Smoky chipotle takes these muffins into savory territory, but this recipe can be used purely as a blueprint: Want them a bit sweeter? Lose the minced chipotle chiles, and increase the sugar by a couple of tablespoons. Need them to hold up to a heavily spiced pot of chili? Double the chipotles en adobo, add 1/4 cup minced red onion and a dash of ground cumin, onion powder or garlic, perhaps. Whatever you add, don't overmix: Stir the wet ingredients into the dry ingredients until just combined (a few lumps are O.K.) before folding in the cheese for muffins that are rich but not dense.

Steps:

  • Prepare the hot honey butter: In a small bowl, stir 1/2 cup/1 stick softened butter with the honey and chipotle en adobo sauce. Refrigerate while muffins bake.
  • Heat the oven to 400 degrees, and generously grease the cups of a 12-cup muffin tin.
  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, pepper and salt.
  • In a small saucepan, melt the remaining 1/2 cup/1 stick softened butter over low heat. In a medium bowl, whisk together the milk, sour cream, eggs, melted butter and the minced chipotle chiles, if using.
  • Pour the wet ingredients into the dry ingredients, and stir using a rubber spatula until almost combined but still a little lumpy. Fold in the Cheddar and scallions, and stir until just combined.
  • Transfer the muffin batter in 1/4-cup portions to the prepared muffin tin. Top each muffin with a jalapeño slice, if desired, and bake until the tops are golden and the muffins are cooked through, about 18 minutes. Let cool 5 minutes in the muffin tins before carefully transferring to a wire rack, running a knife around the rims to release the muffins, if necessary. Serve warm or at room temperature, with honey butter.

  • In a large bowl, combine the first 10 ingredients. In a small bowl, whisk the buttermilk, oil and eggs. Stir into dry ingredients just until moistened. Fold in the red peppers, corn and chives., Transfer to a greased 13x9-in. baking dish. Bake at 400° for 23-28 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack., In a small bowl, combine the butter, lime juice, honey, chili powder and lime zest. Serve with warm cornbread.

1 tsp salt
1/4 c sugar

6 Tbsp milk

1/2 stick butter, softened

1 1/3 cups white sugar
4 eggs, beaten
2 cups sour milk or 2 cups buttermilk
1 teaspoon baking soda
2 cups cornmeal
2 cups flour

1/2 cup butter (softened)
1/4 cup honey

Steps:

  • Preheat oven to 375 degrees F. Grease 9 by 13 pan.
  • To sour the milk: Bring milk to room temperature (I put it the microwave for a few seconds). Add 2 Tbls vinegar.
  • Once the milk starts to curdle, add the baking soda.
  • In a large skillet, melt butter. Remove from heat and stir in sugar. Add eggs and beat until well blended. Stir in the sour milk and baking soda mixture. Add the cornmeal, flour and salt and stir to combine making sure a few lumps are left. Pour into prepared pan.
  • Bake 35 - 45 minutes or until toothpick inserted in center comes out clean.
  • For the topping: Add honey to softened butter and combine well. Spread evenly over the top of the hot cornbread.

1 stick (4 ounces) unsalted butter
1 cup (140 grams) stone-ground yellow cornmeal
1 cup (125 grams) all-purpose flour
1/3 cup (65 grams) sugar
2 teaspoons baking powder
3/4 teaspoon fine salt
1/4 teaspoon baking soda
3/4 cup sour cream
1/3 cup (100 grams) honey
1/4 cup water
1 tablespoon vegetable oil
2 large eggs, beaten

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray and set aside.
  • Place the butter in a small saucepan and cook over medium-high heat, stirring occasionally, until deep golden, 3 to 5 minutes. Immediately pour into a medium heatproof bowl and let cool.
  • Meanwhile, place the cornmeal, flour, sugar, baking powder, salt and baking soda in a medium bowl. Whisk to combine and set aside.

1/4 cup all-purpose flour

1 cup Greek yogurt
1/2 cup honey
2 tablespoons unsalted butter, melted
1 large egg
1/2 cup roasted and chopped Hatch green chile, homemade from fresh or store-bought, such as 505 Southwestern Green Chile, plus more for garnish
1 1/4 cups grated Cheddar
2 pounds pork butt, cut into fist-size chunks
Kosher salt
1/2 cup garlic cloves
2 cups fresh orange juice
Peels from 1/2 orange
1/4 pound (1 stick) unsalted butter, at room temperature
1/2 cup honey
1/2 teaspoon cayenne pepper
1/2 teaspoon dark chili powder
1/4 teaspoon kosher salt

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F. Preheat a deep-fryer to 350 degrees F.
  • Coat a 9-inch cast-iron skillet with oil.
  • Whisk together the cornmeal, flour, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, Greek yogurt, honey, butter and egg in a medium bowl. Add the wet ingredients to the dry ingredients and whisk to combine. Fold in the green chiles and 3/4 cup Cheddar.
  • Pour the batter into the prepared skillet and bake for 25 minutes. Use a toothpick to test if the inside is wet. If so, return to the oven and bake until just dry, another 5 minutes. Top with the remaining 1/2 cup Cheddar and let cool for 10 minutes.
  • For the pork: Sprinkle the pork pieces with salt and place in a stovetop pressure cooker. Add the garlic, orange juice and orange peels. Close the lid and bring to pressure over high heat. Cook on high for 45 minutes.
  • Cool and release the pressure according to the manufacturer's directions. Very carefully open the lid and transfer the pork to a plate using a slotted spoon. Let cool until cool enough to handle. Cut the pork into large chunks, then deep-fry, in batches, until crispy, about 5 minutes. Reserve in a bowl or baking dish until all are fried.
  • For the spicy butter: Whisk the butter, honey, cayenne, chili powder and salt in a medium bowl until fully incorporated.
  • Top the cornbread skillet with more roasted Hatch green chile. Break up the fried pork pieces with forks or a knife. Top the cornbread with the pork and large dollops of the spicy honey butter. Cut into large wedges and serve.

12 slices thick-cut bacon
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
Kosher salt
2 extra-large eggs plus one extra-large egg yolk
1 cup buttermilk, at room temperature, plus more as needed
4 tablespoons honey
1 stick (8 tablespoons) unsalted butter, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Put the bacon in a cold pan over medium-high heat, flipping three-quarters of the way through cooking, until crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate and reserve the fat.
  • Grease a 12-cup muffin tin with some of the reserved fat and set aside. In a big bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda and some salt.
  • In a medium bowl, whisk the eggs, buttermilk and 2 tablespoons of the reserved bacon fat to a uniform color.
  • Chop 10 slices of the bacon coarsely into roughly 1/4-inch pieces. Finely chop the remaining 2 slices and set aside.
  • Quickly but gently fold the liquid mixture into the dry mixture. (It should be a loose batter, not a dough. If not, add just a tad more buttermilk or even some cream.) Then, fold in the coarsely chopped bacon.
  • Divide the batter among the muffin cups in the prepared tin and bake until the tops are golden and a toothpick comes out somewhat clean, 15 to 18 minutes. Let cool for 7 minutes, then turn them out upside-down so they develop a nice thin crust on the baked edge. Cool to just warm or room temperature before frosting, another 7 to 10 minutes.
  • Beat the honey, butter and a pinch of salt together with a hand mixer or in the bowl of a stand mixer until light and fluffy. Transfer to a pastry bag fitted with a large closed-star tip and pipe a generous tablespoon on the tops of each of the cupcakes. Serve.

CORNBREAD AND WHIPPED HONEY BUTTER



Cornbread and Whipped Honey Butter image

This cornbread is very good with vegetables, soup or alone. I had it the other night with the Tasty Potato Soup that I cooked in the crockpot (I posted recipe on this site.). This is not a sweet cornbread; but you can add a couple more tablespoons of sugar if you would like to do so. Also you do not have to use Splenda -you can use all granulated sugar. The Honey Butter is delicious! No one would guess that it is made with marshmallow fluff. You don't taste the marshmallow, but it gives it a light consistency. It is also great on the Whipping Cream Biscuits I posted. Enjoy!

  • In medium bowl, stir all cornbread ingredients except pecans until well blended. Pour into pan. Sprinkle pecans evenly over batter.
  • Bake 35 to 45 minutes or until toothpick inserted in center comes out clean.
  • In small bowl, beat 1/2 cup butter with spoon until creamy. Slowly beat in honey and salt until well blended. Serve with warm cornbread.

I've always added corn whether it be cream of corn or regular corn to my cornbread, and have always added honey... this time I added browned butter. Oh my heaven's!! The nutty taste of the browned butter coupled with the sweetness of the honey and the slight crunch of corn?? Well, you will have them waiting at the kitchen door...

1 pkg corn muffin mix (i used jiffy 8.5oz)
1 stick (1/2) butter *i used unsalted*
1/2 c honey
3/4 c corn *i used frozen*
pinch of salt, can omit if using salted butter

Steps:

  • 1. Using a medium bowl, prepare corn bread mix according to directions on package. Set aside. In a small saute pan over low-medium heat, melt your butter and brown it. How do you brown butter? Once you melt the butter continue cooking it for about 1 minute. You will see first see the bubbles increasing, stir a couple of time, the bubbles should decrease, and you will begin to smell a hint of nuttiness. Pull it off the heat "immediately" and transfer into a small bowl. Butter browns easily but can burn even faster. Let it cool for a half a minute. Using same skillet, pour the butter back in but reserve 2 tbsp for later basting.
  • 2. Add in the corn, cook for about 1 minute till starting to soften, then pour in your honey.
  • 3. Add corn honey mixture to you prepared cornbread batter and incorporate thoroughly.
  • 4. Preheat oven according to package directions. Grease a 9 x 9 pan and pour cornbread mixture in.
  • 5. Bake according to instructions on package and add 1-2 minutes. There are ingredients in the mix so it will take just a bit longer to become nice and golden crisp ontop. Check for doneness. When you pull out of oven, immediately baste with reserved butter.
  • 6. The hard part, waiting a couple of minutes before cutting into it. Make sure you have a billy stick with you to fight off the throng of would be corn bread snatchers prior to cooling!! :-) Cut into, and take your first bite... you will be smiling from ear to ear. Sweet, nutty heaven!!

2/3 cup cornmeal
1/3 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
3 tablespoons mayonnaise
2 teaspoons vanilla extract
2 eggs
1/2 cup milk
1 (18 ounce) box yellow cake mix, prepared according to its instructions
1/3 cup honey
1/2 cup soft margarine

Steps:

  • Preheat oven to 375F.
  • Combine the dry ingredients (cornmeal, flour, baking powder, salt and sugar) in a bowl and stir to distribute the baking powder.
  • Stir the mayonnaise, eggs, and milk into the dry ingredients and mix.
  • Prepare the yellow cake mix into batter form (adding eggs and milk, etc according to the packages instructions). Add the yellow cake mix batter to the corn bread batter up to a 1:1 ratio (or you can use less cake batter).
  • Grease/butter a baking pan. Bake for about 30 minutes or so until done.
  • Whip honey and margarine together.
