- Preheat oven to 350 degrees F (175 degrees C).
- Stir brownie mix, oil, egg, and water together in a bowl until dough is thick and begins to pull away from sides of the bowl. Roll dough into 1-inch balls and place 2 inches apart on a baking sheet.
- Bake in the preheated oven until just set in the center, 8 to 10 minutes.
- Cool brookies on the baking sheet for 5 minutes; transfer to a wire rack. Sift confectioners' sugar over brookies and cool for 5 minutes more. Gently place 1 chocolate kiss in the center of each brookie.

- Heat oven to 325°F. Spray cookie sheets with cooking spray.
- In 2-quart saucepan, heat butter and 1 cup of the chocolate chips over low heat, stirring occasionally, until melted. Remove from heat; stir in brown sugar. Cool slightly, stirring occasionally. - Using a microwave-safe bowl, melt the chocolate, butter, and shortening in the microwave in 30-second increments until completely melted, stirring in between each increment. Set aside to cool slightly as you complete the other steps.
- In a medium bowl, whisk the flour, cocoa powder, baking powder, salt, and espresso powder until combined.
- In a large bowl using a hand mixer or a stand mixer with a paddle attachment, whip the sugar and eggs on high speed for a full 5 minutes. The mixture will look frothy and lighter in color.
- Add the vanilla, followed by the mixture of melted chocolate, butter, and shortening in a slow and steady stream on low speed until fully combined.
- Add the dry ingredients in two additions and mix on low speed by hand until just combined. Don't over-mix. Finally, mix in the mini chocolate chips.
- Cover and chill the cookie dough for 1 hour in the fridge.
- Preheat your oven to 350°F and prepare 2 half sheet trays with parchment paper. Scoop dough into balls, rolling them to make them slightly taller before you place them on the tray 2-3 inches apart, no more than 8 cookies per tray. Bake for 13-16 minutes until the edges look set.
- Remove from the oven and let cool for at least 10 minutes before serving.

- 1. Whisk flour, brownie mix, and brown sugar together.
- 2. Using a heavy spoon, stir in the eggs, one at a time.
- 3. Then add the butter and 2 tbsp of water. The batter will be very thick. If the batter seems too dry or that there is too much flour, add 1 more tbsp of water.
- 4. Fold in the chocolate chunks.
- 5. Cover and refrigerate for 2 hours (do not be tempted to skip this step - the cookies will not have the consistency they should).
- 6. Preheat oven to 350. Drop by heaping spoonfuls onto a greased cookie sheet. Cookies should be thick to get a real brownie feel, about 3 in apart. Press down slightly, but don't flatten completely.
- 7. Bake for 8-10 mins.
- 8. Remove from oven and allow to sit for 2 mins or so on the cookie sheet before transferring to a cooling rack. Allow to cool completely before transferring to storage.
