A rich unique cookie that has the cream cheese and cherries baked right in. This recipe produces a soft and delicate cookie. You may top them with a Cherry half Before baking or you can drizzle a glaze over them or eat them just as they are!

1 (3 ounce) package cream cheese, softened
1 cup butter, softened
1/2 cup maraschino cherry, chopped and drained well
1 large egg
1 1/2 teaspoons almond extract
1 cup sugar
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat Oven to 375'.
  • In a large bowl, cream together butter and cream cheese until fluffy.
  • Stir in Remaining Ingredients. (dough will be a bit stiff).
  • Drop by rounded tablespoonsful about 1 inch apart onto ungreased cookie sheet.
  • Bake about 8-10 minutes. Watch them closely and don't let them get too brown.
  • Remove to wire rack to cool.
  • Yield is approximate.

1 box cherry chip cake mix
1/2 cup butter
1 8 oz cream cheese softened
1 egg yolk
1/4 tsp vanilla

Steps:

  • Cream butter, cream cheese, yolk and vanilla. Add cake mix 1/2 package at a time. Chill 30 Minutes. Drop cookie dough on sheets. Bake at 350 degrees for 12-15 minutes.

1 cup flour
4 ounces cream cheese, cut into cubes
1/2 cup unsalted butter, cut into cubes
1/2 cup apricot jam
1 cup sweetened flaked coconut
1 cup dried cherries

Steps:

  • In a food processor or electric mixer, combine the flour, cream cheese, and butter.
  • With your hands, gather the dough into a ball, flatten it, and wrap in plastic wrap.
  • Refrigerate for at least 1 hour or up to 24 hours.
  • Preheat oven to 375-degrees F. Butter a baking sheet.
  • Divide the dough into 2 equal pieces.
  • Roll each piece out on a floured surface to a 12x8-inch rectangle.
  • Spread each with 1/4 cup of the jam.
  • Top each with 1/2 cup coconut and 1/2 cup cherries.
  • Starting at the longer end, roll each up jelly-roll style. Seal the seam with your fingers.
  • Cut each roll into 12 slices.
  • Place cookies on prepared sheet.
  • Slightly flatten each cookie so they are of even thickness.
  • Bake 25 minutes or until golden brown. Cool on a wire rack.

This came out a cooking with kids cookbook. This recipe is quick and easy. Nice finger food for kids as well as company.

1 (8 ounce) package of softened cream cheese (reduced fat is o.k.)
1/4 cup cherry preserves
1/4 cup of sifted powdered sugar
1/4 teaspoon vanilla extract
40 vanilla wafer cookies

Steps:

  • In a medium bowl, smash cream cheese up with a fork.
  • Combine all the ingredients (except the vanilla wafers) with the cream cheese.
  • Mix well.
  • Let chill in the refridgerator for at least 30 minutes.
  • Top the flat side of 1 wafer with 2 tsp of cream cheese mixture.
  • Then top with another wafer to form a sandwich.
  • Sprinkle powdered sugar on top.
  • Serve immediately.
  • Enjoy!
