Slow Cooker Beef Stew image

Very easy to make ahead and cook overnight or make in the a.m. for supper that night. My entire family loves it. It's great to take to a potluck soup supper, too.

1 1/2 lb beef chuck roast, cut into 1 inch cubes) or can use stew meat
1 1/2 lb potatoes cut into bite sized pieces
6 medium carrots, cut into bite sized pieces
3 stalks celery, cut into bite sized pieces
1 onion, cut into bite sized pieces
3 Tbsp flour
1 can beef broth
1 can (14 1/2 oz.) diced tomatoes
3 Tbsp canola oil
1 tsp dry mustard
1/2 tsp dried thyme
1 tsp diced garlic
1 tsp browning sauce if desired

Steps:

  • 1. Place meat in zip lock bag with flour. Seal and toss well to coat. Brown in oil. Layer ingredients in crockpot in this order: meat, carrots, potatoes, celery, onion, beef broth, tomatoes, garlic, thyme, mustard. Cook on high for 2-3 hours, then turn on low for about 4-5 hours or until tender. You can stir to mix ingredients after the first couple of hours.
