1/4 cup vegetable oil, plus more for oiling the grill grates
3 tablespoons chili powder
Kosher salt
1 1/2 pounds boneless, skinless chicken breasts (about 3)
12 corn tortillas
Shredded cheese, pickled jalapenos, shredded lettuce and/or salsa, for serving

Steps:

  • Prepare a grill for medium heat.
  • Mix the oil, chili powder and 1 teaspoon salt together in a small bowl to make a paste. Pound the chicken breasts between 2 pieces of plastic wrap to about 1/2-inch thick. Rub the chicken all over with the chili paste.
  • Lightly oil the grill grates. Grill the chicken until firm to the touch and cooked through, flipping once, 3 to 4 minutes per side. Set aside to rest for 5 minutes, then shred the meat into bite-size pieces or cut into strips. Warm the tortillas on the grill and wrap in a kitchen towel to stay warm.
  • Serve the chicken tacos with shredded cheese, pickled jalapenos, shredded lettuce and/or salsa for topping.

1 pkt. GOOD SEASONS Italian Dressing Mix
3 boneless skinless chicken breasts
1/2 cup KRAFT Shredded Mozzarella Cheese
1 cup shredded lettuce
1 cup diced tomatoes
6-8 flour tortillas

Steps:

  • Prepare Italian dressing as directed on packaging.
  • In a large plastic bag, mix Italian dressing with raw chicken, seal and refrigerate for 4 hours or overnight.
  • Remove chicken from dressing. Discard plastic bag and dressing.
  • Grill chicken for 4-6 minutes on each side, until chicken is cooked through.
  • Slice chicken into 1/2 inch slices.
  • Grill tortillas for a minute until each side until warm and golden brown.
  • Serve warm tortillas with sliced chicken, cheese, lettuce and tomatoes.

I modified this taco recipe for a party of 40, and it was a huge hit. Thighs are a good substitute for chicken breasts, especially with marinating and grilling. They do not dry out as quickly and are very forgiving. Fill warm tortillas with sauteed chicken and serve with your choice of garnishes and black bean and corn salad.

1 teaspoon cumin
1 teaspoon dried Mexican oregano
1 teaspoon sazon seasoning
1 teaspoon garlic powder
1 teaspoon salt
¼ teaspoon cayenne pepper
¼ cup fresh lime juice
1 teaspoon olive oil
1 pound skinless, boneless chicken thighs
canola oil cooking spray
1 (10 ounce) package corn tortillas, or as needed

Steps:

  • Combine cumin, oregano, sazon, garlic powder, salt, and cayenne pepper in a large bowl. Add lime juice and olive oil and stir to make the marinade. Add chicken and refrigerate for 30 minutes to 12 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Grill marinated chicken until no longer pink at the bone and juices run clear, about 8 minutes per side. Transfer to a bowl and shred chicken with forks.

¾ cup medium-hot salsa
½ cup chopped fresh cilantro
1 tablespoon lime juice
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon brown sugar
¼ teaspoon cayenne pepper
1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves
4 (7 inch) corn tortillas
4 cups shredded lettuce
½ cup chopped fresh cilantro
1 avocado - peeled, pitted, and sliced
1 lime, cut into wedges
¼ cup sour cream

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix black beans, salsa, 1/2 cup cilantro, and lime juice in a bowl; set aside.
  • Stir chili powder, cumin, coriander, brown sugar, cayenne pepper, and olive oil in a bowl until smooth; rub mixture over chicken breasts.

2 lbs chicken breasts (cut to similar sizes)
1/2 cup Italian dressing
1 tablespoon olive oil
2 tablespoons lemon juice
2 garlic cloves (crushed)
1 shallot (minced)
1/2 teaspoon pepper (cracked)
1/2-1 teaspoon hot sauce

Steps:

  • Mix marinade ingredients and place chicken and marinade in a gallon ziplock bag.
  • Marinate 30 mins to 24 hours.
  • Preheat grill to med high.
  • Grill breasts for 3 to 4 mins per side or till juices run clear and chicken reached 155 degrees.
  • Remove from grill and wrap in foil. Let sit about 5 minutes Chicken will continue to cook to 160.
  • You should know your grill. Chicken may take a little longer to cook or it may take less time. The sitting is critical to the chicken staying moist.
