This Waldorf Chicken Salad is full of fresh grapes, apples, pecans, and celery, for a goodie-filled healthy lunch!

1/2 cup mayonnaise
1 tbsp freshly squeezed lemon juice
1 tsp dijon mustard
1/2 tsp kosher salt
1/4 tsp black pepper
3 cooked chicken breasts ((1.5lbs if cooking from raw)*)
1.5 cups red grapes (halved)
1.5 cups chopped apple ((Fuji, Pink Lady, and other firm, sweet apples recommended))
1 cup chopped celery
3/4 cup chopped, toasted pecans

Steps:

  • In a large bowl, whisk to combine the mayonnaise, lemon juice, dijon mustard, salt, and pepper.
  • Chop the chicken breasts into small, bite-sized cubes, and add it to the dressing.
  • Add the grapes, apples, celery, and pecans, and toss well to combine.
  • Taste the chicken salad and make any seasoning adjustments according to your tastes. Sometimes I add a bit more black pepper or another squeeze of lemon juice.
  • Ideally, let the chicken salad chill in the fridge for at least one hour before serving, but the chicken salad is now ready to enjoy!

I had chicken breasts left over from a BBQ I had and decided to make a chicken salad. I couldn't find a recipe that I liked so I played around and came up with this. It is delicious!

4 cooked chicken breasts, shredded
2 Granny Smith apples, cut into small chunks
2 cups chopped walnuts, or to taste
½ red onion, chopped
3 stalks celery, chopped
3 tablespoons lemon juice
½ cup vanilla yogurt
5 tablespoons creamy salad dressing (such as Miracle Whip®)
5 tablespoons mayonnaise
25 seedless red grapes, halved

Steps:

  • Toss shredded chicken, apple chunks, walnuts, red onion, celery, and lemon juice together in a large bowl.
  • Whisk vanilla yogurt, salad dressing, and mayonnaise together in a separate bowl; pour over the chicken mixture and stir to coat. Gently fold the grapes into the salad.

Use a rotisserie chicken from the grocery, or make your own roasted chicken, for this recipe. The fruit brings a slightly sweet taste, and the celery and pecans give great texture. This chicken salad is right at home on a croissant for lunch, or on a bed of lettuce with a side of cantaloupe for brunch.

2 cups chopped cold rotisserie or roasted chicken
½ cup chopped celery
1 Fuji apple - washed, cored, and chopped
1 cup red grapes, halved
½ cup chopped pecans
½ cup mayonnaise
3 tablespoons Thousand Island dressing
1 tablespoon minced red onion, or to taste
½ teaspoon ground ginger
¼ teaspoon curry powder
¼ teaspoon dry mustard
salt and ground black pepper to taste

Steps:

  • Combine chicken, celery, apple, grapes, and pecans in a large bowl.
  • Combine mayonnaise, Thousand Island Dressing, onion, ginger, curry powder, and dry mustard in a small bowl. Whisk together and pour dressing over salad ingredients. Mix to combine. Season with salt and pepper.

1/4 cup low-fat plain yogurt
1/4 cup low-fat buttermilk
1 tablespoon mayonnaise
2 tablespoons cider vinegar
1 teaspoon curry powder
1 clove garlic, chopped
1/2 teaspoon kosher salt
Freshly ground black pepper
2 cups grilled chicken, roughly chopped
1/2 Granny Smith apple, skin on, cored and chopped into large cubes
3/4 cup red grapes, halved
1 cup loosely packed watercress or flat-leaf parsley, chopped
4 large leaves romaine lettuce
1/4 cup raw almonds, chopped

Steps:

  • Combine the yogurt, buttermilk, mayonnaise, vinegar, curry powder, garlic, salt and some pepper in a medium bowl and whisk to incorporate. Combine the chicken, apple, grapes and watercress in a large salad bowl. Pour the dressing over and toss to thoroughly coat. Taste and adjust the salt, pepper and curry powder as desired. Arrange a lettuce leaf on each of 4 salad plates. Divide the salad evenly among the plates and top with chopped almonds.

1 cup salted cashews
1 small Gala apple, finely diced
1/4 cup finely chopped red onion

Juice of 1 lime (1 to 2 tablespoons)
1 teaspoon chopped fresh dill
Salt and pepper to taste

I put together several recipes that I have seen and it really turned out great. Don't skip the grapes they are imporant to the taste. Time does not include cooking chicken.

1 lb boneless cooked chicken, cut in small bite size pieces
1 large tart apple, peeled cored & chopped small
10 -15 seedless grapes, cut in half
1/4 green bell peppers or 1/4 red bell pepper, cut in 1/4 inch cubes
1/2 stalk celery, cut in half lenthwise and sliced
1/4 cup of chopped pecans or 1/4 cup walnuts
1 tablespoon lemon juice
2 tablespoons of finely chopped white onions
2 teaspoons fine grated fresh ginger
1 cup Cool Whip, thawed,more if needed

Steps:

  • I cooked two boneless chicken breasts in a covered fry pan with about a 1/4 inch of white wine, salt, pepper and a chicken seasoning.
  • When done I cut them up in small pieces.
  • You could use leftover Chicken or cook it anyway you like.
  • Even canned chunk chicken might work.
  • Just cut everything up and mix it all together.
  • Just before serving add the Cool Whip and mix.
  • It should look like mayonnaise.
  • I used a Granny Smith Apple and Red Seedless Grapes, but any type would do.
