BUTTERMILK CORNBREAD

So easy! No mixer needed here! Amazingly moist and slightly sweet. A classic side dish loved by EVERYONE. Serve with butter. SO GOOD.

Number Of Ingredients 8

1 1/2 cups cornmeal
1 cup all-purpose flour
1/3 cup sugar
4 teaspoons baking powder
1 teaspoon kosher salt
2 cups reduced fat buttermilk
1 large egg
6 tablespoons unsalted butter, melted and divided

Steps:

  • Preheat oven to 425 degrees F. Place an oven-proof 10-inch cast iron skillet in the oven. In a large bowl, combine cornmeal, flour, sugar, baking powder and salt. In a large glass measuring cup or another bowl, whisk together buttermilk, egg and 3 tablespoons butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Remove skillet from the oven and add remaining 3 tablespoons until heated through, about 1-2 minutes. Working carefully, immediately scoop the batter into the hot skillet. Place into oven and bake for 25-30 minutes, or until a tester inserted in the center comes out clean. Let cool 5 minutes. Serve warm.

4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste
4 cloves garlic, minced

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  • In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

1 ½ cups (about 7 ½ ounces) medium-grind cornmeal
1 cup (about 4 ¼ oz.) all-purpose flour
2 tablespoons light brown sugar
1 tablespoon baking powder
1 teaspoon kosher salt
1 ⅓ cups whole buttermilk
2 large eggs
5 tablespoons melted unsalted butter, divided

Steps:

  • Preheat oven to 425°F. Place a 10-inch cast-iron skillet in oven for 10 minutes.
  • Meanwhile, stir together cornmeal, flour, sugar, baking powder, and salt in a large bowl; set aside.
  • Whisk together buttermilk, eggs, and 4 tablespoons of the butter; stir into cornmeal mixture just until combined.
  • Remove skillet from oven, and add remaining 1 tablespoon butter to skillet; swirl butter around skillet until heated through, about 30 seconds. Carefully pour batter into hot skillet. Bake in preheated oven until cornbread is golden and pulls away from sides of skillet, 18 to 20 minutes. Remove from oven, and let cool 3 to 5 minutes before inverting onto a wire rack; slice and serve warm.

When I bring them to a potluck, it is almost embarassing the way they rave over them! This is one of my most prized recipes, and now you can make them, too!

1 15 ounce can of campbell's pork & beans
3/4 cup dark brown sugar
1 teaspoon dry mustard
6 slices bacon, cut into small pieces
1/2 cup ketchup
1 tablespoon bacon drippings

Steps:

  • 1. Partially cook bacon, do not brown. Mix all ingredients together, beans, sugar, dry mustard, bacon with drippings and the ketchup into a greased casserole dish.
  • 2. Bake uncovered in a 325 degree oven for 2 1/2 hours. They magically become the best baked beans you could ever want! Enjoy!
  • 3. Cook's Tip: If you are at high altitude, watch your beans. Very high altitude usually doesn't take as long to bake. This recipe can be doubled and tripled for large groups.

1 (12 ounce) package all beef wieners
2 (16 ounce) cans baked beans
1/8 cup catsup
1 tablespoon dijon-style mustard
1 tablespoon dark brown sugar
1 tablespoon dark molasses
1 teaspoon hot pepper sauce
1 green onion, including part of the green,chopped
1 tablespoon olive oil
2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk

Steps:

  • Preheat oven to 350*F.
  • Brown weiners in a skillet.
  • Cut diagonally into 1 inch pieces.
  • Mix beans, catsup, mustard, sugar, molasses and pepper sauce in a 9 inch square baking dish.
  • Stir in weiners (This much can be fixed ahead and refrigerated if you wish) Saute green onion in oil until soft.
  • Set aside.
  • Whisk together cornmeal, sugar, flour, baking powder and salt in a bowl.
  • Stir in green onion with oil.
  • Mix egg and milk together, then stir into flour mixture until smooth.
  • Spoon over casserole.
  • Bake for 30 minutes or until golden brown.
  • Let cool 15 minutes before serving.
