BONELESS TURKEY BREAST IN THE INSTANT POT®



Boneless Turkey Breast in the Instant Pot® image

Shave some precious time by using your Instant Pot® to prepare this succulent turkey breast. It's perfect when you are craving turkey, but you don't want to fire up your big oven. You may serve it for a main dish, or for a hot sandwich--cook's choice! I served it with mashed potatoes and my family loved it.

1 tablespoon ground paprika
1 tablespoon herbes de Provence
1 teaspoon seasoned salt
salt and ground black pepper to taste
1 (3 pound) frozen boneless turkey breast in mesh, thawed, with gravy packet reserved
2 tablespoons extra-virgin olive oil, divided
1 ½ cups chicken stock
3 stalks celery, cut into 4-inch pieces
½ onion, cut into 1/2-inch slices
½ cup water, or as needed
2 tablespoons unsalted butter
2 tablespoons all-purpose flour

Steps:

  • Combine paprika, herbes de Provence, seasoned salt, salt, and pepper in a small bowl. Place the trivet of a multi-functional pressure cooker (such as Instant Pot®) on a work surface.
  • Pat all sides of thawed turkey breast with paper towels until dry. Be sure to leave the mesh in place, as this holds the turkey together. Rub turkey with about 2 teaspoons olive oil, then rub with dry seasonings. Set gravy packet aside for later use.
  • Turn on the cooker and select Saute function. Allow the inner pot to heat, 1 to 2 minutes. Add remaining oil to the hot pot, then add turkey breast and brown on all sides, about 5 minutes. Carefully remove turkey breast and set on the trivet. Pour chicken stock into the hot pot and scrape up any browned bits with a wooden spoon. Place the trivet and turkey breast into the pot and place celery and onions around it. Cancel Saute function.
  • Close and lock the lid, set the valve to seal, and select high pressure according to manufacturer's instructions. Set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Release any remaining pressure carefully using the quick-release method according to manufacturer's instructions.
  • Open the pot and check internal temperature of the turkey with an instant-read thermometer. Safe internal temperature is at least 165 degrees F (74 degrees C). Lift turkey out of the pot and place on a cutting board; cover with aluminum foil. Remove the trivet and turn off the cooker.
  • Strain cooking liquid into a glass measuring cup. Add enough water to make 1 1/2 cups liquid.
  • Return the inner pot to the cooker, add butter, and select Saute function. Sprinkle flour into the melted butter and whisk briskly to avoid lumps. Whisk bubbling mixture for about 2 minutes, then gradually add the cooking liquid, stirring constantly. Pour in the contents of the gravy packet; cook and stir until mixture comes to a boil and thickens slightly, 5 to 10 minutes. Cancel Saute function and pour gravy into a serving container.
  • Slice turkey and serve warm with gravy.

1 (1 ounce) package onion soup mix
1 (6 pound) turkey breast, thawed
2 ribs celery, cut into large chunks
1 onion, cut into large chunks
1 cup chicken broth
2 tablespoons water
1 tablespoon cornstarch, or more as needed

Steps:

  • Sprinkle onion soup mix all over turkey breast and place in the pot of an electric pressure cooker (such as Instant Pot®). Place celery and onion chunks over and around turkey breast. Pour chicken broth over turkey breast.
  • Seal pressure cooker and bring to high/low pressure on the 'Poultry' setting or according to manufacturer's instructions; cook until juices run clear, about 30 minutes. Release pressure through natural-release method for about 20 minutes. Transfer turkey breast to a plate and slice.
  • Change the electric pressure cooker setting to 'Saute.' Mix water and cornstarch together in a bowl; add a small amount of hot liquid from the pot. Mix until dissolved; pour into the pot and whisk well until thickened, about 3 minutes. Serve gravy alongside turkey.

1 tablespoon light brown sugar
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
2 skin-on, boneless turkey breasts (about 2 1/2 pounds each)
7 tablespoons unsalted butter
1/2 cup all-purpose flour
1/2 cup dry white wine
2 cups turkey stock or low-sodium chicken broth

Steps:

  • Whisk the sugar, sage, thyme, rosemary, garlic, 5 teaspoons salt and 1/2 teaspoon pepper in a small bowl until combined.
  • Starting on the top edge of one turkey breast, gently lift the skin to separate it from the meat, but leave a 1/2-inch border around the perimeter where it's still attached to the breast. (You want to make a pocket to hold all the herbs and seasonings.) Stuff half of the herb mixture underneath the skin, massaging it into the flesh and evenly distributing it over the surface of the meat. Repeat with the remaining turkey breast and herb mixture. Let sit uncovered at room temperature for at least 1 hour or wrapped tightly in plastic and chilled for up to 3 days.
  • Melt 6 tablespoons butter in a 6- or 8-quart Instant Pot® set to the high saute setting (see Cook's Note). Add the flour and cook, stirring constantly, until the roux is deep golden brown and smells nutty, 4 to 6 minutes; scrape into a heatproof bowl and set aside (the roux will continue to darken as it sits).
  • Add the remaining tablespoon butter and, working one breast at a time, cook skin-side down, undisturbed, until deep golden brown, 6 to 8 minutes; transfer to a baking sheet. Repeat with the remaining breast. Add the wine to the pot to deglaze, scraping up any browned bits from the bottom, and cook until you can't smell alcohol and the wine smells fruity and sweet, 3 to 4 minutes. Add the stock, place the rack in the pot and position both breasts on the rack side by side to evenly cook.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on the high pressure setting for 15 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
  • Transfer the turkey to a baking sheet and let sit uncovered while you make the gravy.
  • Set the Instant Pot® to the high saute setting and bring the cooking liquid to a boil. Whisk in the roux and cook until the gravy boils and thickens, about 5 minutes. Turn off.
  • Cut the turkey crosswise into 1/2-inch-thick slices and top with the gravy.

MOIST AND TENDER INSTANT POT TURKEY BREAST

One of my favorite ways to cook a moist, tender turkey breast for a main course or for sandwiches. Even though in a pressure cooker the skin doesn't get crispy, using this method it does become a beautiful golden brown as shown in the second photo. Number Of Ingredients 4

1 turkey breast (2-3 lbs.)
2 tb. butter (don't substitute. needed to form a nice sear.)
1 cup of water mixed with 1-1 1/2 tsp. better than bouillon (you could use chicken broth, but i find that btb has a much better flavor.)
salt, pepper, garlic powder, onion powder and paprika

Steps:

  • 1. Season turkey breast with salt and freshly ground black pepper, onion powder, garlic powder and paprika.
  • 2. Melt 2 TB. butter in pressure cooker on "brown/sear" setting. Place turkey breast in pot, skin side down. Turn occasionally for 8-10 minutes, picking up browned bits at the bottom and browning all sides.
  • 3. Remove turkey breast to platter and add wire rack to pot. Add Better Than Bouillon mixture. Return turkey breast to rack in pot. Re-season, if desired.
  • 4. Cook on Poultry setting for 30 minutes. Allow steam to release naturally for 10 minutes, then release rest of pressure. Internal temp should reach 165 degrees. Slice and serve.

TURKEY BREAST TENDERLOIN FROM THE INSTANT POT!

1 boneless, turkey breast tenderloin
2 Tbsp canola oil
2 c chicken broth
2 tsp chicken soup base
salt & pepper to taste
1/4 c all purpose flour
1/3 c water

Steps:

  • 1. select saute button on your Instant pot and heat the 2 Tbsp. canola oil.
  • 2. Brown turkey breast tenderloin in hot oil, on all sides.
  • 3. Remove the turkey breast tenderloin to a plate and set aside
  • 4. Add broth and chicken soup base to pot and use a spatula to deglaze the pot.
  • 5. Press Cancel on your Instant Pot.
  • 6. Place rack into pot and place the tenderloin onto the rack.
  • 7. lock the lid on the pot and set the vent to sealing.
  • 8. Cook on high pressure for 30 minutes.
  • 9. use quick release.
  • 10. Remove turkey tenderloin to plate and keep warm.
  • 11. Press cancel on your Instant Pot, then press the saute button.
  • 12. Mix together flour and water to make a slurry. Add to the broth and stir until thickened.
  • 13. Slice Turkey Tenderloin and serve with gravy.
  • 14. NOTE: If you have more broth than you need at the end of cooking, ladel some off and freeze it for a later use and then make gravy with the rest!

1 teaspoon dried sage

1 (3 pound) frozen boneless turkey breast (such as Butterball®)
1 cup water
½ cup quick-mixing flour (such as Wondra®)

Steps:

  • Turn on a multi-cooker (such as Instant Pot®) and the select Saute function. Melt butter in the pot. Saute onion, apple, and celery until onion and celery are slightly translucent, about 5 minutes. Add broth; scrape off bits from the bottom of the pot. Add gravy mix; stir until dissolved.
  • Combine kosher salt, thyme, rosemary, black pepper, sage, and garlic powder in a small bowl. Rub onto the turkey breast.
  • Lower a trivet into the pot; place seasoned turkey on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 50 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • Mix water and quick-mixing flour together slowly in a bowl until slurry is smooth.

1/2 pound Carrots (cut into 2 inch pieces)
2 Onions (cut into wedges)
2 stalks Celery (cut into 2 inch pieces)
14 1/2 ounces Chicken Broth
2 tablespoons Olive Oil
1 1/2 teaspoons Sea Salt
1 teaspoon Italian Seasoning
1/2 teaspoon Pepper

Steps:

  • 1. Place the carrots, onions, celery and broth in a 6-qt. electric pressure cooker. Brush the turkey breast with olive oil and sprinkle with the seasonings. Place the turkey breast over the vegetables.
  • 2. Lock the lid and close the pressure-release valve. Adjust the settings to pressure-cook on high for 25 minutes. Let the pressure release naturally for 10 minutes. Quick-release any remaining pressure.
  • 3. Insert a meat thermometer into the turkey breast. When it's fully done cooking, it should read at least 170°F.
  • 4. Carefully remove the turkey from the pressure cooker. Tent the breast with foil and let it stand 10 minutes before slicing.
  • 5. Serve with traditional sides and veggies.
