This is Day 21: Breakfast, on the 21 Day Wonder Diet. These are totally delicious, and easily doubled to feed the family! This breakfast is to be followed by a mid-morning snack of 1 muesli muffin (See day 20: Breakfast, Recipe #366085 ).

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

12 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss cheese (4 oz)
1/3 cup chopped onion
3/4 cup Original Bisquick™ mix
1 1/2 cups milk
3 eggs
1/8 teaspoon pepper

Steps:

  • Heat oven to 400°F. Grease 9-inch glass pie plate. Sprinkle bacon, cheese and onion into pie plate.
  • In medium bowl, beat remaining ingredients until blended; pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

This pie is great for any occasion as a man meal. Quick and easy, and in 1984 the approx cost was only $3 - $4. You can work out how much that is these days ;). This can be served hot or cold.

2 sheets ready rolled puff pastry
250 g bacon
6 eggs
pepper
2 tablespoons chopped parsley
1 egg yolk
1 teaspoon water

Steps:

  • Line base of pie plate (base measures 20cm) with one sheet of the pastry; refrigerate while preparing filling. Remove rind and excess fat from bacon, chop roughly.
  • Fry in pan 3 minutes until just soft, drain; cool. Place half the bacon in the pastry case, break eggs on top, one at a time, careful not to break the yolks.
  • Season with pepper, top with remaining bacon, sprinkle with parsley.
  • Place remaining pastry on top, trim edges, press pastry together. Brush with combined egg yolk and water. Bake in a hot oven for 15 minutes. Reduce heat to moderate, cook for a further 15 minutes or until browned.

cooking spray
2 eggs
2 egg whites
2 tablespoons skim milk
1 small tomatoes
2 tablespoons flat leaf parsley, coarsely chopped

Steps:

  • Boil, steam or microwave asparagus until tender; drain.
  • Meanwhile, spray medium frying pan with cooking oil. Whisk eggs, egg whites and milk in medium jug. Cook egg mixture in pan, over low heat, stirring , until almost set.
  • Serve asparagus and scrambled eggs sprinkled with tomato and parsley.

1 cup baking mix
⅛ teaspoon ground black pepper

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease a 10-inch glass pie plate.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Pat dry on paper towels and crumble the bacon. Sprinkle bacon, cheese, and onion in the pie plate.
  • In a medium bowl, stir the milk, eggs, baking mix, and pepper with fork until blended. Pour into pie plate.

This is my little egg & bacon pie. It is very basic, made for kids, so feel free to add any little herbs, etc, that you like! They are great served either hot or cold, and my kids love them in their lunchboxes.

1/2 cup cream
1/2 cup milk
1/2 cup parmesan cheese, finely shredded
4 slices bacon, chopped finely
5 sheets puff pastry
salt
pepper
2 tomatoes, sliced thinly (optional)

Steps:

  • Whisk together eggs, milk, cream, parmesan, salt, and pepper.
  • Cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.
  • Divide the chopped bacon between the pastry rounds.
  • Pour egg mixture over bacon, to almost at the top of the pastry.
  • Top each pie with a slice of tomato.
  • Bake for 20 minutes at 200°C.
