SAUSAGE MACARONI BAKE
Everyone's bound to want seconds of this satisfying Italian-style bake from Kelli Bucy of Red Oak, Iowa. Oregano seasons the pork sausage, macaroni and tomato sauce mixture that's topped with a sprinkling of Parmesan cheese. "It really hits the spot when you want a quick not-so-big-meal," Kelli suggests.

Steps:
- Cook macaroni according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the green pepper, onion, oregano and pepper. Stir in tomato sauce and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Stir in macaroni and 2 tablespoons cheese. Transfer to an ungreased 1-qt. baking dish. Sprinkle with the remaining cheese. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

- Cook noodles according to package directions; drain. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 2 tablespoons drippings. , In the drippings, saute the green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the noodles. Add half of the bacon., Transfer to a greased 2-qt. baking dish. Top with cheese and remaining bacon. BACON-WRAPPED SAUSAGE CASSEROLE WITH APPLE & TOMATO SAUCE
From a popular collection of Recipes originally published in an Afrikaans magazine, Huisgenoot. The recipe calls for a coarse South African sausage, Boerewors, which is generally made up of 2/3 beef, 1/3 pork, plus spices, etc., but I use normal pork sausages for this. A lovely casserole, I serve it with Dauphinoise potatoes.

Steps:
- Roll each sausage in 1 or two rashers of bacon and secure with a toothpick.
- Sauté the apples and onions in half the oil. Spoon them into an ovenproof dish with a lid.
- Arrange the sausages on top.
- Braise the tomatoes and green pepper in the remaining oil, sprinkle the flour over, and cook for about three minutes.
- Add the stock and flavourings and cook for a further three minutes.
- Spoon the tomato sauce over the sausage, cover with the lid, and bake for 45 minutes in a preheated oven at 180°C (350°F).

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Meanwhile, heat oil in another skillet over medium heat. Add spinach and saute until just wilted, about 2 minutes. Remove from heat.
- Transfer spinach to the prepared baking pan; sprinkle in bell pepper, tomato, and onion. Add 1/2 of the Cheddar cheese. Sprinkle in sausage and bacon bits. Sprinkle with remaining cheese.
- Mix eggs, oregano, basil, salt, pepper, and garlic powder together in a blender until combined. Pour mixture into the baking pan over the vegetables and meats.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.
