- 1. Cream & mix all ingredients-I also use finely chopped parsley.Roll in a ball w/saran wrap & serve with assorted crackers using a cheese knife to spread. (to hard to dip)

- In a mixing bowl, combine all ingredients. If your cream cheese is soft enough you will not need a mixer. I had no problem mixing this with a spoon.
- Chill in refrigerator for 2 hours.
- Serve with wheat thins, Hawaiian rolls, Ritz crackers, or bread for small sandwiches.
I LOVE OLIVES AND CREAM CHEESE SPREAD
What's not to love? This is an easy make-ahead appetizer that takes 15 minutes to prepare and is so yummy it will be gone 15 minutes after you set it on the table. Pitted black olives and pimiento-stuffed Spanish/Manzanilla olives make it look as colorful as it is delicious. Serve it with crackers or crispinis. I also use it as a sandwich spread...it really spruces up a plain old cold-cut or deli sandwich.

This is quick and easy to make and oh, so delicious! Be prepared, it disappears quickly. I had to make a second batch just to get pictures!

- 1. Whip the cream cheese, with electric mixer, until smooth.
- 2. Add the olive juice a tablespoon at a time, mixing well after each addition. You want the cream cheese smooth, easy to spread, but not runny, so you may not use all of the reserved juice.
- 3. Stir in olives. If you can, allow to stand for 15-20 minutes for flavors to blend. Serve with crackers (I like triskets)
