3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup

Steps:

  • Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.
  • Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan to make 3 or 4 pancakes. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter and maple syrup.

1/3 cup pecan halves, chopped

4 tablespoons confectioners' sugar (icing sugar)
2 tablespoons orange juice
1/2-1 teaspoon orange zest, finely chopped

10 fluid ounces buttermilk
2 tablespoons butter
2 large eggs, whites and yolks separated

2 cups prepared vanilla pudding
2 cups cream cheese, room temperature
1/2 cup pancake batter, prepared, for 2 pancakes
2 tablespoons honey-roasted pecans
1 banana, sliced into 1/2-inch thick slices
1 teaspoon caramel sauce
1 tablespoon powdered sugar
1 tablespoon whipped topping

100g dark chocolate bar
25g unsalted butter
3 tbs milk

2 cups self rising flour
2½ cups milk

olive oil to brush the frying pan
vanilla ice cream to serve

  • Beat eggs lightly, stir in milk and flour, mix well with a whisk. Pour about 125ml of pancake mixture on hot, brushed with oil frying pan. Fry over medium fire on both sides until golden, leave aside. Repeat the same until pancake mixture is finished. In meantime in a small sauce pan place chocolate bar, milk and butter and heat over low fire until melted, leave aside. On the same frying pan you were frying pancakes melt the butter, place halved bananas, sprinkle them with vanilla sugar and fry on both sides until they are starting to get brown. 2 cups milk
2 large eggs
4 tablespoons unsalted melted butter, divided
1/2 teaspoon vanilla
1 cup all-purpose flour
1/4 cup sugar
1 pinch kosher salt
1 (15-ounce) can cherry pie filling, divided
1 (8-ounce) container whipped cream cheese
2 bananas, sliced
1/2 cup chocolate and hazelnut spread (recommended: Nutella)
Powdered sugar, for garnish

Steps:

  • For the batter: In a large bowl, whisk together the milk, eggs, 2 tablespoons melted butter and vanilla. In another bowl, whisk together the flour, sugar and salt. Combine the dry ingredients into the wet ingredients, whisking out any lumps. Let the batter rest for a few minutes while you prepare the fillings. (Batter can be covered and refrigerated for up to 24 hours, but it may need to be thinned a bit.)
  • For the fillings: Mix together 1 cup cherry pie filling and the cream cheese; cover and refrigerate until ready to serve. Put the remaining cherry pie filling into a serving bowl. When ready to serve, slice the bananas and put them into a bowl; put the chocolate spread into another bowl.
  • For the pancakes: Grease the pan with a bit of the melted butter. Pour a scant 1/4 cup of batter into the pan, swirling the pan to coat it evenly. When the top looks dry and bubbles and the edges are lightly browned, 45 seconds to 1 minute, flip the pancake over and cook for an additional 15 to 20 seconds. (The first pancake may not turn out perfect so don't worry if it does not work, eat it as a snack.) Place the pancake onto a plate and continue cooking the remaining batter in the 1/4 cup increments, brushing the pan with melted butter as needed. Stack the pancakes on top of each other and set aside covered with foil until ready to serve. (Pancakes can be covered and refrigerated for up to 24 hours. Pancakes can be placed between layers of wax paper, wrapped in plastic and frozen for up to a month. Thaw overnight in the refrigerator before using.)
  • To serve: Put the pancakes out along with the bowls of fillings. Fill a pancake with a dollop of 1 of the fillings fold it in half and roll it up like a cigar. Garnish with a dollop of the remaining cherry pie filling or sprinkle with a bit of the powdered sugar.

1 packet instant hot chocolate
4 ounces (about ¾ cup) whipped topping
2 cups dry buttermilk pancake mix (just add water version)

1 banana, sliced (optional)
¼ cup mini semi-sweet chocolate chips (optional)
¼ cup chopped walnuts (optional)

Steps:

  • 1. Combine strawberries and chocolate powder in small bowl; stir to coat. Refrigerate until syrup develops, about 30 minutes. Fold in whipped topping; return to refrigerator. 2.
