An eggless, butterless, refined-sugar-free carrot-honey cake. Can be eaten on its own or with an orange-honey glaze, or, for a celebratory dessert, orange buttercream frosting.

¾ cup all-purpose flour
¾ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt, or to taste
½ cup honey
¼ cup vegetable oil
2 tablespoons thick plain yogurt
2 medium carrots, peeled and finely grated
1 orange, zested
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 6-inch cake pan.
  • Sift all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt together in a bowl.
  • Mix honey, oil, and yogurt together in a bowl, stirring gently.
  • Combine carrots with the honey mixture; add orange zest and vanilla extract. Add flour mixture by the spoonful, folding gently until no dry spots remain. Add a couple teaspoons orange juice if batter is too thick. Pour into the prepared cake pan.
  • Bake in the preheated oven until the top springs back when touched, 25 to 30 minutes. Allow to cool in the pan for 10 minutes; transfer to a wire rack to cool completely.

1 1/2 cups flour
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger powder
1/4 teaspoon salt
1 cup finely grated carrot
3/4 cup water
1/2 cup melted butter or 1/2 cup vegetable oil
2 teaspoons vanilla essence
1 tablespoon vinegar

Steps:

  • Preheat oven to 350 degrees C (175 degrees F).
  • Mix the dry ingredients and spices until well blended.
  • Add grated carrots. Stir until thoroughly blended.
  • Add wet ingredients. Mix thoroughly.

1/2 cup unsweetened applesauce
2 1/2 cups flour
3/4 cup sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup canola oil
2 cups carrots, grated
1 cup crushed pineapple

Steps:

  • In a small bowl mix baking powder and applesause into a foamy mixture, set aside.
  • In a large bowl mix flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  • Add oil, carrots, pineapple (some of the juice might help), and applesauce mixture.
  • Mix well.
  • Add flaked coconut, nuts, or raisins if desired.
  • Scoop mixture into 24 cupcake liners.
  • Bake at 325 degrees Fahrenheit for 30 minutes or until toothpick comes out clean.
  • Once cooled, frost with icing (powdered sugar, 'fake' butter, vanilla, and water).

100 g icing sugar
150 g butter
10 g lemon zest
1 vanilla bean
1 pinch salt
300 g flour
100 g ground hazelnuts
10 g baking powder
180 g whipping cream
50 g raisins
150 g carrots, washed, peeled and grated
3 -5 whole walnuts, to garnish

Steps:

  • In a large bowl, whip together the icing sugar, butter, vanilla and lemon zest.
  • Sift the flour and baking powder together in a separate bowl.
  • Add the ground hazelnut to the flour and mix well.
  • Now, mix in this flour-hazelnut mixture into the butter mixture.
  • Add the whipped cream and mix well.
  • Next, stir in the raisins and carrots.
  • Grease and flour a seven inch cake tin now.
  • Pour the prepared mixture into it.
  • Alternatively, use well greased and dusted individual muffin molds.
  • Put the whole walnuts over the cake.
  • Bake at 180C for 25 minutes or till a wooden toothpick inserted in the center comes out clean.
  • Turn out onto a wire rack and allow it to cool completely.
  • Serve dusted with icing sugar.
  • If baking in individual muffin molds, you may dip the tops in melted chocolate and by doing so, you'll be retaining the moisture in the cake for a longer period of time.

This cake is based on a recipe I found on the Internet (at srefoodblog.blogspot.com). I adapted it to fit our taste and found it really delicious. It made giving carrots to my 2-year old a whole lot easier. I frosted it with the standard cream cheese frosting, but it would be good with jam or even by itself.

1 cup all-purpose flour
1/8 cup wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
4 tablespoons butter, softened
1 1/2 cups carrots, grated (4 or 5 medium)
1/2 cup sugar
3/4 cup plain yogurt
1/4 cup slivered almonds
1/4 cup raisins
1 teaspoon ginger, freshly grated
1/4 teaspoon nutmeg
1 teaspoon clove

Steps:

  • Grease a 8" square pan and preheat oven to 350°F.
  • Sift together flour, baking soda and baking powder in large bowl.
  • Add softened butter, yogurt and sugar and mix well. The batter will be quite thick at this point.
  • Add the grated carrots, nuts, raisins, spices and ginger and mix well.
  • If the batter is still too thick, add a little more yogurt to loosen it up.
  • Scrape the batter into the prepared pan and bake at 350 F for 40 minutes or until the cake is browned and tests done in the middle.
  • Cool and frost if desired.
