4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

½ cup vegetable oil
⅓ cup white sugar
1 tablespoon poppy seeds
2 teaspoons finely minced onion
½ teaspoon Worcestershire sauce
¼ teaspoon paprika
1 (10 ounce) bag baby spinach
1 cup sliced fresh strawberries, or as needed
1 (4 ounce) package crumbled blue cheese, or as needed
½ cup roasted pecan halves, or as needed
