2, peeled and cubed Sweet Potatoes
1/2 cup, diced Red Onion
1/2 head, cut into small pieces Broccoli
1/2 a bunch, woody stems removed and cut into 1-2 inch pieces Asparagus
2-4 tablespoons Olive Oil
Salt and Pepper to taste

Steps:

  • Preheat oven to 425 degree fahrenheit. Prep all of the ingredients, toss them into a large bowl, add salt and pepper and olive oil and toss.
  • Pour on to a large sheet pan and spread in a single layer . Roast at 425 degrees for 20-30 minutes. Until desired degree of char and crispiness is reached.

2 large sweet potatoes, peeled and diced (about 8 cups)
2 large heads broccoli, chopped (about 8 cups)
2 to 3 Tbsp olive oil
3/4 tsp. smoked paprika
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. cayenne pepper
1/4 tsp. dried oregano
1/4 tsp. dried thyme
1/2 tsp. salt
1/4 tsp. black pepper

Steps:

  • Preheat oven to 425 degrees F and mix together seasonings.
  • In a large bowl, mix together chopped veggies with olive oil and seasoning mixture, tossing well to evenly coat.
  • Transfer veggies onto two non-stick baking sheets or roasting pans and roast in the oven for 30 minutes, tossing vegetables once halfway through. Sweet potatoes should be fork tender and broccoli nice and crisp. Serve immediately and enjoy!

BROCCOLI WITH ONIONS AND SWEET POTATOES



Broccoli with Onions and Sweet Potatoes image

Number Of Ingredients 6

1 pound orange-skinned sweet potato (2 medium, often labeled yams) peeled and cut into 3/4-inch pieces
1 tablespoon plus 2 teaspoons olive oil
1 teaspoon salt
1/4 teaspoon freshly ground pepper, or to taste
1 pound broccoli, stems trimmed and cut into short lengthwise spears
1/2 large white onion, thinly slice

Steps:

  • 1. Half fill a large deep skillet with water and bring to a boil, over medium-high heat. Add the sweet potatoes and cook, uncovered, until tender, about 10 minutes. Drain and put the hot sweet potatoes into a bowl. Add 1 tablespoon of the oil, 1/2 teaspoon of the salt, and 1/8 teaspoon pepper. Toss gently to coat. Cover and keep warm. 2. In the same skillet, again pour water to about half full, and bring to a boil. Add the broccoli and onion. Cook, uncovered, until crisp tender, about 5 minutes. Drain. Add the remaining 2 teaspoons oil, the remaining 1/2 teaspoon salt, and 1/8 teaspoon or more pepper. Turn gently to coat.
