Another recipe I made for my sisters birthday, very tasty crab cake recipe. I use fresh crab as I love the flavour of it, but canned is fine. It is also very easy to make, more time consuming if you have to crack crab, but you do taste the difference.

- Blend or Process crab, prawns, paste, lemon grass, coriander, onions and egg until just combined. Shape into small patties using about a tablespoon of mix for each (will make about 25-30.) OR shape into larger patties (will make about 10-12).
- Heat oil in a large frying pan, cook crab in batches until browned on both sides and cooked through.
- Serve crab cakes with dipping sauce.
- For the dipping sauce.
- Mix lime and sugar together, place in the microwave 30-45 seconds, to dissolve sugar, stir in fish sauce and sweet chili, Place in serving bowl and serve with crab cakes.
MADRAS CRAB CURRY
The sight of live crabs being sold in Chinatown brought back mouthwatering memories of mom's crab curry which I used to devour and I wanted to relive the experience. The body is cooked whole along with the pincers and legs. The legs usually don't have much meat but add flavor to the dish. The curry is purposely on the milder side to ensure that the spices do not overpower the delicate meat flavor. It is best when eaten the next day! Serve with hot rice cooked with a couple of cloves and piece of cinnamon.

- Heat oil in a large pot over medium heat. Add cinnamon stick, cloves, star anise, and peppercorns; cook and stir until spices start to pop. Add dried chile peppers, urad dal, and fennel seeds; cook until dal starts turning golden, 1 to 2 minutes.
- Stir onions, garlic, and ginger into the pot. Cook and stir until garlic just starts to turn golden, 1 to 2 minutes. Add garam masala, chile powder, turmeric, and salt; cook 1 minute more.
- Stir 1 cup of water, tomato puree, and tomato paste into the pot. Cook until tomato puree thickens, about 5 minutes. Stir in remaining 1 cup water, coconut, and coconut milk. Bring to a simmer over medium heat. Reduce heat to low; stir in tamarind juice.

CRAB CURRY

- First, make the paste. Dry-roast the coconut, cumin seeds and peppercorns until golden, then pound using a pestle and mortar or blend to a smooth paste.
- Heat the oil in a saucepan, add the fenugreek and mustard seeds and cook until they start to crackle. Add the garlic, green chilli, ginger, curry leaves and onion, sauté until golden, then add the chilli powder, turmeric and coconut paste. Cook for 10-15 mins, making sure the mixture doesn't stick - add a splash of water if you need to. Add the fish stock and reduce until the mixture thickens a little.
- Add the coconut milk powder, tamarind pulp and tomatoes and stir in the drumstick leaves, if using. Season with salt and cook for 10 mins. Check the seasoning, then add the mixed crabmeat and heat through, stirring gently. Serve with rice.

- Melt the 3 tablespoons butter in a small pan over medium-low heat and cook the onion, celery, and grated carrot until tender, about 5 minutes.
- Remove from the heat and add the parsley, wine, crab, cayenne and bread crumbs, mixing to combine well.
- Sprinkle the flattened chicken breasts with salt and pepper.
- Place pounded chicken"shiny" side down on a cutting board.
- (When rolling the breast over a filling, the chicken holds together better when the skinned side is on the outside.) Divide the crab filling between the 6 chicken breasts, placing the filling at one side.
- Roll up the breasts, tucking in the ends like an fat egg roll.
- Don't worry if the ends are open a little bit, the filling won't leak out during baking.
- Carefully,place the chicken breasts in a baking pan large enough to hold them in one layer, about 11" x 7" x 2'.
- Melt 3 tablespoons of butter in a saucepan, then stir in the 3 tablespoons flour and the curry powder and salt.
- Cook stirring, for 2 minutes.
- Add the milk and wine and simmer until mixture thickens, stirring constantly.
- The sauce should be of a fairly thick consistency, not thin and runny.
- Pour the sauce over the chicken breasts.
- Divide 1 1/4 cups bread crumbs over the breasts and dot with the 2 tablespoons of butter.
- Bake uncovered, at 375 degrees, for 45 minutes.
- Sprinkle with the grated cheese and bake for another 4 minutes or until cheese melts.
- Remove the chicken to a serving platter and garnish each breast with the chopped tomato and minced parsley.

- Cut the crabs in small pieces and use the lime juice for washing them. Use the ginger, minced chive, garlic, thyme to season the crabs. Pour the oil into a preheated pot.
- Make a paste by mixing the curry, salt and the pepper and add it to the hot oil. Next add the crab meat along with the coconut milk when the mixture thickens.
- Next allow the curry crabs to simmer for about 25 minute covered. When the curry crabs are done serve them with cassava dumplings.

- Bring a large pot of water to a boil.
- Drop in the crabs and cook until they stop moving, about 3-4 minutes.
- Remove the crabs from the pot and cool.
- When they are cool enough to handle, pull of and discard the top shell.
- Scrape the insides clean with a small spoon.
- Remove the spongy lungs on both sides of the body.
- With a heavy knife, cut the crabs in quarters and crack the claws; set aside.
- Heat a small frying pan over medium heat.
- Toast the coriander seeds and peppercorns, stirring constantly, for 1 minute, then grind finely in a spice mill or coffee grinder.
- Place in a bowl and add the paprika, cayenne and turmeric; set aside.
- Heat the oil over medium heat in a frying pan or pot that will be able to accommodate the crab pieces.
- Fry the black mustard seeds until they pop.
- Add the onions and garlic and cook until lightly browned.
- Stir in the spice mixture and the water.
- Bring to a boil, and then simmer until the mixture is reduced by half.
- Add the coconut milk and bring to boil.
- Season with salt and add the crab.
- Cook for 5 minutes, turning the pieces over to ensure even cooking.
- Remove from the heat and serve.

KERALA BOATMAN'S CRAB CURRY
Steps:
- Pick over crab meat to remove any bits of shell and cartilage. Chop onion and mince garlic. Peel gingerroot and mince. Wearing protective gloves, break chiles into 1-inch pieces and reserve, along with any seeds.
- In a 4- to 5-quart kettle heat oil over moderately high heat until hot but not smoking and cook mustard seeds until they begin to pop. Stir in onion, garlic, gingerroot, reserved chiles with seeds, and peppercorns and cook, stirring, until chiles are just browned, 3 to 4 minutes. Stir in other spices until combined well. Add crab and cook mixture, gently stirring occasionally (avoid breaking up crab), about 4 minutes.
- While crab mixture is cooking, chop cilantro. Stir cilantro into crab mixture with coconut milk and salt and simmer until slightly thickened, 6 to 8 minutes.
- Spoon curry over rice and garnish with scallion greens.

- Rub the crabs with 1 teaspoon of the turmeric and 1/2 teaspoon salt; let them marinate for 1 hour. Combine the mustard seed and hot water in a small bowl and let stand for 10 minutes. Use a mortar and pestle to grind the seeds into a coarse paste.
- Heat the oil in a wok or kadhai over medium heat. Add the crabs and stir fry until they change color, about 4 minutes. Remove the crabs from the oil and set aside.
- Add the sliced onions to the wok and cook and stir over medium heat until the onions are translucent, about 5 minutes. Raise the heat to high, add the potatoes, and cook, stirring constantly, for about 2 minutes. Add the cloves, cinnamon stick, cardamom pods, and peppercorns, and stir for thirty seconds.
- Stir in the tomatoes, ginger paste, and garlic paste. Halve three of the chiles and add them to the wok. Cook and stir for an additional minute or two over high heat. Reduce the heat to medium; add the remaining 1 teaspoon turmeric, the cayenne pepper, and the mustard paste and stir to combine. Add the crabs to the wok and pour in just enough water to cover the vegetables. Bring the water to a boil and stir in the sugar and salt to taste.
- Cover the wok, reduce the heat, and simmer until the potatoes are tender and the water is reduced by half, about 10 minutes. Remove the lid, stir, and simmer until the gravy is thickened, about 5 minutes more.
- Squeeze the lemon wedge over the finished dish. Garnish with chopped cilantro and sliced green chile and serve hot, with rice.

- Roast onion a bit on a grill just until the outside is tender.
- Chop finely.
- Roast spices dry on a hot frying pan, no oil, for about one minute.
- Remove spices from a pan.
- In a bowl, put 1/2 cup of water and add the roasted spices to it and make a paste.
- Heat a Dutch oven (add 2 tbsp oil).
- Add roasted onion and fry till golden-brown.
- Add spice paste and cook on medium heat for 2 minutes.
- Add tomatoes.
- Let spices cook for 5 minutes or so.
- You may need to add a quarter to a half cup of water.
- Don't let it dry out.
- Add crab (s).
- You may have to add some water to it but I'd suggest letting the crab cook for at least 15 min of the cooking time before you do, because it gives out it's own juices.
- Cover and cook for half an hour.
CURRY CRAB DIP

- Mix all of the ingredients with the exception of the crab in a double boiler until smooth. Add crab meat and mix well. Do not let the crab meat boil.

- 1. Preparation, get everything ready first. 1. Crabs: Remove the tail flaps and cut each crab in half, from head to tail area. 2. Onion: halve then chopped. 3. Spring Onion and Thai Celery including the tops: chopped into 1 to 2 inch pieces. 4. As an alternate to coarsely ground black pepper, use whole peppercorns and crush them in a mortar. 5. Eggs, lightly beaten. Once everything is prepped, we are ready to begin.
- 2. Here is the curry sauce packet used.
- 3. With Thai families, there is usually more than one person helping in the kitchen, often times the prep work is done by the whole family and the best cook prepares the dish or directs others to prepare it, basically teaching in action.
- 4. Heat a splash of oil in your large wok or large pan on medium high heat. When hot, add the garlic, and since this is called a stir fry, so start stirring.
- 5. When the when garlic is browned up a bit, add the crab, keep stirring.
- 6. Sprinkle in about half of the black pepper, and you guessed it, keep stirring.
- 7. And stirring.
- 8. After a few minutes you will start seeing the shell turn red.
- 9. Add the onion.
- 10. And stir until the onion is softened up a bit, just a few minutes.
- 11. Add the remaining black pepper and stir that in.
- 12. Pour in the beaten eggs.
- 13. Stir for 30 seconds or so to distribute some of the egg.
- 14. Add the packet of curry sauce.
- 15. Stir some more.
- 16. Coming together beautifully. Liquid is water from the crabs as well as the sauce thinned out with that water.
- 17. Add the spring onion and Thai celery. A note about the celery, if you cannot find Thai or Chinese celery, use regular celery but cut 1 stalk into 3-4 ling pieces then dice plus chop up about 2-3 tops.
- 18. Stir again, almost done.
- 19. And there you go, Stir Fried Crab Curry. From heating the wok to this, maybe 10 minutes. This is the reason to have everything prepped and ready to go.
- 20. Pour everything onto a platter, ready to be served.
CRAB CURRY
This Cantonese curry is very mild, colorful, fun and finger-lickin' good. Oh, and messy. Great opportunity to use those antique finger bowls (damp cloths in a basket will also do). If you want spicey-hot, tweek accordingly. For more guests simply multiply the recipe by the number of crab you plan to serve. It's limited only by the capacity of your wok. I like to serve it in a large bowl in the center of the table with a loaf of wonderful bread to sop up the sauce.

- For the Masala Paste:
- Heat the oil in a non stick pan. Once heated, add the chopped onion into the pan and cook until translucent.
- Add the grated coconut into the pan. Roast for about 1-2 minutes until well-toasted.
- Add the coriander seeds, white sesame seeds and cumin seeds. Roast them for 1 - 2 minutes more until aromatic. Now, empty this mixture into a bowl and let cook.
- Once cool, transfer the contents into a blender. Add the chilli powder, turmeric powder, ginger, garlic, garam masala powder, tomatoes and the chopped coriander with some salt.
- Grind it into a smooth paste. Set aside.
- For the Crab Curry:
- Heat oil in a nonstick wok. Once heated, add the cumin seeds, bay leaves and the curry leaves and let the leaves splutter.
- Then, add the chopped onion and cook until translucent. To this, add the green chillies and masala paste. Cook and stir for 2-3 minutes.
- Add water to the mixture. Once the mixture is bubbling, gently add crab meat and combine.
- Add salt to taste and, if using pureed crab legs in the mixture, add this at this time.
- To the mixture, add lemon juice and cook covered on a medium flame for about 10-15 minutes, stirring occasionally. Once crabs turn orange in colour, they're cooked.
- Top with coriander leaves and serve hot with fresh rotis or jasmine rice.
