This very moist yellow cake recipe comes from my boyfriend's grandmother. We usually serve it with chocolate buttermilk icing.

1 cup butter
2 cups white sugar
4 eggs
2 ½ cups self-rising flour
1 cup milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch pans.
  • In a medium bowl, cream together the butter and sugar. Beat in the eggs, one at a time. Combine the milk and vanilla, add alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared pans.
  • Bake for 15 to 20 minutes in the preheated oven. Cake will pull away from the sides of the pan slightly when done. Allow cakes to cool in the pans for a few minutes before removing to wire racks to cool completely.

1/2 cup shortening
1-1/2 cups sugar
2 large eggs
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1/2 cup hot water
CHOCOLATE FUDGE FROSTING:
2 ounces unsweetened chocolate
1 tablespoon butter
1-1/2 cups sugar
1/2 cup water
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
1 to 2 tablespoons half-and-half cream

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, cocoa, baking soda, baking powder and salt; gradually add to creamed mixture alternately with buttermilk and hot water, beating well after each addition. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, melt chocolate and butter in a saucepan. Add the sugar, water and cream of tartar. Bring to a boil, stirring constantly. Cook and stir until a candy thermometer reads 240° (soft-ball stage). Remove from the heat. Cool completely, without stirring, about 1 hour. Add vanilla; beat until thickened. Add cream; beat until smooth. Frost cake.

This recipe has been passed down through the family for many generations. It is the only chocolate cake recipe I use anymore. The cake is nice and moist and has such a bold flavor. This cake is great for a German chocolate icing, but I have used all types of icings, which all complement the cake nicely. This cake always pleases the crowd when I make it. ¾ cup unsweetened cocoa powder
1 ¼ teaspoons baking soda
½ teaspoon salt
1 ¾ cups white sugar
¾ cup unsalted butter, at room temperature
2 large eggs
1 teaspoon maple extract
1 ⅓ cups brewed coffee

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  • Cream sugar and butter together in a large bowl with an electric mixer. Mix in eggs and maple extract. Add flour mixture in 2 batches, alternating with coffee, beating batter until smooth after each addition. Pour batter into the prepared pans.

1 (18.25-ounce) box yellow cake mix
2 eggs
1/3 cup vegetable oil
2 teaspoons raspberry extract, divided (recommended: McCormick)
1/2 cup liquid from canned peaches
2 cans (16-ounces) white frosting (recommended: Pillsbury Creamy Supreme)
Food coloring, red and green
6 tablespoons confectioners' sugar

Steps:

  • Add 2 eggs, 1/3 cup vegetable oil, 1 1/2 teaspoons raspberry extract, and 1/2 cup peach liquid to cake mix. Bake 2 (8-inch) cakes according to package directions.
  • Let cakes cool completely. Transfer cakes to inverted 9-inch pie tins to function as a cake stand.
  • Add remaining 1/2 teaspoon raspberry extract to 1 can of frosting. Stir thoroughly. Frost both cakes.
  • Divide remaining can of frosting between 2 mixing bowls. Add 3 tablespoons confectioners' sugar to both. Add 7 drops of food coloring to each - red in 1, green in the other. Mix thoroughly and transfer to 2 plastic bags. Snip small corner off bags and use to pipe a decorative border around the base of the cakes - 1 green, 1 pink. Decorate cake with green vines and pink flowers.

½ cup chopped walnuts
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Whisk flour, white sugar, cinnamon, baking powder, baking soda, salt, and ground cloves together in a bowl. Beat eggs and vegetable oil in a separate large bowl until creamy; mix applesauce into egg mixture. Add dry ingredients to wet ingredients; stir until batter is smooth.   • 1. Cut pound cake into 4 equal slices lengthwise. Cut ice cream into three slices by flavor.(lengthwise)

1 teaspoon salt

3/4 cup chopped walnuts
FROSTING:
5 tablespoons all-purpose flour
1 cup whole milk
1 cup butter, softened
2 cups confectioners' sugar

1 to 1-1/4 cups chopped walnuts
Red food coloring, optional

Steps:

  • In a large bowl, combine flour, sugar, baking soda, salt and cinnamon. In a bowl, whisk the eggs, oil and vanilla; add to dry ingredients and beat well. Fold in apples and walnuts (batter will be thick). , Spread into two greased 9-in. round baking pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, combine flour and milk in a saucepan until smooth. Bring to a boil; cook and stir for 1 minute. Set aside, uncovered, at room temperature for 20 minutes. In a large bowl, cream butter, sugar and vanilla. Add salt and cooked flour mixture; beat until smooth. If you wish to "write" on the cake with frosting, reserve 1/4 cup and tint with red food coloring; set aside. Use remaining frosting to frost between layers and on top and sides of cake.
