BARBECUE SAUCE FOR CANNING

Mom used to make this every year, and use it for braising, baking, grilling or broiling- mostly chicken, but I have used it on pork as well.

Yield 8 1/2 pint jars

Number Of Ingredients 11

5 lbs prepared tomatoes
2 cups coarsely chopped onions
1/2 cup brown sugar
1/2 teaspoon cayenne pepper
1 1/2 cups white vinegar
4 teaspoons coarse salt
2 cloves garlic, minced
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger

Steps:

  • Blanch, peel and coarsely chop tomatoes to measure 10 cups.
  • Combine tomatoes, onion, sugar,and cayenne in a large saucepan.
  • Bring to a boil, stirring constantly.
  • Boil gently, stirring occasionally for about 1/2 hour.
  • Remove from heat and puree mixture.
  • Return mixture to saucepan stir in vinegar, salt,garlic, and spices.
  • Bring to a boil, stirring constantly.
  • Boil gently for about 1 hour, stirring occasionally.
  • Fill boiling water canner with water.
  • Place 8 clean 1/2 pint mason jars in canner over high heat.
  • Place lids and seals in boiling water, boil 5 min to soften seal.
  • Ladle sauce into hot jars, to within 1/4" of top rim.
  • Remove air bubbles with spatula, and re-fill to 1/4" wipe jar to remove any stickiness.
  • Place seal on jar, and apply screw band just until finger tight.
  • Place jars in canner.
  • Cover canner, return water to the boil, process 15 minute Remove jars, allow to cool for 24 hrs, and check seals.
  • Store in a cool dark place.

This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend.

½ onion, minced
4 cloves garlic, minced
¾ cup bourbon whiskey
½ teaspoon ground black pepper
½ tablespoon salt
2 cups ketchup
¼ cup tomato paste
⅓ cup cider vinegar
2 tablespoons liquid smoke flavoring
¼ cup Worcestershire sauce
½ cup packed brown sugar
⅓ teaspoon hot pepper sauce, or to taste

Steps:

  • In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
  • Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

2 cups ketchup
2 cups tomato sauce
1 ¼ cups brown sugar
1 ¼ cups red wine vinegar
½ cup unsulfured molasses
4 teaspoons hickory-flavored liquid smoke
2 tablespoons butter
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon chili powder
1 teaspoon paprika
½ teaspoon celery seed
¼ teaspoon ground cinnamon
½ teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon coarsely ground black pepper

Steps:

  • In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
  • Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.
