This summery, Greek-inspired dinner comes together in a snap with the help of a grill basket.

1 large garlic clove, finely grated
2 teaspoons finely chopped oregano
3/4 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons olive oil, plus more for grill basket
10 jumbo shrimp (about 8 ounces), peeled, deveined, tails left on
1 medium zucchini (about 8 ounces), sliced into 1/4" rounds
1 pint cherry tomatoes
2 pita pockets
1/3 cup crumbled feta (about 1.5 ounces)
Special Equipment
A flat grill basket (about 13 1/2 x 8 1/2")

Steps:

  • Prepare a grill for high heat. Whisk garlic, oregano, salt, red pepper, and 2 Tbsp. oil in a large bowl. Add shrimp, zucchini, and tomatoes and toss to coat.
  • Brush wires of grill basket with oil, then add shrimp mixture. Arrange in an even layer and close basket. Place grill basket on grill and cook, turning often, until shrimp is fully cooked through and zucchini and tomatoes are lightly charred, about 6 minutes.
  • Meanwhile, grill pita just until warm and toasted.
  • Transfer shrimp mixture to a large bowl and toss until coated with tomato juices. Divide among plates and top with feta. Serve with pita alongside.

3 oz mild feta cheese (preferably French; 1/2 cup)
1/4 cup sour cream
2 tablespoons water
2 teaspoons fresh lemon juice
1/2 teaspoon minced garlic
2 1/2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped fresh basil
2 medium zucchini (1 lb total)
3/4 lb cherry tomatoes (preferably on the vine, cut into 4 bunches)
1/4 teaspoon salt
Special Equipment
an adjustable-blade slicer

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). (If using a charcoal grill, open vents on bottom of grill, then light charcoal. When Charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows: Hot: When you can hold your hand there for 1 to 2 seconds; Medium-hot: 3 to 4 seconds; Low: 5 to 6 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.)
  • Purée feta, sour cream, water, lemon juice, and garlic in a food processor until smooth, then, with motor running, add 1 1/2 tablespoons oil in a slow stream. Add basil and salt and pepper to taste and pulse until just combined.
  • Thinly slice zucchini lengthwise (just under 1/8 inch thick) using slicer. Toss zucchini and tomatoes (on the vine) in a large bowl with salt and remaining tablespoon oil. If using loose cherry tomatoes, thread onto skewers. Grill vegetables, in batches if necessary, on oiled grill rack, turning over once with tongs, until just tender, 3 to 5 minutes total per batch. Serve with sauce.

3 zucchini, halved lengthwise
1 large onion, cut into 1/2-inch-thick rings
2 ears of fresh corn, shucked
3 tablespoons olive oil
2 teaspoons salt
1 pint cherry tomatoes, halved
1/4 cup chopped fresh parsley
1 garlic clove, minced
1 lemon
Freshly ground black pepper

Steps:

  • Prepare a hot grill.
  • Place the zucchini, onions, and corn on a rimmed baking sheet. Drizzle with 2 tablespoons of the oil and sprinkle with 1 teaspoon of the salt. Toss the vegetables to ensure that they are well coated.
  • Place the vegetables on the hot grill. As they begin to brown, turn them carefully so that they brown fully on all sides but stay intact, about 3 minutes per side. Remove the vegetables from the grill and let cool slightly.
  • Cut the grilled corn kernels from the cobs and place in a bowl. Add the cherry tomatoes, the remaining 1 tablespoon olive oil and 1 teaspoon salt, the parsley, and garlic. Squeeze the lemon into the bowl and stir to combine.
  • Arrange the grilled zucchini on a serving platter. Cut the onion rings in half and drape them over the zucchini. Spoon the tomato and corn mixture over the zucchini and onions. Finish with a grind of pepper and serve warm. Alternatively, make the dish ahead and serve at room temperature.
  • GRILLING TIPS
  • We like to cut our veggies on the larger side for grilling so they don't burn quickly. We turn them a few times to keep the insides tender while the outside takes on that ideal smoky char. It's important to remember that your meat and veggies continue to cook after you've pulled them off the grill, so be sure to let the meat rest for 5 minutes before serving and take care to remove the vegetables before they overcook.

2 lamb blade steaks, cut into 1-inch cubes (about 1 pound)
1/4 cup extra-virgin olive oil
4 cloves garlic, minced (about 4 teaspoons)
Zest and juice of 1 lemon
1 tablespoon chopped fresh oregano
3/4 cup Greek yogurt
1 small Kirby cucumber, coarsely grated and squeezed dry (about 1/3 cup)
2 tablespoons chopped fresh dill
1/2 pint cherry tomatoes
1 medium zucchini, cut into cubes the size of the tomatoes
Kosher salt and freshly ground pepper

Steps:

  • 1. Combine the lamb steaks with 2 tablespoons olive oil, 3 teaspoons garlic, lemon zest, lemon juice, and oregano in a resealable plastic bag. Marinate in the refrigerator at least 1 hour or up to overnight.
  • 2. Mix together the Greek yogurt, cucumbers, dill, and remaining 1 teaspoon garlic in a bowl and add salt to taste. Set aside.
  • 3. Prepare a grill to medium-high heat. Soak 12 bamboo skewers in water for 10 minutes.
  • 4. Toss the tomatoes and zucchini with the remaining 2 tablespoons olive oil. 6 zucchini, medium sized, rinsed, trimmed, cut into 1/2-inch-thick planks
1/4 cup olive oil
table salt
ground black pepper
2 tablespoons balsamic vinegar
2 ripe tomatoes, large, cored, and cut into thin wedges
2 tablespoons minced fresh basil leaves

Steps:

  • Heat grill. Lay zucchini on large baking sheet and brush both sides with 2 tablespoons of the oil. Sprinkle generously with salt and pepper.
  • When grill is hot, use stiff wire brush to scrape surface clean. Grill zucchini until dark grill marks are visible on one side, 2-3 minutes. Turn and continue to grill until the other side is marked, about 2 minutes. Remove from grill and cool briefly.

2 medium zucchini
4 large roma tomatoes
olive oil
2 large red sweet peppers or 2 large green sweet peppers, quartered and seeded*
1 tablespoon honey
8 fresh basil leaves, snipped (about 1 tablespoon)
1 dash dried oregano, crushed
1/2 cup balsamic vinegar
2 tablespoons orange juice

Steps:

  • Bias-cut zucchini into 1/2-inch slices. Cut tomatoes into 1/2-inch slices. Brush these vegetables on all sides with olive oil.
  • Grill zucchini and tomato slices on the rack of an uncovered grill directly over medium coals for 4 to 6 minutes, turning once.
  • Remove from grill.
  • Grill sweet peppers about 15 minutes or until skins are blistered and browned.
  • Transfer peppers to a new brown paper bag; close bag and set aside for 5 to 10 minutes.
  • Peel off skins. Cover and chill vegetables for at least 30 minutes.
