This recipe represents our part of the country as fishing is very big here. We eat a lot of fish, and this is one of our favorite ways to prepare it.

2 pounds whitefish fillets
1/8 teaspoon pepper
1 egg white
1/2 teaspoon salt, optional
1/4 cup mayonnaise
1/4 teaspoon dill weed
1 teaspoon grated onion
Fresh dill and lemon wedges, optional

Steps:

  • Preheat oven to 425°. Place fish in a greased 13-in. x 9-in. baking dish; sprinkle with pepper. Beat egg white with salt if desired until stiff peaks form. Fold in mayonnaise, dill and onion; spoon over fish. Bake, uncovered, until topping is puffed and fish flakes easily with a fork, 15-20 minutes. Garnish with dill and lemon if desired.

This is a very easy recipe that can be made on a budget. Whitefish like catfish, whiting, and tilapia can be used. It's healthy and quick, I make this on busy weeknights.

4 white fish fillets (tilapia, flounder, catfish)
2 tablespoons light mayonnaise
2 tablespoons parmesan cheese
lemon pepper
breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Cover baking sheet with foil and coat with light cooking spray.
  • Using a knife, spread 1/2 tbsp mayonnaise onto each fish fillet.
  • Sprinkle each fillet lightly with parmesan cheese.
  • Sprinkle each fillet with lemon pepper.
  • Sprinkle each fillet lightly with breadcrumbs.
  • Bake for 15 minutes or until fish flakes easily.

1 large bunch cilantro, chopped
3 large garlic cloves, chopped
3 tomatoes, sliced
4 5-to 6-ounce whitefish or sea bass fillets
1/4 cup olive oil
1 tablespoon paprika
1 teaspoon instant chicken bouillon granules
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground pepper
3 cups (about) water

Steps:

  • Spread cilantro evenly over bottom of heavy Dutch oven, Sprinkle with garlic; arrange tomatoes over. Set fish atop tomatoes. Whisk oil, paprika, bouillon granules, cumin, turmeric and pepper to blend in small bowl. Pour over fish. Add enough water to pot to reach bottom of fish. Bring water to boil over high heat. Cover pot, reduce heat to medium-low and simmer until fish is just cooked through, about 10 minutes.
  • Using large spatula, transfer fish and vegetables to platter. Spoon some cooking liquid over and serve.

EASY BAKED WHITEFISH OLE'

I got this recipe off a package of frozen whitefish, and it was a lifesaver when I was drawing a mental block on what to cook one night. I added some black pepper to this, and I served the fish with rice, some corn, and a salad. Although this serves four, we can easily eat this all between the two of us.

1 1/2 cups salsa
1 lime
2 tablespoons fresh cilantro, chopped

2 lbs skinless white fish fillets (can use halibut or cod)
2 small onions, sliced
1 tablespoon butter
3 tablespoons white wine
1 dash salt
1 dash pepper
1 clove garlic, minced or pressed
1/3 cup dry white wine or 1 1/2 tablespoons lemon juice
3/4 cup whipping cream (low fat, use 1/2 cup milk)
1/2 teaspoon dried oregano leaves or 1 -2 teaspoon chopped fresh oregano
1/3 cup grated cheddar cheese
1/3 cup grated parmesan cheese
2 tablespoons breadcrumbs
1/2 lb cooked shrimp

Steps:

  • In heavy pan, saute onion in butter& 3 Tbsp of white wine over medium heat, do not brown.
  • Spread onion over bottom of a shallow baking dish.
  • Arrange fish fillets over onion in dish overlapping thin edges.
  • Sprinkle with S& P, and add garlic.
  • Pour 1/3 cup of dry white wine (or lemon juice) over fish.
  • Add whipping cream or milk and oregano.
  • Cover with foil and bake at 425 degrees for about 10 minute.
  • Uncover, add Cheddar, Parmesan and breadcrumbs.
  • Distribute shrimp evenly over the top.
  • Bake, uncovered, for another 10 minutes or until top is golden brown, cheese is melted and fish flakes easily.

Vegetable oil
1 4- to 4 1/2-pound whitefish, cut into 2 fillets, fatty portions trimmed along center and flap edges
3 cups coarsely chopped fresh dill (about six 1/2-ounce packages)
1 medium onion, coarsely chopped
1 teaspoon coarse salt
1/4 teaspoon ground pepper
6 tablespoons white vinegar
Relish
4 cups diced peeled seeded cucumber (about 4)
2 pounds plum tomatoes (about 12 large), seeded, chopped
1/2 cup chopped fresh dill
1/4 cup white vinegar
4 teaspoons coarse kosher salt
Fresh dill sprigs

Steps:

  • For fish:
  • Line heavy baking sheet with foil; brush with oil. Arrange fish skin side down on foil. Finely chop dill and onion in processor. Sprinkle each fillet with half of salt and pepper. Press dill mixture firmly over. Pour vinegar evenly over. Cover and chill overnight, basting occasionally with juices.
  • Position rack in center of oven and preheat to 375°F. Uncover fish and bake until just cooked through, about 25 minutes. Let stand at room temperature 30 minutes. Cover and chill at least 2 hours and up to 2 days.
  • For Relish:
  • Combine first 5 ingredients in medium bowl. Let stand 3 hours, stirring occasionally. Season with pepper.
  • Scrape most of dill off fish. Cut crosswise into 12 portions; trim neatly. Slide spatula under each, separating from skin. Arrange fish on plates. Drain relish and spoon over. Garnish with dill sprigs.

1/2 pound wild white king kippered (hot smoked) salmon, skin and bones removed, chopped

2 pounds whitefish fillets
2 tablespoons Dijon mustard
2 cloves garlic, minced (green part removed)
Juice 1/2 lemon
2 tablespoons safflower oil
2 tablespoons fresh thyme (or 2 teaspoons dried)
2 large sweet potatoes
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
1 medium onion, thinly sliced
1/4 to 1/2 cup creme fraiche
1/2 teaspoon Hungarian paprika

Steps:

  • Wipe the whitefish fillets dry with paper towels. In a small bowl combine the mustard, garlic, lemon juice, safflower oil and thyme. Spread the mixture over the fillets and let sit for an hour.
  • Preheat oven to 400 degrees.
  • Peel the sweet potatoes and slice them thin, using a food processor if you like. Arrange them in a shallow baking dish that will hold the fillets comfortably in one layer. Sprinkle them with salt and pepper and dot with butter. You may need to make two layers or more of potato.
  • Add the onion and half of the creme fraiche, spreading it over the potatoes, just enough to moisten. Sprinkle with paprika, cover and bake for 20 minutes.
  • Remove the sweet potatoes from the oven and spread the fillets over the top. Pour the rest of the cream evenly over the fillets. Bake, uncovered, until the fish flakes with a fork, and the potatoes are soft, about 20 minutes.

You can use tilapia, cod, halibut any whitefish in this recipe. It turns a gold brown colour and the hint of lemon comes through and is just enough to delight any palate. I served this along side my spicy Potato Salad.

1 lb white fish fillets
1/4 c earth balance, melted
2 Tbsp lemon juice
1/4 c spelt flour
1/2 tsp sea salt
1/8 tsp white pepper
paprika

Steps:

  • 1. Cut fish into 3" pieces.
  • 2. Melt the Earth Balance and add the lemon juice
  • 3. In another bowl mix the spelt flour, salt and pepper.
  • 4. Dip the fish into the Earth Balance/lemon mixture, then roll in the flour.
  • 5. Place in an un-greased baking dish with at least 1" sides. Pour the remaining Earth Balance/lemon mixture over the fish.
  • 6. Bake uncovered at 350'F for about 25-30 minutes or until fish is flaky but not dry.
  • 7. Garnish with parsley and lemon slices if desired.
  • 8. Enjoy!

I love Whitefish, It reminds me of heading up north to Wisconsin. My husband and I eat a lot of fish and I am always looking for new ways to prepare it. I got this idea from another recipie I use to make fish. This recipie was born tonight and it was delicious.

2 white fish fillets about 3/4 lb each ours weighed 1.39 together
3 green onions chopped fine
3-4 Tbsp chopped cilantro
1 small lime, juiced
1 Tbsp teriyaki marinade
2 tsp tequila
1 Tbsp olive oil, light
1 tsp aunt jane's mixed up salt

Steps:

  • 1. Place the Fillets skin side down in a 9x13 glass cake pan (or cookie sheet with sides) Preheat oven to 350, If you have convection turn it on. If not plan on the cooking time being a bit longer.
  • 2. Combine Cilatro and onion and rub into the fish gently
  • 3. Mix the next five ingredients and eat a little with a whisk to be sure all is disperse evenly with the olive oil
  • 4. Pour over fish and bake uncovered in the oven. Whitefish is done when it is opaque and the thickest part flakes. It is a very mild moist fish so the flakes are big
  • 5. The skin will stick to the glass baking dish. I use a spatula to lift half the fillet off the skin then lift the other half. If you want the skin attached, spray the pan first.
  • 6. I served this wonderful fish with Califlower which had Swiss cheese melted over it and a Pepper salad.

4 tbsp butter, divided
2 tbsp finely chopped shallots
2 tbsp flour
1 1/2 cups milk
1/4 cup whipping cream
1/4 cup grated gruyere
1 egg
1 lb fresh spinach
4 skinless boneless pieces of fish
1/4 cup white wine
2 tbsp grated parmesan

Steps:

  • Preheat oven to 425 degrees Using 1 tbsp butter grease a baking dish big enough to hold all the fish. Sprinkle with 1 tbsp shallots. For cheese sauce: Melt 2 tbsp butter in sauce pan. Add flour and whisk. Add milk and cream and whisk. When thickened remove from heat and add cheese. Add egg and whisk. For spinach: Cut any bis spinach stems. Rinse spinach and drain. Place spinach in medium sauce pan and cook over medium heat stirring constantly until wilted, about 3 minutes. Then transfer to a colander and drain. For fish: Add fish to pan on stove and add wine. Bring to a boil on top of stove then place in 425 degree oven and bake for 10 minutes. For assembly: Melt butter in skillet, add shallots, spinach and cook for 1 minute. Smooth spinach over bottom of baking dish, place fish over spinach. Cover and keep warm. Pour wine from baking dish into saucepan. Reduce by half. Add cheese sauce and stir. Spoon hot sauce over fish. Sprinkle with parmesan and bake in oven till bubbling and browned.
