1 tablespoon olive oil
1 medium onion , chopped fine (about 1 cup)
6 medium cloves garlic , pressed through garlic press or minced (about 2 tablespoons)
1 pound meatloaf mix or 1/3 pound each ground beef chuck, ground veal, and ground pork (see note)
1/2 teaspoon table salt
½ teaspoon ground black pepper
sugar
1/4 cup heavy cream
1 can (28 ounces) tomato puree
1 (28-ounce) can diced tomatoes , drained

Steps:

  • . Heat oil in large, heavy-bottomed Dutch oven over medium heat until shimmering but not smoking, about 2 minutes; add onion and garlic, and cook, stirring occasionally, until softened but not browned, about 2 minutes. Add garlic and cook until fragrant, about 2 minutes. Increase heat to medium-high and add ground meats, salt, and pepper; cook, breaking meat into small pieces with wooden spoon, until meat loses its raw color but has not browned, about 4 minutes. Add cream and simmer, stirring occasionally, until liquid evaporates and only fat remains, about 4 minutes. Add pureed and drained diced tomatoes and bring to simmer; reduce heat to low and simmer slowly until flavors are blended, about 3 minutes;

4 Tbl olive oil
6 sweet Italian sausages
4 hot Italian sausages
1Lb pork spareribs cut into 2" lenghts
1/2lb ground sirloin
1/2lb groung pork
1 1/2 cup diced onions
5 large minced garlic cloves
3 28oz and 1 16oz can whole plum tomatoes with juice
1 12oz can tomato paste
1/2 cup red dry wine
1 cup chopped fresh flat leaf parsley
Salt,pepper pinch hot pepper flakes, pinch sugar zest of 1 lemon

Steps:

  • Heat 2TBL of the oil in large fry pan. Brown the sausages and ribs in small batches. Cut sausages into 2" rings. Transfer them to large sauce pan. Brown ground sirloin and pork in fry pan. Transfer with slotted spoon to sauce pan. Add half the garlic and all the onions to fry pan. Cook about 5 min.Add to meat in sauce pan. Add tomatoes,tomato paste,wine,1/2 cup of parsley, oregano,basil,salt, pepper,red pepper flakes,sugar and lemom zest. Bring to a boil,then reduce to simmer partially covered for 3-4 hrs. Stir occasionally. Add remaining garlic and parsley. Cook uncovered for 1-2 hours stirring occasionally. Serve over your favorite pasta.
