Number Of Ingredients 11

1 can(s) 12 1/2 oz. chunky white meat chicken breast, drained
5 medium gherkin pickles, chopped
1/2 medium onion, grated
1/4 c dijon mustard
1 c mayonnaise, or less if desired
4 large eggs, room temperature, (boiled & chopped)
1/2 tsp coarse grated black pepper
1 medium lemon, quartered
lettuce leaves (optional)
1 Tbsp chopped green onion tops, optional
assorted crackers or bread of your choice

Steps:

  • 1. Boil eggs then remove from heat. Let cool, then peel and chop and add to a medium size bowl. Note: I find that if eggs are allowed to come to room temperature before you boil them they are much easier to peel.
  • 2. Chop gherkin pickles and add to same bowl. Grate onion half into bowl as well. More if you prefer. Add DiJon mustard. Note: Grating onion instead of chopping allows you to have the flavor of onions without the big chunky pieces.
  • 3. Add mayonnaise.
  • 4. Drain chicken, and add to bowl.
  • 5. Mix all the ingredients together.Line platter with lettuce leaves, and lemon wedges.
  • 6. Add chicken salad & top with chopped green onions if desired. Add assorted crackers. I like to add fresh squeezed lemon juice on mine.
  • 7. Add your favorite garnish items, sliced Flat Pickles, Red Onions, Fresh Tomato Slices & Lettuce leaves.
  • 8. Serve on your favorite toasted sliced buns with tomato slices, flat pickles, & sliced red onions.

4 cups of cooked chicken
1 cup Celery, minced
½ cup Mayonnaise
¼ cup Sweet Pickle Relish
1 teaspoon Mustard
1 Boiled Egg, chopped fine.
½ cup Onion, minced
¼ teaspoon Salt
¼ teaspoon Black Pepper
1 teaspoon Sugar, optional

Steps:

  • Chop chicken as desired and place in a medium size mixing bowl.
  • Wash celery stalks under cool water, chop very fine.
  • Add chopped celery to mixing bowl.
  • Add the chopped onions.
  • Add sweet pickle relish.
  • Add mayonnaise.
  • Add a little sugar if desired.
  • Add salt.
  • Add black pepper.
  • Add Mustard.
  • Add the chopped boiled egg.
  • Stir mixture well, cover and refrigerate for at least one hour prior to serving.
  • Serve cool and enjoy!

I made up this recipe after a similar sandwich served at a diner. It's not the same, but just as good.

2 stalks celery, chopped
3 tablespoons mayonnaise
½ onion, finely diced
2 dill pickles, chopped
¼ teaspoon garlic powder

  • Combine the chicken, celery, mayonnaise, onion and pickle; mix well.
  • Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

Whenever in NYC, I always try to cross the bridge to Brooklyn and eat at Junior's on the corner of Flatbush and Dekalb. I was fortunate to come across this recipe for their chicken salad. It's great for making sandwiches on thick slices of white or Challah bread, or simply serve as a salad on curly lettuce leaves. P.S. You haven't lived until you've tried Junior's cheesecake, the best in the world.

celery leaves (optional)
1 teaspoon salt
1/8 teaspoon white pepper
2 lbs boneless skinless chicken breasts (about 2 large whole breasts or 4 large halves)
1 tablespoon fresh lemon juice
1 cup celery, diced
1 tablespoon snipped fresh dill
3/4 cup mayonnaise (use Hellman's Real Mayonnaise and NOT the light variety)
1/3 cup sour cream
1 tablespoon Dijon mustard
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon garlic powder

Steps:

  • To cook the chicken: Fill a large saucepan half full with water. Add a few celery leaves, if you wish, plus the salt and white pepper, and bring to a boil over high heat. Slide in the chicken breasts, reduce the heat to medium-low, and simmer until the chicken turns opaque and the juices are no longer pink, about 8 minutes. Transfer the chicken to a colander with a slotted spoon, and rinse with cold water. Pat the chicken dry with paper towels and cut into 3/4-inch chunks (please don't shred the chicken).
  • Place the chicken chunks into a medium-sized bowl and sprinkle with the lemon juice and toss well. Add the diced celery and dill and toss again.
  • Mix all the ingredients for the dressing in a small bowl. Spoon the dressing over the chicken mixture and stir until all of the chicken and celery are coated.

I got this a long time ago from the Publix Mayonnaise label. I think it is the same one they used to have in the deli there. This is great to take for potlucks, new moms, or grieving familes. I often double it. This is more of a salad to eat on a bed of greens and not so much to put onto a sandwich although I have put it into a pita before. Preparation time does not include cooking the chicken or carrots. Cooking time is the chilling time.

3/4 teaspoon salt
3/4 teaspoon dried basil
1/2 teaspoon dried dill
1/8 teaspoon lemon juice
1/8 teaspoon white pepper
1/8 teaspoon minced garlic clove
1 tablespoon dried parsley
1 cup mayonnaise
1 cup celery, finely chopped
1/2 cup carrot, steamed and chopped
1/4 cup onion, chopped
2 lbs boneless skinless chicken breasts

Steps:

  • Cook chicken however desired (I often poach in my steamer or bake). Cool and cut into large (about 1") cubes. Set aside.
  • In a large bowl, combine salt, basil, dill, lemon juice, white pepper, garlic and parsley with mayonnaise. Mix throughly.
  • Stir celery, carrots, onion and chicken into mayonnaise mixture. Mix well.
  • Cover and chill overnight or at least several hours before serving.

Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out! :)

1 1/2-2 cups chicken breasts, cooked and cubed into 3/4 inch pieces (see note)
1/8 cup onion, chopped small
1/8 cup celery, chopped small,optional
1 tablespoon sweet pickle relish
3 -4 tablespoons mayonnaise (I use Hellmann's Light)
paprika
salt and pepper, to taste

Steps:

  • In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
  • Add chicken and fold into mayo mixture until well combined.
  • Taste and then add salt and pepper as needed.
  • Chill well and serve over lettuce or on your favorite bread.
  • Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.
  • If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.
