Number Of Ingredients 8

2 cups long grain rice
1 stick Mexican Cinnamon
4 cups hot water
8 cups extra water to finish the drink
3/4 cup sugar
2 tsp vanilla extract
1 cup milk (2% or whole)
Ice cubes to serve

Steps:

  • Place the rice and cinnamon stick in a large glass bowl and add the 4 cups of hot water. Cover the bowl with a dish or plastic wrap, then let it soak overnight, or at least 8 hours. *Please see NOTES
  • The next day, pour the rice, cinnamon, and water into your blender and process until it becomes a smooth, watery paste.
  • Using a strainer or sieve, strain the mixture into a wide mouth pitcher, stirring to help the liquid pass through.
  • Add the milk (if using), vanilla extract, and the rest of the water. Stir in the sugar, adjusting the amount to fit your taste. Let the drink chill in the refrigerator. Stir the Horchata before serving, since the rice mix tends to settle at the bottom. Serve in glasses with ice cubes.

1 cup cooked brown rice
3 tablespoons honey
1/2 teaspoon pure vanilla extract
1 (1-inch) piece fresh turmeric, peeled and thinly sliced (or 1/4 teaspoon ground)
1/8 teaspoon ground cinnamon, plus more for serving

Steps:

  • In a blender, process rice, 3 cups water, honey, vanilla, turmeric, and cinnamon until very smooth. Strain mixture through a sieve; discard solids. Serve over ice, sprinkled with more cinnamon.

2 cups jasmine or long-grain white rice
1 large stick canela or 2 cassia cinnamon sticks (see Cook's Note)
1/2 cup sugar
Kosher salt
Ice, for serving
Ground canela or cinnamon, for sprinkling

Steps:

  • Grind the raw, unwashed rice in a blender on high speed into a fine powder. Transfer to a medium bowl and whisk in 5 cups room temperature water. Add the canela, cover and let it sit at room temperature for 8 hours and up to 24.
  • Removed the canela and snap into two 1-inch pieces. Vigorously whisk the rice mixture until the rice is evenly distributed. Transfer to a blender, add the reserved canela pieces and puree on high speed for 10 minutes; the mixture will get hot and the rice will soften and start to ''cook '' and release more flavor. Add the sugar and 3/4 teaspoon salt and puree until dissolved, about 30 seconds.
  • Strain the rice mixture through a fine mesh sieve lined with several layers of cheesecloth into a large bowl, pressing on the solids to extract as much liquid as possible (you should have about 3 1/2 cups). Reserve the solids for another use (like cream-of-rice porridge). Stir in 3 cups very cold water. Serve over ice with a sprinkle of ground canela or cinnamon on top.

Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

1 cup water
½ cup white sugar
¼ teaspoon ground cinnamon
2 quarts rice milk

Steps:

  • Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.
  • Pour rice milk into a large pitcher.
  • Stir sugar water into rice milk. Serve chilled or over ice.
