Wanted to pretend it was summer so I made a summery meal. Baked beans, pork roast, mashed cauliflower, and deviled eggs.

1 small boneless pork roast
1 can(s) northern beans, lightly drained
1 can(s) chili beans, lightly drained
1/3 cup(s) brown sugar, firmly packed
1.4 cup(s) molasses
1 teaspoon(s) diced garlic from a jar
1 small onion, diced
- any pork rub or seasoning. i used grill mates pork rub that i found at family dollar for $2.

Steps:

  • Preheat oven to 325 degrees. Rub the roast with the rub and put fat side down in a covered baking dish in the oven. In another baking dish put the beans, molasses, onion, garlic and sugar together and place in oven. NOTE: I didn't combine the first 1 1/2 hours so the grease wouldn't be in the beans.
  • After an hour and a half remove the pork roast and place fat side up into the beans dish and continue baking for another 1 1/2 hours decreasing the heat to 300 degrees.

1 pound dried pinto beans
1 boneless pork loin roast (3 to 4 pounds), halved
1 can (14-1/2 ounces) stewed tomatoes
5 medium carrots, chopped
4 celery ribs, chopped
1-1/2 cups water
2 cans (4 ounces each) chopped green chiles
2 tablespoons chili powder
4 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon dried oregano
Dash pepper
Tortilla chips or tortillas
Optional toppings: Chopped green onions, sliced ripe olives, chopped tomatoes, shredded cheddar cheese, sour cream and/or shredded lettuce

Steps:

  • Sort beans and rinse with cold water. Soak beans according to the package directions., Drain and rinse beans, discarding liquid. Place roast in a 5-qt. slow cooker. In a bowl, combine the beans, tomatoes, carrots, celery, water, chiles, chili powder, garlic, cumin, oregano and pepper. Pour over roast. Cover and cook on high 3 hours. Reduce heat to low; cook until beans are tender, 5 hours longer., Remove meat, shred with 2 forks and return to slow cooker. With a slotted spoon, serve meat mixture over corn chips or in tortillas with toppings as desired.

1 (4 pound) pork shoulder roast
2 (16 ounce) cans cannellini beans
1 (12 fluid ounce) can beer
1 (28 ounce) can stewed tomatoes, drained
2 large onions, coarsely chopped
10 shallots, peeled
10 cloves garlic, peeled
salt and black pepper to taste
2 bay leaves
3 sprigs fresh rosemary

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • In a large skillet over medium-high heat, brown the roast on all sides, about 10 minutes. Place roast into a large roasting pan. Pour beans, beer, and tomatoes over roast. Arrange onions, shallots, garlic, bay leaves and sprigs of rosemary around the roast, and season with salt and pepper.
  • Cover, and bake for 4 hours. Raise the temperature to 425 degrees F (220 degrees C), and roast 1 hour more.

3 cups dried navy beans
12 cups water (, boiling)
6 cups water
1 tablespoon Kosher salt
1 tablespoon molasses
1 tablespoon yellow mustard
1/2 cup brown sugar (, packed)
2 cups ketchup
1 tablespoon Worcestershire Sauce
2 pound thick-cut bacon (, chopped)
3 cups chicken broth

Steps:

  • Add beans and boiling water to a large pot and cover.
  • Let sit overnight.
  • Drain beans and add 6 cups of water.

1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon onion powder
2 tablespoons olive oil
1 cup beer
2 Spices, bay leaf
2 (15.5 ounce) cans cannellini beans, drained and rinsed
1 ½ cups salsa

Steps:

  • Season pork loin with salt and pepper. Mix chili powder, cumin, and onion powder together; sprinkle on all sides of the pork.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil until hot. Cut pork loin in half to fit in the pot if necessary. Cook until browned on each side, about 5 minutes total. Remove and set aside.
  • Pour beer into the pot and stir to deglaze, scraping up all the browned bits. Return pork loin to the pot. Place bay leaves on top. Pour cannellini beans, then salsa, on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 15 to 20 minutes. Unlock and remove the lid. Slice pork, cut into chunks, or shred. Serve with the beans.

1/2 cup orange juice
1/2 cup olive oil
1/2 cup chopped fresh cilantro
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon grated orange peel
1 tablespoon minced garlic
2 bay leaves
4 12-ounce pork tenderloins
Bean sauce
2 tablespoons olive oil
1 cup chopped red bell pepper
1/2 cup chopped onion
2 garlic cloves, minced
1 15- to 16-ounce can black beans, rinsed, drained
1 cup canned low-salt chicken broth
1 tablespoon Worcestershire sauce
Dash of hot pepper sauce (such as Tabasco)
2 large ripe plantains (Plantains are a starchy variety of banana available at Latin American markets and some supermarkets. When ripe, the skin turns dark and the fruit becomes soft.)
3 tablespoons chopped fresh cilantro

Steps:

  • For pork:
  • Combine first 8 ingredients in 13x9x2-inch baking dish. Add pork loins, turning to coat. Cover and refrigerate overnight, turning occasionally.
  • For bean sauce:
  • Heat 1 tablespoon olive oil in heavy large saucepan over medium-high heat. Add pepper, onion and garlic; sauté until onion is tender and golden, about 7 minutes. Add beans and broth. Simmer until slightly thickened, stirring often, about 8 minutes. Stir in Worcestershire sauce and hot pepper sauce. Season with salt and pepper. (Can be made 2 hours ahead. Cover and let stand at room temperature.)
  • Preheat oven to 400°F. Remove pork from marinade; discard marinade. Season pork with salt and pepper. Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat. Working in batches, add pork and sauté until brown on all sides, about 10 minutes per batch. Transfer to heavy large baking sheet with rim.
  • Roast pork 10 minutes. Arrange plantain slices around pork on baking sheet. Bake until thermometer inserted into thickest part of pork registers 160°F and plantains are tender, brushing plantains occasionally with pan juices, about 20 minutes.
  • Arrange plantains in center of platter. Cut pork into 1-inch-thick slices. Arrange pork around plantains. Rewarm sauce. Stir in cilantro. Spoon sauce around edge of platter and serve.
