Diana Leskauskas of Chatham, New Jersey bakes a big pan of this golden corn bread for her growing family. East moist square is chock-full of sweet kernels. Since the recipe makes a lot, it's handy for large gatherings...or use the leftovers in the two recipes that follow.

Number Of Ingredients 11

2 cups cornmeal
2/3 cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1-1/2 teaspoons salt
1 teaspoon baking soda
4 eggs, lightly beaten
2 cups 2% milk
1 cup canola oil
2 cans (15-1/4 ounces each) whole kernel corn, drained
1 small onion, finely chopped

Steps:

  • In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt and baking soda. In a small bowl, whisk the eggs, milk and oil. Stir into dry ingredients just until moistened. Fold in corn and onion. , Pour into a greased 13x9-in. baking dish. Bake at 400° for 25-30 minutes or until toothpick inserted in the center comes out clean. Serve warm.

3 tablespoons chia seeds
1 ½ cups warm water
½ cup sucanat
¼ cup agave nectar
1 ½ cups cornmeal
1 cup spelt flour
2 teaspoons baking powder
1 teaspoon salt
1 ½ cups frozen corn kernels

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a loaf pan.
  • Soak chia seeds in warm water in a bowl for 5 minutes; drain.
  • Blend chia seeds in a blender until smooth; add sucanat and agave nectar. Blend the mixture again until smooth.
  • Sift cornmeal, spelt flour, baking powder, and salt into a large mixing bowl. Add frozen corn kernels and chia seed mixture to the cornmeal mixture; stir and pour into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This is a savory southern-style corn bread made without wheat flour. It's crusty and brown outside, light and moist inside. Can be made gluten-free by using GF certified corn meal, baking powder, bacon, etc. If using dried buttermilk powder, measure powder into dry ingredients, and use half milk and half water for liquid.

2 -4 tablespoons bacon fat or 2 -4 tablespoons shortening
2 cups regular yellow cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 tablespoon honey
1 egg
1 1/2 cups buttermilk
3 slices cooked bacon, chopped

Steps:

  • Preheat oven to 385 degrees F.
  • Measure fat into a 10" cast iron skillet, and place in oven.
  • Whisk together dry ingredients in large bowl.
  • Add buttermilk, egg, and honey. Add bacon, if using.
  • Whisk well until thoroughly combined.
  • Pour half of hot fat from skillet into batter, stir well. Pour batter into hot skillet, top with freshly ground black pepper.
  • Bake for 20 to 30 minutes, until golden and crusty, and the center is firm and bounces back when pressed.

One 8-ounce can cream-style corn
2 eggs
1 cup sour cream
1 cup grated sharp Cheddar cheese
1/2 teaspoon cayenne pepper (optional)

Steps:

  • Preheat oven to 375 degrees. Mix all ingredients together. Pour into a heated cast-iron skillet that has been well greased with oil. Bake until golden brown, approximately 30 minutes.
