I DD found this recipe and we used it as an appitizer for a Bridal shower. The filling can be made up ahead of time and cups filled 2 hours before serving

3 English cucumbers
1/4 cup sour cream
1/4 cup cream cheese, softened
3/4 cup crabmeat, excess water removed
1 tablespoon hot pepper sauce
1 teaspoon brown mustard
salt and pepper
1 tablespoon green onion, minced
chili powder (optional) or paprika (optional)

Steps:

  • Removed the peel from the cucumber using a vegetable peeler. Cut the cucumber into 2" slices.
  • Using a small melon baller, scoop out most of the inside. You will want to leave the walls and a thick portion of the bottom intact.
  • In a bowl, combine the sour cream and the cream cheese with a fork until well combined. Add the remaining ingredients and stir until combined.
  • Fill each of the cucumber cups with the crab dip.
  • Refrigerate until ready to serve. Serve within 2 hours of making.

1/2 cup (generous) shredded crabmeat (about 2 ounces)
1/4 cup chopped green onion (white and green parts)
3 tablespoons light sour cream
3 tablespoons chopped fresh cilantro
2 tablespoons finely chopped red bell pepper
1 tablespoon finely chopped pink pickled ginger slices*
1/2 teaspoon minced jalapeño chili with seeds
1 English hothouse cucumber, cut into 3/4-inch-thick slices
Fresh cilantro sprigs
*Pink pickled ginger slices are available at Asian markets and also at some specialty foods stores.

Steps:

  • Combine first 7 ingredients in medium bowl. Season to taste with salt and pepper. (Can be prepared up to 6 hours ahead. Cover and refrigerate.)
  • Using small melon baller, scoop out centers of cucumber leaving bottom shell intact. Fill centers and slightly mound crab mixture atop cucumber. Garnish each with cilantro sprig. Transfer to platter and serve.

English cucumber, unpeeled
fresh herb (to garnish)
1/4 cup fresh crab
1 teaspoon fresh lime zest
1 teaspoon fresh lime juice
1 tablespoon green onion, sliced fine
1/4 cup celery, diced fine
1 tablespoon olive oil
kosher salt
cracked black pepper

Steps:

  • Mix all the ingredients together, taste for seasoning; set aside. This can be covered and refrigerated for 1 day.
  • Cut the unpeeled cucumber into 1-1/2" thick slices; with the cucumber slice still laying on it's side, make a diagonal cut, now you have two diagonal cut pieces of cucumber.
  • Use a melon baller to make a small round hole in the center of the cucumber where the seeds are to make a cup; do not cut completely through to the other side.
  • Lightly salt each cucumber cup; place on a paper towel to drain. They can be refrigerated at this point and finished later.
  • When ready to serve remove the cucumber cups from the refrigerator and place a small amount of the crab mixture in the center of each round hole in the cucumber and serve; garnish with fresh herbs.

Steps:

  • 3 long cucumbers 1/4 cup light sour cream 1/4 cup fat-free cream cheese, softened 3/4 cup crab meat, excess water removed 1/2 tsp. salt 1/2 tsp. black pepper 1 tsp. brown mustard 1 Tbsp green onion, minced Paprika, if desired Peel your cucumbers and cut into 2 inch slices. Using a melon baller or small spoon, scoop out 3/4ths of the inside, being careful not to scoop through the bottom. You want to leave the walls and a thick portion of the bottom intact. In a medium bowl, mix together sour cream and cream cheese until well combined. Add in remaining ingredients and stir until just combined. Fill each cucumber cup with the crab mixture and refrigerate until ready to serve. Feel free to sprinkle a bit of paprika on each cucumber cup for garnish. Enjoy!

2/3 cup reduced-fat cream cheese
2 teaspoons lemon juice
1 teaspoon hot pepper sauce
1 package (8 ounces) imitation crabmeat, chopped
1/3 cup finely chopped sweet red pepper
2 green onions, sliced

Steps:

  • Peel strips from cucumbers to create striped edges; cut each cucumber into 16 slices, about 1/4-in. thick. Pat dry with paper towels; set aside., In a small bowl, beat the cream cheese, lemon juice and pepper sauce until smooth. Fold in the crab, red pepper and onions.
