CHICKEN AND BACON SHISH KABOBS
Tangy marinated chicken and mushrooms, wrapped in bacon and skewered. Excellent for entertaining and trying something new! These are a must-try! (They can also be broiled instead of grilled, if you're low on time.)

Steps:
- In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
- Preheat grill for high heat.
- Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
- Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
- Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

SHISH TAWOOK (MEDITERRANEAN CHICKEN KABOBS)
Grilled, marinated, Mediterranean-style chicken. This recipe was inspired by the Lebanese restaurant for which I used to work. Its flavor is so unique and outside the box and will have everyone trying to guess the ingredients because its flavor is so mouth watering! Goes great with a plain or bland rice pilaf. Also fatoosh or tabbouleh salad goes well with it as a side. You'll need metal skewers or a grilling basket (I prefer the basket).

Steps:
- Season chicken breasts with salt. Cut each breast into 3 to 4 pieces. Place in a large bowl; stir in garlic. Add olive oil, apple cider vinegar, red wine vinegar, white balsamic vinegar, lemon juice, red pepper flakes, allspice, sumac, and pomegranate syrup. Mix well with your hands.
- Cover chicken mixture with plastic wrap, pressing against the surface to remove any air. Refrigerate for at least 4 hours and up to overnight.
- Preheat an outdoor grill and 2 grill baskets with the cover closed for 10 minutes. Divide chicken evenly between the grill baskets. Grill until golden brown, 10 to 15 minutes per side.

EASY TASTY MARINADE FOR BEEF, PORK AND CHICKEN SHISH KABOBS

- 1 Mix all ingredients in a container, whisk or shake. 2 Place meat in a heavy duty plastic bag and add marinade. 3 Seal tightly and refrigerate 8 hours or overnite. Prepare in the morning and its ready for the grill at dinner time.

- Soak bamboo skewers, if using, for about an hour (soak extra and freeze any unused ones for later).
- Stir together ingredients and allow chicken to marinate in it for at least an hour, preferably more.
- Skewer chicken.
- Cook skewers on the grill or under the broiler until cooked through (time will vary with size of chunks).
- To make toum sauce, grind the garlic with the salt in a mortar until it is pasty.
- Mix in the lemon and mayonnaise, and very slowly add oil, whisking as you go.
- Add salt and pepper to taste.
- Serve sauce with kabobs.
