1 teaspoon sugar
2 teaspoons active dry yeast
7 cups all-purpose flour, plus more for dusting
6 tablespoons extra virgin olive oil, plus more for greasing

28 oz canned whole tomatoes
1 tablespoon kosher salt
tomato sauce
fresh mozzarella cheese, torn into small pieces
fresh basil leaf
extra virgin olive oil

fresh basil pesto
dried oregano
tomato sauce

Steps:

  • "Bloom" the yeast by sprinkling the sugar and yeast in the warm water. Let sit for 10 minutes, until bubbles form on the surface.
  • In a large bowl, combine the flour and salt. Make a well in the middle and add the olive oil and bloomed yeast mixture. Using a spoon, mix until a shaggy dough begins to form.
  • Once the flour is mostly hydrated, turn the dough out onto a clean work surface and knead for 10-15 minutes. The dough should be soft, smooth, and bouncy. Form the dough into a taut round.
  • Grease a clean, large bowl with olive oil and place the dough inside, turning to coat with the oil. Cover with plastic wrap. Let rise for at least an hour, or up to 24 hours.
  • Punch down the dough and turn it out onto a lightly floured work surface. Knead for another minute or so, then cut into 4 equal portions and shape into rounds.
  • Lightly flour the dough, then cover with a kitchen towel and let rest for another 30 minutes to an hour while you prepare the sauce and any other ingredients.
  • Preheat the oven as high as your oven will allow, between 450-500˚F (230-260˚C). Place a pizza stone, heavy baking sheet (turn upside down so the surface is flat), or cast iron skillet in the oven.
  • Meanwhile, make the tomato sauce: Add the salt to the can of tomatoes and puree with an immersion blender, or transfer to a blender or food processor, and puree until smooth.
  • Once the dough has rested, take a portion and start by poking the surface with your fingertips, until bubbles form and do not deflate.
  • Then, stretch and press the dough into a thin round. Make it thinner than you think it should be, as it will slightly shrink and puff up during baking.
  • Sprinkle semolina onto an upside down baking sheet and place the stretched crust onto it. Add the sauce and ingredients of your choice.
  • Slide the pizza onto the preheated pizza stone or pan. Bake for 15 minutes, or until the crust and cheese are golden brown.
  • Add any garnish of your preference.

1 cup lukewarm water
3 cups all-purpose flour

½ teaspoon white sugar
1 teaspoon salt

2 anchovy fillets
3 cloves garlic, minced

1 (14 ounce) can diced tomatoes, drained

Steps:

  • Pre-heat your oven to 500 degrees. If you have a baking stone, put it on a rack in the lower-middle part of the oven.
  • In a small bowl or liquid measuring cup, heat the water until it feels barely lukewarm when you test it with your finger (if the water is so hot that you can't leave your finger in it, wait for it to cool down). Add the yeast to the water and use a fork or whisk to stir it into the water. Set this aside for a few minutes and allow the yeast to dissolve.
  • Measure out the flour into a large mixing bowl. Add the salt and use your hand or a whisk to combine.
  • Make a well in the center of the flour and pour in the water-yeast mixture. Use your fingers or a wooden spoon to combine everything together.
  • When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn't yet gotten worked inches.
  • Knead the dough until all the flour is incorporated and the dough is smooth and elastic to the touch--about five minutes.The dough should still feel moist and slightly tacky. If it's sticking to your hands and counter-top like bubble gum, work in more flour one tablespoon at a time until it's smooth and silky.
  • Use a bench scraper to divide the dough in two. Shape each half into a smooth ball. Set aside while preparing sauce.
  • Heat olive oil in a sauce pan over medium heat. Add minced garlic and red pepper olive oil (or a little extra olive oil, plus red pepper flakes).
  • Saute 2 minutes, or until garlic is golden. Add half of the white sugar, and allow to melt (it might start to look clumpy, don't worry and keep going).
  • Add drained tomatoes and the rest of the white sugar. Cook for 2 minutes.
  • Add the rest of the ingredients (prepared sauce, brown sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper). Lower heat to medium-low and simmer for 20 minutes. You can break up the tomatoes with a wooden spoon, or use an immersion blender if you prefer.
  • Work one piece of the dough in your hands and form it into a large disk. Working from the middle of the dough outwards, use the heel of your hand to gently press the dough outward until it's about 1/4 of an inch thick or less. You can also use a rolling pin for this part.
  • Repeat with the second piece of dough (or freeze it for later).
  • Place pizza dough on baking stone or baking sheet with cooking spray.
  • Spoon a few tablespoons of sauce into the center of each pizza and use the back of a spoon to spread it out to the edges. Pile on all of your toppings except the cheese.
  • Bake for about 5 minutes and then rotate the pizza 180-degrees (most ovens have 'hot spots' your pizza will bake unevenly if it's not rotated). Bake for another 3 minutes and then sprinkle the cheese over the top. Bake for another 2-3 minutes until the edges are golden brown and crispy.
  • Remove your pizza from oven and let it cool on a wire rack for a few minutes before cutting.

  • In a medium bowl, combine the warm water (not too hot or you'll kill the yeast), honey and yeast until dissolved.
  • Leave for 5 - 10 minutes unti lthe yeast activates and the mixture develops a layer of froth on the surface.
  • In a large bowl, mix the sea salt and flour and make a well in the center.
  • Add the yeast and olive oil.
  • Mix together , then use your hands until the dough comes together.(I did this step in my kitchenaid.).
  • Tip the dough onoto a lightly floured surface and knead until th edoor is smooth, shiny and elastic (about 5 - 10 minutes) or allow the kitchenaid to do this.
  • If the dough is too sticky or soft, add a little extra flour or if it's too dry and crumbly, add a little water.
  • Shape the dough into a round ball and place in a large, oiled bowl.
  • Cover with a damp cloth for roughly 45 minutes or until the dough doubles in size.
  • Punch down the dough to remove the air and place it on a lightly floured work surface.
  • Divide in 2 and shape each piece into round disks.
  • Place the dough balls on a sheet of parchment.
  • Cover with a light coating of oil and let them rise again, for about 20 minutes.
  • Dough is now ready to add whatever toppings you like and cook.
  • Bake in a 400 degree oven for approximately 10 minutes. Keeping an eye on it until the cheese browns and the crust looks done.

Extra-virgin olive oil
1 pound refrigerated pizza dough
2 tablespoons minced garlic (about 2 large cloves)
2 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley
All-purpose flour, for dusting
6 ounces sliced pepperoni
2 1/2 to 3 cups shredded low-moisture mozzarella (about 12 ounces)
Marinara Sauce, for serving, recipe follows
1 tablespoon extra-virgin olive oil
1/4 cup finely diced yellow onion (about 1/2 small onion)
1 teaspoon kosher salt
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons tomato paste
1/2 teaspoon dried oregano
Pinch crushed red pepper
One 26-ounce box chopped tomatoes, such as Pomi

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and lightly grease the foil with olive oil. Remove the pizza dough from the refrigerator and let sit at room temperature for 30 minutes.
  • In a small bowl combine the garlic, Parmesan, parsley and 1/4 cup olive oil. Set aside.
  • Lightly dust a work surface with flour and roll out the pizza dough into a 12-by-14-inch rectangle. Arrange the dough with the 14-inch side parallel to you. With a ruler, mark every 4 inches along the 12-inch side. Cut the dough straight across at the marks to make three 4-inch-wide strips. Brush top of the strips with 1 tablespoon olive oil. Shingle the pepperoni slices over the dough strips. Sprinkle 3/4 to 1 cup of the mozzarella in a line down the center of each strip.
  • Roll up each dough strip into a long log, as you would for cinnamon rolls. It is easiest to begin by folding the bottom of the dough up over the cheese; if there is any cheese sticking out, stuff it back into the roll. Continue rolling the dough over itself until it forms a log with dough on the outside and all of the pepperoni and mozzarella on the inside. Pinch the seams together, then pinch the sides together. Lightly brush the logs all over with olive oil and transfer them, seam-side down, to the prepared baking sheet.
  • Bake until golden brown, 12 minutes. Brush the tops of the logs generously with the garlic mixture and return to the oven for another 3 minutes, until the garlic is very fragrant but not yet browned. Let cool for 10 minutes.
  • Transfer the pepperoni rolls to a cutting board and slice into 1 1/2-inch pieces. Serve immediately with marinara sauce.
  • Heat the olive oil over medium heat in a medium saucepot. Add the onions and salt and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds until fragrant but not browned. Stir in the tomato paste, oregano and crushed red pepper; cook 30 seconds to toast the tomato paste and spices. Stir in the chopped tomatoes. Bring the sauce to a boil, reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and adjust the seasoning with salt to taste. Keep warm until ready to serve, or cool completely and refrigerate in an airtight container.

4 teaspoons kosher salt
½ teaspoon active dry yeast
3 cups water, at room temperature (plus an additional 1-2 tablespoons of water as needed)
4 tablespoons cornmeal, or semolina, for the pizza peel
flour, extra, for shaping
6 oz tomato paste
1 cup hot water
2 tablespoons red wine vinegar
2 teaspoons maple syrup, or honey
1 teaspoon salt
½ teaspoon pepper
3 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried marjoram
¼ teaspoon cayenne pepper

Steps:

  • In a very large bowl, whisk together the dry ingredients.
  • Make a divot in the middle of the flour mixture and add a few tablespoons of water. Stir with a wooden spoon, gradually adding more and more water until the dough starts to come together. You may need a tablespoon more or less water, depending on the consistency of the dough as it forms.
  • Using your hands, ensure the dough is well incorporated, but do not knead. Be careful not to overwork the dough.
  • Cover with plastic wrap and store at room temperature overnight, or for at least 12 hours, until doubled in size and porous.
  • Make the sauce by combining tomato paste, water, vinegar, maple syrup, salt, pepper, garlic, oregano, basil, marjoram, and cayenne pepper in a medium bowl. Let sit at room temperature for an hour before canning or jarring. Refrigerate as necessary up to 2 weeks.
  • Once the dough has risen, transfer to a clean, floured work surface and form into a large ball. Cut the dough into 6 equal parts and form dough balls by folding the corners into themselves.
  • Place the dough balls on a floured sheet pan, sprinkle with flour, and cover with a damp towel for about 30 minutes to an hour.
  • Preheat oven with a pizza stone in it to 500ªF (260ºC) or a low broil.
  • Work each dough into a disk on a floured work surface. Knuckling the edges of the dough and tossing it gently will help thin it out. Be careful not to rip the dough.
  • Place the dough disk onto a pizza peel generously floured with semolina or cornmeal. This will prevent sticking. Top with desired sauce, cheese, and toppings.
  • Slide the pizza onto the stone and bake for about 9 minutes, watching carefully to make sure it doesn't burn. Look for the edges to become charred and crispy and the cheese to bubble.
  • Let the pizza cool for 5 to 10 minutes before cutting and serving.

  • Mix salt and yeast together in a jug with the water. Place flour in a bowl, make a well in the centre and add the water mixture along with the oil
  • Use a wooden spoon to mix everything to create a wet dough. Put on floured surface and need for 5mins.
  • Place in greased bowl and cover with tea towel. Leave at room temperature to rise for 30mins (should double in size).
  • Round into pizza base and stab with fork several times.

  • Spread tomato puree over the base. Add chopped tomatoes on top then add onion and garlic.

CRUST
1 c hot water
1/2 c milk
11 g yeast
1/2 tsp salt
1 Tbsp basil, dried
4 c flour
1 Tbsp sugar
4 Tbsp vegetable oil (divided into 2 tbsp and 2 tbsp)
FILLING
16 oz manchego or mozzarella cheese, shredded
1 jar(s) spaghetti sauce (normally 32 oz)
6 oz black olives, drained
8 oz red bell pepper, canned, drained
2 c broccoli, steamed, with water patted out
50 g pepperoni, chicken, or meat of choice
2 Tbsp basil, dried
1 tsp garlic powder
1 Tbsp red pepper flakes

Steps:

  • 1. In a large mixing bowl combine yeast, sugar, salt, and basil.
  • 2. Add hot water and milk. Let sit for a few minutes.
  • 3. Add 2 tbsp oil and combine. It will look soapy.
  • 4. Stir in the flour until a thick dough forms. You may need to add water or flour to adjust for the right texture.
  • 5. Knead the dough a few minutes on a floured surface until it is smooth.
  • 6. Roll out the dough until 1/4" thick (it should be about 20" in diameter)
  • 7. Use the remaining 2 tbsp oil to oil a springform pan. Lay the dough in the springform pan and up the edges. Fold it over a little along the top of the pan so that it will not fall in (see the picture)
  • 8. Cover the dough and pan with a damp towel and place in a warm place to rise for 1 1/2 hours.
  • 9. Meanwhile, preheat the oven to 425 degrees Farenheit
  • 10. Add the toppings (all the sauce, then all the spices, then 8oz cheese, then the broccoli, olives, and red bell peppers, then the other 8oz cheese, then the meat)
  • 11. Bake for 45 minutes or until the crust along the upper edge is golden brown. You might want to check it at 30 minutes to make sure, as ovens vary.
  • 12. When you take it out, I suggest you check to see how liquidy it is and maybe pour out some of the liquid before removing from the springform pan. This will help when you cut the pizza.
  • 13. Let the pizza cool about 10 minutes, then remove from the springform pan. The crust should serve as a perfect barrier for all the toppings to stay in. It looks soooo amazing when you cut it! ENJOY!
