Broccoli Carrot Salad with Honey Dijon Vinaigrette image

1/2 cup walnut pieces
Kosher salt and freshly ground black pepper
1 1/2 pounds broccoli crowns (about 2 small crowns)
1 cup julienned or coarsely grated carrots
2 tablespoons white wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 cup olive oil

Steps:

  • Heat a medium skillet over medium heat. Add the walnut pieces and cook, stirring occasionally, until evenly toasted, 6 to 8 minutes. Remove to a small bowl.
  • Bring a medium pot of salted water to a boil.
  • Cut the broccoli florets into bite-sized pieces and thinly slice the stems. Have a bowl of ice water ready. Cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Add the carrots and cook 30 seconds more. Drain the broccoli and carrots and submerge in the ice water to stop the cooking. Drain well and pat dry.
  • Whisk together the vinegar, honey and Dijon in a medium bowl with 1/2 teaspoon salt and pepper to taste. Gradually add the olive oil while whisking constantly. Add the broccoli, carrots and walnuts and toss to coat.

3 tablespoons sunflower seeds

3 tablespoons apple cider vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble once cool enough to handle.
  • Combine bacon, broccoli, Cheddar cheese, green onions, and sunflower seeds in a large bowl.
  • Stir mayonnaise, sweetener, and apple cider vinegar together in a small bowl. Pour dressing over broccoli mixture and toss until well combined.

Though it's good immediately, by the next day, the flavors meld so nicely, you're likely to swear that this is as special as any full fat broccoli salad. I found this recipe in The Biggest Loser Cookbook. I have not tried this recipe, but I'm posting it for safe keeping.

3 tablespoons orange juice, preferably fresh squeezed
2 tablespoons plain fat-free yogurt
2 teaspoons stone ground mustard
1 teaspoon 100% fruit orange marmalade
1 1/2 cups broccoli florets, coarsely chopped
2 tablespoons chopped red onions

Steps:

  • In a plastic storage container, whisk together the juice, yogurt, mustard, and preserves. Add the broccoli and onion. Toss to coat.
  • Cover the container with the lid. Refrigerate for at least 1 hour or up to 1 day before serving.

This quick and easy recipe comes from the Renees Dressing that is used in the salad....I've modified it slightly. It is absolutely delicious....sweet and tangy and refreshing...and the colour of it is beautiful. You should prepare it just before serving, which may be it's only setback, but it doesn't take long. I hope you enjoy it!

1/4-1/2 cup sweet onion vinaigrette dressing (I use Renees Naturally Light Sweet Onion Vinaigrette)
2 cups broccoli florets (or a combo of broccoli/cauliflower)
1 can mandarin orange, drained (reserve the juice for another purpose if you'd like...I always add mine to chicken stirfry)
1/2 cup finely diced sweet onion (vidalia's are the best!!)
1 red pepper, cut in thin strips
crumble feta cheese (optional)

Steps:

  • Steam broccoli about 3 minutes (you want it to be slightly crunchy).
  • Drain and rinse with cold water.
  • Place broccoli, orange segments, onion and pepper in a bowl.
  • Toss with vinaigrette and serve.
