RIDICULOUSLY EASY BANANA BREAD
Your bananas need to be ripe for the best, most flavorful homemade banana bread. It is even better if they are overripe, brown, and speckled. A note on pan size: We use an 8 ½-inch by 4 ½-inch loaf pan; if you only have a 9-inch by 5-inch pan, check for doneness 5 to 10 minutes earlier.

- Center a rack in the oven and heat to 350° Fahrenheit. Butter and flour an 8 ½-inch by 4 ½-inch loaf pan. Alternatively, grease the pan, and then line with a sheet of parchment paper (as shown in the video).
- Place the pan on an insulated baking sheet or two regular baking sheets stacked on the other. This is optional but helps with even baking.
- Whisk the flour, baking soda, salt, and cinnamon together, and set aside.
- In the bottom of a medium bowl, mash bananas into a chunky paste.
- Whisk the melted butter, brown sugar, eggs, and vanilla into the bananas until well blended.
- Switch to a large rubber spatula, scrape the sides and bottom of the bowl, and then add the dry ingredients in three parts, stirring until the flour disappears and the batter is smooth. Fold in the nuts and chocolate chips.
- Pour batter into the prepared pan and smooth the top. Bake 55 to 75 minutes, or until a knife inserted into the center of the bread comes out clean.
- After 30 minutes in the oven, check the bread for color. If it looks like it is browning too quickly, loosely cover with aluminum foil.
- Transfer to a wire rack to cool for 5 minutes. Unmold the bread cool completely.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

Steps:
- Mash up bananas with a potato masher or fork (bananas will still be lumpy, this is okay).
- Add butter, sugar, eggs, and vanilla to bananas and mix together.
- Add Flour and baking soda.
- Beat with a hand mixer on low/medium for 2 min or until smooth and blended.
- Mix nuts into mixture with spoon.
- Grease pan and dust with flour.
- Bake 350 degrees for approix 60 minutes or until top is golden brown.
- Bake then let cool on the counter. Note: Storing the bread in foil will help keep the bread moist.
