3 tablespoons vegetable oil
5 large shallots, finely chopped
3 1/2 tablespoons minced fresh ginger
4 garlic cloves, minced
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1/4 teaspoon dried crushed red pepper
2 1/2 cups crushed tomatoes with added puree
2 cups chopped mustard greens
Flatbreads
2 cups semolina flour (pasta flour)*
1 cup all purpose flour
1 teaspoon salt
1 teaspoon dry mustard
1 1/4 cups water, room temperature
3 tablespoons chopped fresh cilantro
8 ounces soft fresh goat cheese (such as Montrachet), crumbled

Steps:

  • For topping:
  • Heat oil in large skillet over medium-high heat. Add shallots and next 5 ingredients; sauté 3 minutes. Add tomatoes; reduce heat and simmer 5 minutes to thicken slightly. Add greens; stir until wilted, about 5 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
  • For flatbreads:
  • Mix first 4 ingredients in large bowl. Stir in 1 1/4 cups water and cilantro. Knead in bowl until smooth, about 5 minutes. Cover with kitchen towel; let rest 30 minutes. Divide dough into 4 pieces; roll each into ball. Cover loosely with plastic wrap; let rest on work surface 30 minutes. Roll out each dough ball on lightly floured surface to 9-inch round.
  • Heat large dry nonstick skillet over medium heat. Add 1 flatbread round to skillet; cook until bottom of bread is golden brown in spots and bread puffs slightly, about 4 minutes. Turn bread over; cook until bottom is brown in spots, about 3 minutes. Repeat with remaining dough.
  • Preheat oven to 450°F. Place breads on baking sheet. Spread 1/4 of topping over each. Sprinkle with cheese. Bake until heated through, about 8 minutes.

This is an easy yet impressive looking appetizer which works well for casual gatherings and more formal ones. I made these for a cocktail party at my home and they went fast.

1 (11 ounce) log goat cheese, crumbled
1 (7 ounce) jar roasted red peppers, drained and chopped
1 cup chopped sun-dried tomatoes marinated in olive oil, drained
4 pita bread rounds
1 cup fresh basil leaves, torn
½ cup balsamic vinegar, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Separate the pita breads by cutting around the outer edge, and carefully prying the halves apart to make two rounds out of each one.
  • Place the separated pita rounds onto cookie sheets. Generously sprinkle goat cheese, roasted red peppers and sun-dried tomatoes onto each one.
  • Bake the pizzas for 16 minutes in the preheated oven, or until the crust is crisp. As soon as the pizzas come out of the oven, sprinkle with torn basil, and drizzle with balsamic vinegar. Cut into quarters, and serve hot or warm.

1 (1/4-oz) package active dry yeast
1 teaspoon sugar
1 cup warm water (110-115°F)
2 1/2 cups all-purpose flour
1 teaspoon salt
For topping
3 tablespoons extra-virgin olive oil
1 1/2 firm-ripe peaches, cut into thin wedges and halved crosswise
8 very thin prosciutto slices, torn into pieces
3 oz soft mild goat cheese, crumbled
2 teaspoons chopped fresh rosemary
Special Equipment
a pizza stone and baker's peel

Steps:

  • Make dough and let rise:
  • Stir yeast and sugar into water until dissolved and let stand 5 minutes, or until foamy. Whisk together flour and salt in a bowl and add yeast mixture, stirring until a dough forms. Knead dough on a floured surface 5 minutes. Put in an oiled large bowl and turn to coat.
  • Let rise, covered with plastic wrap, in a warm place until doubled in bulk, about 1 1/2 hours.
  • While dough is rising, put pizza stone in lowest position of oven (on oven floor if gas, lowest rack position if electric; remove other racks in either case) and preheat oven to highest setting (500-550°F; allow about 1 hour to preheat with stone).
  • Shape dough:
  • Quarter dough on floured surface and dust with flour. Shape and stretch 2 pieces of dough into 7- by 5-inch ovals (keep remaining dough covered).
  • Sprinkle baker's peel generously with flour and carefully transfer ovals to it. Jerk peel; if dough sticks, lift it and sprinkle flour underneath.
  • Top and bake pizzas:
  • Working quickly, brush ovals with some oil and top each with one fourth of peaches, prosciutto, cheese, and rosemary. Season with salt and pepper.
  • Line up far edge of peel with far edge of stone and tilt peel, jerking it gently. When edge of first pizza touches stone, quickly pull back peel to completely transfer pizzas to stone (do not move pizzas).
  • Bake until crisp and golden, 6 to 8 minutes. Slide peel under pizzas to remove from oven.
  • Shape, top, and bake 2 more pizzas in same manner. Drizzle remaining oil over pizzas.

14 ounces fresh pork or beef chorizo sausages, plastic casings removed
4 cups (packed) watercress tops, divided
8 ounces soft fresh goat cheese, crumbled
8 5- to 6-inch-diameter pita breads
Olive oil
3 mini sweet peppers (1 yellow, 1 orange, and 1 red), cut into thin rings

Steps:

  • Prepare barbecue (medium heat). Sauté chorizo in large skillet over medium-high heat until cooked through, breaking up with spoon, about 8 minutes. Transfer chorizo to sieve set over bowl and drain. Mix 2 1/2 cups watercress and goat cheese in medium bowl.
  • Lightly brush 1 side of each pita bread with oil. Grill, oiled side down, until bottom is just crisp, about 2 minutes. Transfer to work surface, grilled side up. Cover each pita bread with cheese mixture, chorizo, and several sweet pepper rings, dividing equally.
  • Return pita pizzas to barbecue. Grill, covered, until goat cheese softens, about 2 minutes. Transfer pita pizzas to serving platter. Top each with more watercress and serve.

Steps:

  • Preheat oven to 425°F. Heat oil in heavy large skillet over medium heat. Add spinach; toss until beginning to wilt, about 2 minutes. Add rosemary and crushed pepper and toss 1 minute. Remove from heat; mix in lemon juice and peel.

4 tablespoons butter
1 tablespoon olive oil
2 cups finely diced leeks (white part only - about six medium leeks)
1 cup finely chopped onion
2 large pinches saffron threads
Salt to taste
Cornmeal
1/2 recipe basic pizza dough
6 ounces Boucheron goat cheese, rind removed and cheese crumbled
6 halves imported sun-dried tomatoes in oil, drained and cut in julienne slivers, or 16 pitted Italian black olives, coarsely chopped

Steps:

  • Heat butter and oil in a skillet. Add leeks and onions and saute over low heat, covered, until the vegetables are very tender but not brown. Stir them from time to time as they cook.
  • Crumble saffron into skillet, add salt and mix. Cover and continue to cook 10 more minutes, stirring a few times.
  • Preheat oven to 425 degrees. Dust a large baking sheet with cornmeal.
  • Divide dough into four equal portions. Shape each into a circle about 6 inches in diameter with a rim of about 1/2 inch and place on baking sheet. Spread each circle of dough with the saffron-flavored leek mixture.
  • Sprinkle crumbled goat cheese evenly over each pizza, then arrange strips of sun-dried tomatoes like spokes of a wheel over the cheese. If using olives, sprinkle the pieces in a circular pattern on each pizza.
  • Bake on the bottom level of the oven until lightly browned and the cheese has melted, about 20 minutes. Serve at once.

Cornmeal Pizza Dough
Extra-virgin olive oil
8 ounces soft goat cheese, crumbled
4 ounces prosciutto, cut into thin strips
2 large plums or apricots, pitted and cut into thin wedges
2 bunches arugula, trimmed
Coarse salt and freshly ground pepper

Steps:

  • Heat a grill until medium-hot. Generously brush one side of pizza dough with oil; grill, oiled side down, until underside is golden brown and top begins to bubble, 3 to 5 minutes. Quickly brush top with oil; flip crust. Top with some of the cheese, prosciutto, and plums. Grill until toppings are hot and crust is cooked through, 3 to 5 minutes more.

Dough
2 1/2 cups unbleached all purpose flour or bread flour
1/2 cup white whole wheat flour or bread flour
3 tablespoons vital wheat gluten flour or bread flour
1 1/2 teaspoons coarse kosher salt
1 teaspoon sugar
1 cup plus 2 tablespoons warm water (105°F to 115°F)
1 1/2 teaspoons active dry yeast
3 1/2 tablespoons extra-virgin olive oil, divided
Additional unbleached all purpose flour (for kneading and shaping)
Topping
3 tablespoons extra-virgin olive oil plus additional for brushing
6 ounces fresh shiitake mushrooms, stemmed, thinly sliced
6 ounces fresh chanterelle mushrooms, thinly sliced
1 cup (packed) coarsely grated whole-milk mozzarella cheese
2/3 cup freshly grated Parmesan cheese
6 ounces chilled soft fresh goat cheese, coarsely crumbled
2 tablespoons sliced fresh chives

Steps:

  • For dough:
  • Combine all flours, coarse salt, and sugar in processor. Stir 1 cup plus 2 tablespoons warm water and yeast in 2-cup measuring cup. Let stand until yeast dissolves, about 5 minutes. Stir in 3 tablespoons oil. With machine running, pour yeast-oil mixture through feed tube. Blend until ball of slightly sticky dough forms, about 1 minute.
  • Transfer dough to lightly floured surface; knead until smooth and elastic, adding more flour if very sticky, about 5 minutes. Rub with 1/2 tablespoon oil; place in resealable 1-gallon plastic bag. Seal bag. Let dough rise at room temperature until doubled, about 2 hours. Open bag; punch down dough in bag. Reseal. Chill overnight, punching down occasionally. Divide into thirds. DO AHEAD Wrap pieces separately; freeze up to 1 week. Thaw 2 pieces in refrigerator before continuing. Let 2 wrapped pieces stand at room temperature 1 hour before shaping.
  • For topping:
  • Heat 3 tablespoons oil in large skillet over medium-high heat. Add mushrooms; sprinkle with salt. Sauté until tender, about 5 minutes. do ahead Can be made 1 day ahead. Cool, cover, and chill.
  • Sprinkle 2 large sheets of parchment with flour. Roll out 2 dough pieces, each on separate parchment sheet, to 10-inch rounds, letting dough rest a few minutes if springing back. Brush with oil; sprinkle each with 1/2 cup mozzarella and 1/3 cup Parmesan. Top with mushrooms, then dot with goat cheese. DO AHEAD Slide pizzas on parchment onto baking sheets; cover with plastic. Chill up to 4 hours. Let stand at room temperature 30 minutes.
  • Position 1 rack in bottom third and1 rack in top third of oven; place heavy baking sheet on each and preheat oven to 450°F for at least 30 minutes. Slide 1 pizza on parchment onto each hot baking sheet. Bake 8 minutes; reverse sheets. Bake pizzas until crusts are brown at edges and on bottom, about 10 minutes. Sprinkle with chives.

Steps:

  • Drizzle olive oil in medium skillet over medium heat. Add onions and saute until transparent and starting to brown, 8-10 minutes. Add garlic and stir until fragrant. Remove from heat.
  • Lightly toast English muffins.
  • Spread each halve with tomato pesto and top with onions.
  • Preheat broiler.
  • Divide goat cheese into eight portions and place one piece on each English muffin halve.

4 (8 inch) fat free tortillas
1 1/2 tablespoons olive oil
2 1/2 cups grated part-skim mozzarella cheese
4 plum tomatoes, sliced
2 garlic cloves, minced
2 tablespoons olive oil
1/2 teaspoon dried basil
1/2 cup crumbled goat cheese

Steps:

  • Preheat oven to 275 degrees. Using 2 baking sheets, place 2 tortillas side by side on each sheet. With a pastry brush, lightly brush each tortilla with some of the olive oil. Flip the tortillas over and brush again. Bake 8-10 minutes, flipping over the tortillas and alternating the placement of the baking sheets halway through the cooking time. Also, during the first few minutes, use a knife point to pop any air bubbles that might develop. The tortillas shouldbe golden and crisp when done. (The tortillas may be prepared to this point up to 3 days in advance. Cool completely, seal in a plastic bag, and refrigerate until ready to use.).
  • Sprinkle the mozzarella evenly over the 4 tortillas. Place the tomatoes over the cheese.
  • Combine the garlic, olive oil, and basil and drizzle the mixture over the tomatoes.
  • Bake about 12 minutes, or until the cheese is bubbly. Alternate the placement of the baking sheets halfway during the cooking time. Remove the pizzas from the oven, then sprinkle bits of goat cheese all over their tops. Serve immediately.

2 pounds pizza dough (available fresh at many pizzerias or frozen at supermarkets)
6 or more tablespoons flour
1/2 pound aged goat cheese, crumbled
4 tomatoes, sliced
1 cup chopped fresh basil

Steps:

  • If the pizza dough is frozen, defrost it the morning before it is needed.
  • Preheat the oven to 350 degrees.
  • When ready to prepare the pizzas, put about 1 tablespoon of the flour onto a baking sheet, and spread it around. Using your hands, spread half the dough onto the baking sheet, adding flour to your hands and to the dough as needed to keep it from sticking. For a smoother, thinner crust, use a rolling pin. When the dough is spread out, sprinkle half of the toppings onto it. Then repeat the same procedure, making another pizza on another baking sheet.
  • Bake for 30 minutes to 1 hour, depending on how thick the crust is and on how crusty you want the pizza. When done, cut the pizzas into small rectangular pieces.

2 small red onions, thickly sliced

Steps:

  • Preheat oven to 400ºF. On a large, dry, metal baking sheet, place your tortillas in a single layer. Place on center rack of oven and heat for 5 minutes. Remove from heat, flip, and heat again on middle rack for an additional 2 minutes. Remove from heat and set aside.
