ICY COLD SUMMER FRUIT SOUP



Icy Cold Summer Fruit Soup image

With heat from fresh ginger and a chili. Summer freshness at its best! Organic is the way to go. Be sure to wash and drain well.

1 cup blueberries
1 mango, diced
1 peach, diced
1 cup cantaloupe, diced
4 cups watermelon, divided
1 lime, juice of
1 lemon, juice of
1 tablespoon mint leaf
1 teaspoon fresh ginger
1 tiny fresh chili pepper, to taste (red pepper flakes will work)

Steps:

  • Place half the watermelon in a blender with lime, lemon, mint, and chili blend till smooth.
  • Mix fruit in a large bowl top with juice mixture.
  • Chill till very very cold.
  • Garnish with mint!

QUEEN'S BREAD PUDDING WITH COLD FRUIT "SOUP"



Queen's Bread Pudding with Cold Fruit

1 tablespoon butter
4 cups leftover Danish or donuts, cut into 1/2-inch cubes
3 cups milk
1/2 cup dried apricots, chopped
1/2 cup chopped dried cranberries, craisins and/or sultanas (small seedless raisins)
1/4 cup amaretto, whiskey, or warm water
3 eggs
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup fresh strawberries, cleaned
1/2 cup fresh raspberries
1/2 cup fresh blackberries or boysenberries
1 banana, peeled
1 peach, peeled, pit removed, and sliced
1 lemon, juiced
1 pint vanilla frozen yogurt or vanilla ice cream, softened
6 sprigs fresh mint, for garnish

Steps:

  • Grease a 2-quart baking dish with butter. Spread the cubed baked goods evenly in the prepared baking dish. Heat the milk in a small saucepan until it is scalding. In a separate small saucepan, heat the apricots and cranberries with the liqueur (or water) and let simmer for about 5 minutes, or until the dried fruits begin to soften. In a small bowl, whisk together eggs, sugar, vanilla, salt, cinnamon, and nutmeg. Add the hot milk, a small amount at a time, to the egg mixture and whisk together (known as a liaison) to temper the mixture by combining gently and gradually without cooking the eggs. Spread the apricots and raisins evenly over the bread in the baking dish, the pour the liaison into the baking dish, distributing evenly.
  • Preheat oven to 350 degrees F.
  • Let the baking dish stand for about 20 minutes to allow the liquid to absorb into the cubed baked goods.
  • Prepare a bain marie by placing the baking dish into a larger pan or dish, placing the arrangement into the preheated oven, and then pouring hot water into the outer dish (without splashing any into the custard dish). Bake until the pudding firms up and puffs up and a toothpick inserted in the center comes out clean, about 1 hour. Remove from oven and from water bath and let rest 10 minutes. Serve warm or cooled.
  • While the bread pudding is baking, prepare the cold fruit soup. To a blender add strawberries, raspberries, blackberries, peeled banana, peach and lemon juice. Blend until smooth and strain into a bowl. Return strained fruit to blender and add softened frozen yogurt, blending to combine. Serve as a topping to the Queen's Bread Custard, in demitasse cups as an accompaniment, or by itself as an independent dessert soup.

2 cups water, cold
1/2 cup cinnamon sugar
1 tablespoon fresh lemon juice
1/2 cup fresh soft breadcrumbs
1 1/2 tablespoons lemon rind, grated
1 lb apple, cored, peeled & cubed 3/4-inch
1 lb pear, cored, peeled, & cubed 3/4-inch
1/2 lb cherries, pitted
1/2 lb plum, pitted
1/2 lb peach, peeled, pitted, & cubed 3/4-inch
1/4 cup raspberry jam or 1/4 cup raspberry preserves
3/4 cup sweet white wine
1 cup cranberry juice

Steps:

  • Put the water, cinnamon, lemon juice, bread crumbs, and the lemon rind in large pot.
  • Bring to a boil, then add the fruits, reduce heat, and simmer for 25 minutes.
  • Puree this mixture in a blender then add the jam, wine, & cranberry juice.
  • Mix well then refrigerate.
  • Serve when well chilled.

4 cups cubed seeded watermelon
2 cups cubed honeydew
2 cups fresh blueberries, divided
1 ½ teaspoons minced fresh ginger root
½ teaspoon ground nutmeg

Steps:

  • Blend the watermelon, honeydew, and about half the blueberries in a blender until smooth. Add the ginger and nutmeg; blend again until incorporated. Pour the soup into a bowl and stir the reserved blueberries to serve.

1 qt water
2 oz sugar
1 c sweet cherries
1 c peaches
6 oz maraschino cherries
11 oz canned mandarin oranges
3 oz golden raisins
3 lemon juice, fresh
1 c orange juice, frozen concentrate
1 1/4 oz cornstarch

Steps:

  • 1. 1. Bring water to a boil and stir in sugar until dissolved add orange juice to a boil. 2. Add pitted cherries, peaches, maraschino cherries,mandarin oranges with syrup, raisins and lemon juice. 3. Return to boil, reduce heat and barely simmer while completing remaining procedure. 5. Blend cornstarch and cold water, beating lightly until dissolved. 6. Combine with first mixture and blend well, being careful not to mash or break fruit. 7. Bring just to a boil until thicken and remove from fire. 8. Pour into a clean container, and when partially cooled, refrigerate. Serve in chilled bouillon cups.
