BASIL PARMESAN SHRIMP

- For dressing, combine 1/4 cup oil, basil, vinegar, 1 tablespoon Parmesan cheese and sugar in a saucepan over low heat. Meanwhile, combine shrimp and remaining cheese. , In a large skillet, heat butter and remaining oil. Add shrimp; saute for 3-4 minutes or until shrimp turn pink. Drain on paper towels. Serve on lettuce; drizzle with warm dressing.

LOLA SHRIMP AND PARMESAN POLENTA GRITS WITH TOMATO BASIL CONCASSE

- For the shrimp sauce: Heat 2 tablespoons of the olive oil in a large, deep skillet over medium-high heat. Saute the onions and turkey bacon for 3 minutes. Add the garlic, clam juice, diced tomatoes, Italian seasoning and sugar. Simmer for 25 minutes.
- Sprinkle the shrimp with salt, pepper and the smoked paprika. In a small skillet, heat the remaining 2 tablespoons olive oil over medium heat and saute the shrimp for 1 minute. Transfer the shrimp to the tomato sauce and simmer for 2 minutes.
- For the polenta: Bring 3 cups water to a boil in a large saucepan. Stir in the polenta and reduce the heat to a simmer. Cook for 10 minutes. Stir in the heavy cream, Parmesan, butter and lemon zest. Taste and season with salt and pepper.
- To serve: Divide the polenta between shallow serving bowls and top each with some shrimp and sauce. Garnish with the turkey bacon and parsley.
PARMESAN SHRIMP WITH BASIL DRESSING
Shrimp can be prepared and refrigerated up to 24 hours before using. Toss in cheese just before cooking. Prepare Dressing up to a few hour in advance. If possible , use freshly grated Parmesan cheese. If basil is out of season, substitute parsley.

Steps:
- Shell shrimp, leaving tails intact.
- Remove back vein, flatten with rolling pin. (butterfly them).
- Toss shrimp in Parmesan cheese. Heat butter and oil in pan, add shrimp, cook quickly on both side until light golden brown.
- Do not overcook or shrimp will toughen.
- Drain on paper towels immediately.
- Serve with lettuce (I use romaine), cherry tomatoes and lemon wedges.
- Top with Basil Dressing.
- Basil Dressing: combine all ingredients, mix well.

PARMESAN SHRIMP WITH BASIL BUTTER
This recipe is so easy, but so elegant. Your dinner guests will think you slaved for hours to prepare it. Can be served as a first course or as a main course accompanied by your favorite side dishes.

Steps:
- 1. Combine the basil and salt to the softened butter mixing to combine.
- 2. Place butter mixture on a piece of plastic wrap and shape into a log.
- 3. Wrap tightly and place in refrigerator to harden.
- 4. Preheat oven to 425 degrees. Place shrimp in a baking dish and season with salt, pepper and olive oil, tossing to coat completely.
- 5. Cook for 10-15 minutes depending on the size of your shrimp or until they are perfectly pink in color.
- 6. Remove from oven and slice the basil butter over the top, and sprinkle the Parmesan over all.
- 7. Top with more fresh basil.
