Not all hummus is made with chickpeas! Try this tasty black bean hummus appetizer topper. With a dab of sour cream and fresh veggies, it's glorious.

Yield Makes 24 servings, 3 topped crackers each.

Number Of Ingredients 12

1 Tbsp. olive oil
1 cup chopped red onions
1 jalapeño pepper, seeded, finely chopped
1 can (15 oz.) black beans, rinsed
1/4 cup cilantro
1 tsp. lime zest
2 Tbsp. fresh lime juice
1/2 tsp. hot pepper sauce
72 round buttery crackers
1/2 cup sour cream
1/2 cup finely chopped red peppers
1/2 cup finely chopped avocados

Steps:

  • Heat oil in small skillet on medium heat. Add onions and jalapenos; cook and stir 5 min. or until crisp-tender. Cool slightly.
  • Transfer onion mixture to blender. Add next 5 ingredients; blend until smooth.
  • Top crackers with bean mixture, sour cream, red peppers and avocados. Serve immediately.

2 15-ounce cans black beans, rinsed, drained
3/4 cup tahini (sesame seed paste)*
1/4 cup fresh lemon juice
1/4 cup (packed) chopped fresh cilantro
4 green onions, sliced
2 tablespoons olive oil
2 large garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Pita bread rounds, cut into triangles
*Available at Middle Eastern and natural foods stores and some supermarkets.

Steps:

  • Combine first 9 ingredients in processor until smooth. Season hummus to taste with salt and pepper. Spoon hummus into bowl. Serve with pita triangles.

This is the absolute best hummus I have ever had. It goes great with some toasted pita bread. Add more lemon juice if this hummus tastes like it needs a little extra kick.

1 clove garlic
1 (15 ounce) can black beans; drain and reserve liquid
2 tablespoons lemon juice
1 ½ tablespoons tahini
¾ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon cayenne pepper
¼ teaspoon paprika
10 Greek olives

Steps:

  • Mince garlic in the bowl of a food processor. Add black beans, 2 tablespoons reserved liquid, 2 tablespoons lemon juice, tahini, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper; process until smooth, scraping down the sides as needed. Add additional seasoning and liquid to taste. Garnish with paprika and Greek olives.
