0.333 cup thinly sliced green onions
2 tablespoon honey
1 tablespoon reduced-sodium soy sauce
1 tablespoon grated fresh ginger
2 teaspoon Asian garlic-chili sauce
2 6 ounce refrigerated grilled chicken breast strips
12 ounce dried udon noodles or whole-wheat spaghetti
3 tablespoon toasted sesame oil
2 medium yellow, red and/or orange sweet peppers, cut in bite-size strips
Fresh cilantro

Steps:

  • In medium bowl stir together vinegar, green onions, honey, soy sauce, ginger, and garlic-chili sauce. Add chicken; stir to coat. Set aside to allow flavors to meld.
  • Meanwhile, in large saucepan cook noodles in boiling water about 8 minutes until just tender. Drain noodles well and return to saucepan. Drizzle with oil and toss to coat. Add chicken mixture and toss to combine.
  • Transfer to bowls. Top each with pepper strips and cilantro. Makes 6 servings.

This 30-Minute Sesame Chicken Noodle Stir-Fry recipe is quick and easy to make, easy to customize with whatever fresh veggies or greens you have on hand, and it's tossed with the most delicious sesame-soy vinaigrette!

7 ounces rice noodles
3 tablespoons peanut oil (or olive oil), divided
2 boneless skinless chicken breasts, thinly-sliced
salt and pepper
2 cups broccoli florets, chopped into bite-sized pieces (about 1 small head of broccoli)
2/3 cup shredded carrots
1 red bell pepper, cored and thinly-sliced
8 ounces baby bella* mushrooms, thinly sliced
1 cup roughly-chopped collard greens**, tough stems removed
1 batch stir-fry sauce (see below)
toppings: thinly-sliced green onions, toasted sesame seeds
1/4 cup low-sodium soy sauce
2 tablespoons rice wine vinegar
2 tablespoons oyster sauce
2 teaspoons toasted sesame oil
1/2 teaspoon ground ginger
optional: 1-3 teaspoons chili garlic sauce, to taste

Steps:

  • Cook noodles according to package instructions. Drain and set aside.
  • In a large saute pan, heat 1 tablespoon oil over medium-high heat. Add chicken and season evenly with a generous pinch of salt and pepper. Cook the chicken, stirring and flipping occasionally, for until it is just cooked through and no longer pink on the inside (about 3-5 minutes). Transfer chicken with a slotted spoon to a separate plate, and set aside.
  • Add the remaining 2 tablespoons oil to the saute pan, and increase heat to high. Add broccoli, carrots, bell pepper and mushrooms, and saute for 5 minutes, or until they reach your desired level of softness.
  • Add in the collard greens, sauce, cooked chicken, noodles, and immediately toss to combine. Continue cooking for 2 minutes, stirring frequently, until the greens have wilted a bit.
  • Remove from heat and serve immediately, garnished with your desired toppings.
  • Whisk all ingredients together until combined. Then whisk in as much chili garlic sauce as you'd like.

7 snow peas

¼ cup brown sugar
1 tablespoon cornstarch

½ medium orange, juiced
2 teaspoons sesame oil
2 teaspoons stevia powder
½ teaspoon garlic powder

1 tablespoon vegetable oil
2 (8 ounce) skinless, boneless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 cup broccoli florets
½ cup canned bamboo shoots, drained
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
½ cup chopped orange bell pepper
½ cup thinly sliced green onion
1 tablespoon black sesame seeds
1 cup cooked long-grain white rice

Steps:

  • Combine soy sauce, orange juice, sesame oil, stevia powder, garlic powder, and ginger for teriyaki dressing in a small saucepan. Bring to a boil over medium-high heat, stirring constantly; continue cooking until the mixture thickens slightly. Remove and set aside.
  • Heat a large skillet over medium-high heat. Add vegetable oil and heat until shimmering, 1 to 2 minutes. Add chicken and garlic; stir-fry for 2 to 3 minutes. Add broccoli and continue to stir-fry, 4 to 6 minutes. Add bamboo shoots and bell peppers; cook for an additional 4 to 6 minutes.
  • Carefully pour the teriyaki dressing into the skillet (watch for splattering); cook until chicken is no longer pink in the center and juices run clear, and the vegetables are tender, about 5 minutes more.
  • Remove from heat and stir in green onion and sesame seeds, reserving some of each for garnish. Serve immediately over cooked white and wild rice with the reserved green onions and sesame seeds.

1 tablespoon low sodium soy sauce
1 tablespoon low-sugar low-sodium ketchup

3 1/2 ounces boneless skinless chicken breasts (cut into strips)
2 spring onions (finely sliced)
2 ounces baby corn (halved lengthways)
1 carrot (cut into thin strips)
1/2 red pepper (deseeded and chopped)
1 christophene (deseeded and diced. You can substitute 1/2 courgette)
1 3/4 ounces chow mein noodles
2 teaspoons sesame seeds

Steps:

  • Mix vinegar, soy sauce, tomato ketchup, orange juice and honey together. Add the cornflour and stir until well combined.
  • Heat the oil in a non-stick frying pan and stir fry the chicken strips for 3-4 minutes. (If you don't use a non stick pan the chicken will stick to the pan).
  • Add the vegetables and stir fry for 4-5 minutes.
  • Add the cornflour mixture and bring to a boil.(Another tip-Don't use an overly large pan like I did or you will find the cornflour mix spreads too thin and there won't be enough liquid cook the vegetables.).
  • Meanwhile prepare the noodles according to the packet instructions, drain and add to the pan along with the sesame seeds. Mix well.

8 ounces udon noodles or linguine
2 boneless, skinless chicken breast halves (6 to 8 ounces each), cut crosswise into thin strips
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 small red onion, halved and thinly sliced
2 garlic cloves, thinly sliced
1/2 napa cabbage (about 1 pound), thinly shredded
2 cups frozen shelled edamame
2 tablespoons rice vinegar
2 tablespoons soy sauce

Steps:

  • In a large pot of boiling salted water, cook noodles until al dente, according to package instructions. Drain, and rinse under cold water; drain again, and set aside.
  • While pasta is cooking, in a medium bowl, toss chicken with cornstarch; season with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Cook chicken in two batches, until light brown on the outside and opaque throughout, 2 to 4 minutes. Transfer to a plate (reserve skillet).
  • Add remaining tablespoon oil to skillet; add onion and garlic. Cook, stirring frequently, until softened, 1 to 3 minutes. Add cabbage, and cook, stirring frequently, until tender, 2 to 4 minutes.
  • Add edamame, vinegar, soy sauce, chicken, and noodles; season with salt and pepper. Cook, tossing, until noodles and edamame are warmed through, 3 to 5 minutes.
