ONE PAN CHICKEN SAUSAGE, ARUGULA, AND POTATO SALAD

One Pan Chicken Sausage, Arugula, and Potato Salad image

Adapted from Smitten Kitchen, this perfect fall dinner requires one pan, simple ingredients, and easy clean up. Look for fresh sausages at your local butcher, Central Market, or Whole Foods to avoid MSG and additives. This is a really versatile recipe. I've mixed in sweet potatoes and butternut squash to the potatoes before, but this original version is my favorite.

Time 50m

Number Of Ingredients 7

3 tbsp olive oil
1-3/4 pounds mixed small potatoes like fingerlings and purple potatoes, cut in half and in 1" pieces (if not fingerlings)
1-1/2 pouds sweet Italian chicken sausage, cut in 3 inch sections
5-6 large shallots, peeled and halved
1 5oz bunch of arugula (* I just bought a packaged but used only 1/2)
1-2 tbsp white vinegar
kosher salt and fresh ground pepper to taste

Steps:

  • Heat oven to 425 degrees while you cut your potatoes, shallots, and sausages. On a large baking sheet (I like to cover mine with parchment paper), toss together the potatoes and shallots with the olive oil. Make sure your potatoes are all laying flat on the sheet and not stacked on top of each other. Sprinkle with salt and pepper.
  • Bake potatoes and shallots for 20 minutes. Remove the sheet from the oven and toss the potatoes and shallots. Then add the cut sausages to the baking sheet. Cook another 20-25 minutes at 425.
  • In a large bowl toss the arugula with the vinegar and some salt and pepper to taste. Add the roasted chicken sausage, shallots, and potatoes.
  • If using chicken breasts, cut the breasts in half so they're in smaller pieces. Sprinkle with salt and pepper, 1 clove of minced garlic, 1 tbsp of olive oil, 1 tsp of thyme, and 1 tsp of oregano. You can combine all of this in a bowl for easy mixing, if you'd like. Cook the same, giving the chicken about 15-20 minutes at 425. Chicken should reach 165 internal temperature.

Time 3h45m

Yield 6 servings

Number Of Ingredients 12

3 small to medium sweet potatoes
2 links sweet Italian sausage, crumbled
1 shallot, minced
1/4 cup pine nuts
1/4 cup dark raisins
2 tablespoons fresh sage, minced
1/4 teaspoon ground nutmeg
3 ounces ricotta
1 large egg, lightly beaten
2 ounces Parmesan, grated
Freshly ground black pepper
Chopped fresh herbs for garnish, such as parsley, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Pierce the sweet potatoes all over with a fork. Bake on a sheet tray until tender, about 1 hour to 1 hour and 20 minutes. Allow the sweet potatoes to cool slightly, then cut them in half and scoop the flesh into a bowl, keeping the skins intact. Set aside the skins on a sheet tray.
  • Heat a medium saute pan over medium heat. Add the sausage and cook until browned, about 4 minutes, then add the shallots and allow to soften for about 1 minute. Add the pine nuts and stir to combine, allowing them to be coated in the fat. Stir in the raisins, sage and nutmeg, then remove from the heat. Transfer the mixture to the bowl with the sweet potato flesh and allow to cool completely in the refrigerator, about 1 hour.
  • Meanwhile, place the ricotta in a strainer over a bowl and allow to strain for 15 minutes.
  • Preheat the oven to 375 degrees F.
  • Mix the egg, ricotta, Parmesan and pepper to taste into the filling mixture, being sure to keep the mixture chunky.
  • Spoon the mixture into the skins. Bake until the tops are crispy and golden, 35 to 40 minutes. Garnish with fresh herbs if desired.

CHICKEN AND POTATO GRATIN WITH BROWN BUTTER CREAM

Chicken and Potato Gratin With Brown Butter Cream image

This gratin is decidedly autumnal, inspired by a recipe from one of my favorite food writers, Richard Olney. Olney's chicken gratin calls for making a savory custard, but here you'll combine brown butter and heavy cream with aromatics for a flavorful and easy sauce instead. It's still a luxurious dish. The breadcrumbs for the topping get toasted separately, so they stay crisp and the chicken (ideally seasoned a day in advance so the salt has time to work its way into the meat) and vegetables can get nicely browned and crisp too. I love that this gratin can reinvent itself based on what's available at the market (or in my fridge). In the spring, you might make it with asparagus and young onions; in summer, with tomato wedges, swapping in olive oil for the cream. I recommend serving this fall version with lemon wedges for squeezing over to cut the richness of the dish. A brightly dressed arugula salad would also do the trick.

Yield 4 Servings

Number Of Ingredients 13

3 lb. skin-on, bone-in chicken thighs and drumsticks
7½ tsp. kosher salt, divided
1 lb. small potatoes (such as fingerling or baby Yukon Gold), halved lengthwise
8 oz. small or medium shallots, halved through root ends
5 Tbsp. unsalted butter, divided
¾ cup heavy cream
2 garlic cloves, finely grated
½ tsp. freshly ground black pepper
¼ tsp. freshly grated or ground nutmeg
8 sprigs thyme
8 sage leaves
3½ oz. country-style bread, preferably day-old, torn into large pieces
1 lemon, cut into wedges (optional)

Steps:

  • Season chicken all over with 4 tsp. salt. Place in an airtight container and cover. Chill at least 1 hour and up to 1 day.
  • Place a rack in middle of oven; preheat to 425°F. Toss potatoes, shallots, and 2 tsp. salt in a large bowl.
  • Melt 4 Tbsp. butter in a small saucepan over medium heat and cook, stirring often, until butter foams, then browns, 5-8 minutes. Immediately remove from heat (it will continue to darken) and stir in cream, garlic, pepper, nutmeg, and remaining 1½ tsp. salt. Set saucepan over medium-low heat and cook, stirring, until salt is dissolved and mixture is warm to the touch. Stir in thyme and sage; remove from heat.
  • Heat remaining 1 Tbsp. butter in a large stainless-steel skillet over medium-high until melted and bubbling. Working in 2 batches, cook chicken, skin side down, until golden underneath, about 5 minutes. Transfer chicken to a 13x9" or 3-qt. baking dish and arrange skin side up. Set skillet with pan drippings aside. Nestle potatoes and shallots around chicken (don't place on top). Pour brown butter cream over chicken and vegetables, making sure herbs and spices are evenly dispersed and tucking herbs into vegetables so they don't get too crispy when they bake.
  • Bake gratin until cream is mostly reduced and chicken and vegetables are dark golden brown, about 40 minutes. Let gratin cool 5-10 minutes.
  • Meanwhile, pulse bread in a food processor until pieces are about oat-size (you should have about 1¼ cups). Toss breadcrumbs in pan drippings in reserved skillet to coat. Cook over medium heat, scraping up browned bits with a spatula, until deep golden brown, 5-7 minutes. Let cool.
  • To serve, top gratin with breadcrumbs. Serve lemon wedges alongside for squeezing over if desired.

SHEET-PAN SAUSAGES AND MUSHROOMS WITH ARUGULA AND CROUTONS

Sheet-Pan Sausages and Mushrooms With Arugula and Croutons image

If stuffed mushrooms grew up into a main course, it would be this one-pan dinner. To start, sausages and mushrooms roast on a sheet pan, leaving behind seasoned pan drippings. Next, in a move inspired by Judy Rodgers's roast chicken with bread salad from Zuni Café in San Francisco, torn bread pieces are tossed with the drippings, then sent back to the oven to toast. The toasted bread is then tossed with arugula, red-wine vinaigrette and the roasted mushrooms, making a great mix of crispy, tangy and spicy bites. Crusty bread can be hard to tear from the loaf, but the rough edges make a more interesting final product: To ease the process, slice the bread 1/2-inch-thick, then slice crosswise 1/2-inch thick, then tear little pieces from there.

Time 40m

Yield 4 servings

Number Of Ingredients 10

1 pound hot or sweet Italian sausages
1 pound mixed mushrooms, such as shiitake, oyster, maitake or cremini, trimmed and quartered (or cut into 1-inch pieces if large)
5 tablespoons extra-virgin olive oil, plus more as needed
Kosher salt and black pepper
3 tablespoons red wine vinegar, plus more as needed
1 garlic clove, coarsely chopped
4 cups torn, bite-size pieces of crusty bread (6 to 8 ounces)
2 cups arugula
1/2 cup coarsely chopped fresh parsley leaves
Finely grated Parmesan, for serving

Steps:

  • Heat the oven to 450 degrees. Score the sausages in a few places on both sides, making sure not to cut all the way through. Toss the sausages and mushrooms on a sheet pan with 2 tablespoons olive oil, salt and pepper. Spread in an even layer and roast, shaking the pan once or twice, until browned and cooked through, 20 to 25 minutes.
  • Meanwhile, in a small bowl, combine the remaining 3 tablespoons olive oil with the vinegar and garlic; season to taste with salt and pepper.
  • When the sausages and mushrooms are done, use a slotted spoon or tongs to transfer to a plate, leaving the drippings behind. Add the torn bread and 1 teaspoon of the dressing to the baking sheet. If the bread seems dry, add more dressing, 1 teaspoon at a time. Roast until the bread is lightly toasted, 5 to 10 minutes.
  • Add the mushrooms and arugula to the pan. Drizzle and toss with the remaining vinaigrette until lightly coated. Stir in the parsley, then season to taste with salt, pepper, oil and vinegar. Sprinkle with Parmesan and eat with the sausages.
