I just threw some things together to make dinner for my father and brother. Even my picky brother liked it!

12 ounces farfalle pasta, cooked
1/2 onion, finely chopped
2 -3 garlic cloves, minced
2 tablespoons olive oil
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes
salt & pepper, to taste
1 -2 tablespoon dried basil
1 teaspoon dried oregano
1 tablespoon grated parmesan cheese
1 tablespoon grated romano cheese

Steps:

  • Saute onion and garlic in olive oil for 2 minutes.
  • Add tomato sauce and diced tomatoes.
  • Stir in salt, pepper, basil, oregano, and cheeses.
  • Simmer for 15 minutes.
  • Stir in pasta.

1 1/2 pounds farfalle or bow tie pasta
6 roma tomatoes, seeded and diced
1/2 cup calamata olives, pitted
1/3 cup diced red onion
4 teaspoons drained capers
3 ounces feta cheese, crumbled
10 basil leaves, julienned
Balsamic Vinaigrette

Steps:

  • 1. Cook the pasta in a large pot of boiling salted water until al dente.
  • 2. Combine the pasta, tomatoes, olives, onions, capers, cheese, and basil. Pour on the vinaigrette and toss lightly.

2 tablespoons olive oil
3 cloves garlic, peeled and thinly sliced
1 (28 ounce) can crushed tomatoes
5 ounces feta cheese (cut into small cubes or crumbled)
3/4 teaspoon salt
1 teaspoon sugar
10 fresh basil leaves, roughly chopped
20 ounces farfalle pasta

Steps:

  • Pour olive oil in a pan and heat it. When the oil begins to sizzle, add the garlic. Cook for about 1 minute, stirring constantly.
  • Add the crushed tomatoes, salt, and sugar and stir again. Add crumbled/chopped feta to the sauce. Stir and cook over medium-low heat for about 18 minutes.
  • Add the basil and cook for about 2 more minutes.
  • Meanwhile, cook the pasta according to the package instructions. Drain the pasta, plate the pasta, and pour sauce on top of each serving. Sprinkle with parmesan cheese, if desired.

2 tablespoons olive oil
1 pound sweet Italian sausages, casings removed
1/2 teaspoon dried crushed red pepper
1 cup chopped onion
3 garlic cloves, minced
1 28-ounce can crushed tomatoes with added puree
1/2 cup whipping cream
1 pound farfalle (bow-tie pasta)
1/2 cup (packed) chopped fresh basil
Freshly grated Pecorino Romano cheese

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add sausage and crushed red pepper. Sauté until sausage is no longer pink, breaking up with back of fork, about 5 minutes. Add onion and garlic; sauté until onion is tender and sausage is browned, about 3 minutes longer. Add tomatoes and cream. Reduce heat to low and simmer until sausage mixture thickens, about 3 minutes. Season to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup cooking liquid. Return pasta to same pot. Add sausage mixture and toss over medium-low heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Transfer pasta to serving dish. Sprinkle with basil. Serve, passing cheese separately.
