HOMEMADE CHEEZ-ITS
Maria says, These homemade Cheez-Its are so quick and easy to make, and if you love the store bought version, these taste almost exactly the same! And from start to finish they only take about an hour to make! But I warn you, even though it may look like you have lots and lots of little Cheez-Its lined up on your baking sheet, they will be gone very quickly! Because they really are addicting! - First, mix together the shredded cheese, half of the salt and the softened butter. (I used sharp aged white cheddar cheese, but you can use whatever kind of cheese you like. I shredded my own cheese just because I think it has better flavor and melts better, but you can use pre-shredded too to save some time!) Add in the flour and mix until the dough looks like little fluffy clumps. Then, with the mixer running begin adding the ice water and mix until a soft dough forms. (use as much ice water as you need for a dough to form).
- Divide the dough in two, form each into a disk and wrap in plastic wrap. Refrigerate the dough for about 30 minutes. Then, roll the dough out on a floured surface into about an 1/8 inch thickness and using a fluted pastry cutter, cut the dough into about 1 inch squares.
- Preheat your oven to 375 degrees F. and line your baking sheets with parchment paper. Transfer your little cheez-its onto the parchment paper, make a hole in the center of each with a toothpick, then sprinkle them with the rest of the salt. Bake for about 7 - 10 minutes (baking time will depend on your oven, just watch them carefully so they don't burn!), or until they have puffed up and the edges begin to brown. Let cool before eating. (They are best eaten right away, but you can store them in an airtight container).

Try baking homemade Cheez-Its, the popular cheddar cheese crackers. They're so delicious and easier to make than you might think.

- In a food processor, shred cheese using shredding blade. Remove shredding blade and cheese from food processor and replace the blade with the normal blade (s-shaped).
- Add flour, butter, salt, mustard, and shredded cheese to the food processor and pulse until mixture looks like coarse crumbs.
- While pulsing, add water 1 tablespoon at a time, until dough comes together.
- Remove from food processor, wrap in plastic wrap and put in refrigerator for at least 20 minutes.
- Meanwhile, preheat oven to 350°F. Prepare baking sheet by lining with Silpat or parchment paper.
- On lightly floured counter, roll out dough quite thin (1/8 inch or less). The thinner they are, the crisper they get. Cut into one inch squares. A pastry wheel or pizza cutter works well. Use the tip of a chopstick or skewer to poke a hole in the middle of each cracker (see note).
- Place crackers on a baking sheet lined with parchment paper. You can place them close together, not touching, as they do not really expand.
- Bake for 17 minutes or until crispy, up to 20 minutes. They should be lightly browned on the bottom and firm to the touch. The browner they are, the crisper the crackers will be. Cool in the pan for 5 minutes, then remove to wire rack to cool completely before storing in an airtight container.

These are one of my favorite go to snacks. They are great for kids who want a quick snack after a day of swimming, or wanting on a hot dog at a cookout. Either way they will truly be a favorite. If you love tomato soup these are great as a topping.

- In a food processor, pulse everything except water together until it looks like course crumbs
- While pulsing, add in water, 1 tablespoon at a time
- Remove from food processor, wrap in plastic wrap and put in refrigerator for at least 20 minutes
- Meanwhile preheat oven 350 degrees
- Roll out dough (quite thin) and cut into squares. Use a toothpick or the end of scissors to poke a hole in center of each cracker
- Place crackers on lined baking sheet (Silpat and parachement paper - both are fine). Can place fairly close together, as they do not really expand. Bake for 13 - 15 minutes or until crispy
