over medium-high heat. Add onion and saute for 4 minutes, until soft. Add carrots, celery and garlic and saute for an additional 3 minutes. Add chicken stock, tomatoes, orzo (pasta), thyme, oregano, rosemary and stir to combine. Bring soup to a simmer, stirring occasionally. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, until the pasta is al dente. Stir in the spinach and cook for 1-2 minutes until it is bright green and wilted. ITALIAN SAUSAGE ORZO SOUP
Steps:
- 1. In a large stockpot or Dutch oven, add in the Italian sausage, minced garlic, and diced yellow onion.
- 2. Crumble the sausage as you brown it.
- 3. Once the sausage is cooked through and onion is tender, add in the broth, both cans of tomatoes (undrained), sliced carrots, sliced celery, diced ret potatoes (cut pretty small), and chopped bell pepper.
- 4. Add in the seasonings: . Italian seasoning, oregano, and basil (to taste). Add salt and pepper to taste. Depending on the saltiness of the broth you may not need any further salt.
- 5. Bring to a boil and then reduce the heat. Cover the pot and simmer for 20-25 minutes, or until all the veggies are crisp tender.
- 6. Meanwhile, in a separate pan, follow package directions to cook the Orzo to al dente. Drain and rinse in cool water.
- 7. Remove the soup from the heat and stir in the drained orzo. Then stir in the spinach gently.
- 8. Taste and adjust seansoning to preference. You can add in red pepper if using and the fresh herbs. Serve with Parmesan cheese and crusty bread.

- Brown the sausage well, then add the onions and celery.
- Let cook until the onions and celery are soft.
- Add the Yoshida's and chicken bouillion; let this simmer for 20 minutes.
- Add the chopped up stewed tomatoes, tomato bisque soup, creamed corn and frozen vegetables.
- Let simmer 10 minutes, then add the orzo with 2 soup cans of water (or more).
- Now let simmer until the orzo is cooked.
- Stir so orzo will not stick to bottom of soup pan.
