Coconut oil, for frying
1 1/2 cups cornmeal
1 teaspoon paprika
1/2 teaspoon cayenne
1 teaspoon salt, plus more for seasoning
1/2 teaspoon ground pepper, plus more for seasoning
3 eggs, beaten
1 cup all-purpose flour
2 green tomatoes, sliced
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Pinch salt and ground pepper
1/4 cup olive oil
1 pound mixed greens
1/2 cup crumbled feta cheese
1/4 cup slivered almonds
2 peaches, pitted and thinly sliced

Steps:

  • For the fried green tomatoes: Preheat the frying oil to 350 degrees F in a heavy-bottomed pot over medium to medium-high heat.
  • In a shallow dish, combine the cornmeal, paprika, cayenne, salt and pepper and whisk together. In second shallow dish add the eggs, and in a third shallow dish add the flour. Dredge the slices of tomato into the flour, then the eggs and then the seasoned cornmeal. Add the breaded tomatoes to the oil, in batches if necessary, and fry until golden brown on each side, about 3 minutes. Remove and drain on paper towels. Season with salt and pepper.
  • For the dressing: Whisk the vinegar, honey, mustard, salt and pepper in a bowl. Drizzle in the oil until emulsified.
  • To assemble the salad: In a salad bowl, add the greens, feta cheese, almonds and peaches. Top with the balsamic vinaigrette dressing and mix together. Plate the salad and top with fried green tomatoes.

Canola, vegetable or peanut oil
2 to 3 large green tomatoes, sliced 1/4 to 3/8-inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup plain white cornmeal
1/2 cup all-purpose flour
2 teaspoons Creole seasoning (recommended: Konriko)
Baby arugula
Jumbo lump crabmeat
4 tablespoons champagne vinegar
2 teaspoons ground sumac, plus more for serving
1/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 tablespoons extra-virgin olive oil

Steps:

  • Preheat approximately 2-inches oil in large, heavy skillet to 325 degrees F. An electric- fryer can be used.
  • Sprinkle both sides of tomatoes with salt and pepper. Combine the cornmeal, flour and Creole seasoning in a shallow dish. Dredge the tomatoes in the cornmeal mixture and fry until golden brown. Remove from the oil and drain on paper towels.
  • For the vinaigrette:
  • Add the vinegar, sumac, and salt and pepper to a small bowl. Slowly whisk in the olive oil until combined. Remove and reserve 4 tablespoons. In a large bowl, add enough arugula for 4 servings. Pour the vinaigrette over the arugula and toss. Divide the arugula on serving plates, arrange 2 to 3 fried green tomatoes on the arugula and top with equal amounts of crabmeat. Drizzle reserved vinaigrette over the crabmeat and sprinkle with ground sumac. Serve immediately.

1 egg
1 Tbsp. water
1 pkt. SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix
1/2 lb. green tomatoes (about 4), cut into 1/4-inch-thick slices
8 cups tightly packed torn mixed salad greens
1 cup mixed orange, red and yellow cherry tomatoes, cut in half
1/4 cup chopped Italian parsley
1/2 cup KRAFT Buttermilk Ranch Dressing

Steps:

  • Heat oven to 425ºF.
  • Cover baking sheet with parchment. Whisk egg and water until blended. Empty coating mix into shaker bag.
  • Dip green tomato slices, 1 or 2 at a time, into egg, turning to evenly coat both sides of each slice. Add to shaker bag; shake to until evenly coat tomatoes with coating mix. Place on prepared baking sheet.
  • Bake 10 to 12 min. or until crisp and lightly browned.
  • Place salad greens on large platter; top with cherry tomatoes, green tomatoes and parsley. Drizzle with dressing just before serving.
