This is a really good basic lasagna recipe. It's based on one I found somewhere, but I've tweaked it quite a bit to suit my own tastes. I like it as written with italian sausage, but you can substitute ground beef if you must.

1 1/4 lbs Italian sausage, casings removed (I use spicy)
1 (28 ounce) jar spaghetti sauce, of your choice
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups water
1 garlic clove, chopped
1 teaspoon italian seasoning
12 ounces ricotta cheese (about 3/4 small container)
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1/2 teaspoon ground black pepper
1 (8 ounce) package lasagna noodles, uncooked

Steps:

  • Heat oven to 350.
  • In large pan, brown italian sausage; drain.
  • Add spaghetti sauce, diced tomatoes, water, garlic and italian seasoning. Cover and simmer for 10-15 minutes.
  • In medium bowl, combine ricotta, 2 cups of the mozzarella, parmesan, eggs, parsley and pepper. Mix well.
  • Pour about 1 cup of the sauce on bottom of 9x13 pan.
  • Arrange 3 uncooked lasagna noodles over sauce; cover with about 1 cup sauce.
  • Spread 1/2 the cheese filling over sauce.
  • Repeat layers of lasagna, sauce and cheese filling.
  • Top with layer of lasagna and remaining sauce; sprinkle with remaining 1 cup mozzarella cheese.
  • Cover with foil and bake at 350 for 45 minutes.
  • Remove foil; bake an additional 15 minutes.
  • Let stand 10 minutes before cutting.

This is a traditional baked lasagna that is a favorite in our family. Ground beef, cottage cheese, and mozzarella make it rich and filling.

8 ounces lasagna noodles
1 pound ground beef
¼ cup minced onions
1 teaspoon salt
½ teaspoon garlic salt
1 (32 ounce) jar spaghetti sauce
1 (16 ounce) package large curd cottage cheese
1 pound mozzarella cheese, shredded

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet over medium heat, saute ground beef, onions, salt and garlic salt until meat is brown. Drain excess fat, add spaghetti sauce to beef mixture, and bring to a boil. Reduce heat, and simmer for 15 to 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking pan.
  • Line bottom of pan with three lasagna noodles. Spread 1/3 of sauce mixture over noodles. Layer 1/3 of the cottage cheese over the sauce. Sprinkle 1/3 of the mozzarella over the cottage cheese. Repeat this layering process until all ingredients are used up.
  • Bake in the preheated oven for one hour. Let stand for 10 minutes before serving.

1 pound lean ground beef
1 (6 ounce) can tomato paste
½ teaspoon salt
½ teaspoon Italian seasoning
1 cup shredded mozzarella cheese
⅓ cup grated Parmesan cheese

1 cup milk
2 eggs
½ cup biscuit baking mix

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until no longer pink. Drain and stir in the tomato paste, salt, and Italian seasoning. Set aside a little bit of the mozzarella and Parmesan cheeses for the top; stir the rest into the ground beef. Set aside.
  • Spread cottage cheese into the bottom of a 9 inch pie plate. Spoon the ground beef mixture over the cheese. In a small bowl, stir together the milk and eggs. Blend in the biscuit mix until smooth. Pour over the top of the pie, covering completely.
  • Bake in the preheated oven until top is browned, about 30 minutes. Remove from the oven and sprinkle the reserved cheese over the top.

I came up with this after trying to duplicate lasagna I fell in love with at a Christmas party. I had some of the details/ingredients, but not the exact recipe. If you don't like ricotta cheese, like a creamy lasagna or just want to try something different, give this a whirl! PLEASE don't substitute anything...it just won't come out the same.

9 ounces barilla no-boil lasagna noodles
8 -12 ounces mozzarella cheese, shredded
1 cup parmesan cheese (freshly grated or shaved)
2 (28 ounce) jars francesco rinaldi ultra dolce spaghetti sauce (also known as "Sweet and Tasty Tomato", you will have about 1/2 jar leftover)
6 tablespoons butter
4 1/2 tablespoons all-purpose flour
1 cup heavy whipping cream
2 cups whole milk
salt and pepper
nutmeg

Steps:

  • Make the Bechamel Sauce:.
  • Heat the cream and milk in the microwave until it is hot, but not boiling.
  • In a medium saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, until the mixture begins to bubble, about 2 minutes.
  • Gradually stir in the hot cream and milk. Continue to cook, whisking constantly, until the sauce comes to a boil. Reduce the heat and simmer, continuing to whisk, 2 to 3 minutes longer, or until fairly thick. Season to taste with nutmeg, salt and pepper. (I use about 1/8 teaspoon nutmeg, 1/4 teaspoon salt and 1/8 teaspoon pepper).
  • Directions for Assembling the Lasagna:.
  • In a deep lasagna pan begin layering with thin layer of red sauce.
  • Add first layer of pasta (4 sheets) on top.
  • Then add layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
  • Add second layer of pasta (4 sheets) on top.
  • Then add another layer of red sauce (about 1 cup) and béchamel sauce (about 1 cup). Sprinkle parmesan on top. Then layer a third of the mozzarella.
  • Add third layer of pasta (4 sheets) on top.
  • Then add another layer of red sauce (about 1 cup) and remaining béchamel sauce. Sprinkle parmesan on top. Then layer remaining mozzarella.
  • Add fourth and final layer of pasta (4 sheets) on top. Then top with red sauce and sprinkle with remaining parmesan.
  • Cover top of lasagna dish with cover or foil.
  • Place assembled lasagna dish into oven for 50 minutes at 375 degrees. Remove cover and bake for another 5 - 10 minutes.
  • Remove from oven and allow to settle for about 15-20 minutes before serving.

1/2 lb Italian sausage
1/2 lb ground beef
1 small onion, chopped
1 garlic clove, minced
1 (4 ounce) can sliced mushrooms
1/2 teaspoon salt
1/2 cup dry red wine
3 cups spaghetti sauce
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
12 lasagna noodles, uncooked
1 egg, slightly beaten
2 cups ricotta cheese or 2 cups cottage cheese
1/2 cup grated parmesan cheese
2 tablespoons parsley flakes
1 dash fresh ground black pepper
2 1/2 cups mozzarella cheese, shredded

Steps:

  • Brown meat and onion in large skillet, drain off excess fat.
  • (this can be done ahead and kept frozen until ready to use).
  • Add garlic, mushrooms, salt, wine, spaghetti sauce, paste, and tomato sauce to the meat mixture; mix well.
  • Set aside.
  • In a medium bowl, combine egg, ricotta cheese, Parmesan cheese and parsley flakes, set aside.
  • Spray crock pot with cooking oil.
  • Layer the bottom of a 5 to 6 quart crock pot with 4 noodles, broken into pieces to fit.
  • Spread half of the ricotta cheese mixture over the noodles.
  • Top with 1/4 of the meat mixture and 1/4 of the shredded cheese.
  • Top with 4 noodles, remaining cheese mixture, 1/4 of the meat mixture and 1/4 shredded cheese.
  • Top with remaining 4 noodles and remaining meat mixture.
  • Cover; cook on low setting for 6 to 8 hours.
  • About 10 minutes before serving, sprinkle top of lasagna with remaining shredded cheese.
  • Cover; let stand 10 minutes or until cheese is melted.

2 lb ground beef
1 box lasagna noodles, cooked
16 oz cottage cheese, small curd
1 1/2 pkg cream cheese, low-fat
1 pkg feta cheese
2 jar(s) spaghetti sauce
4 c mozzarella cheese

Steps:

  • 1. Brown ground beef. Add any spices you might like, ie. minced onion, garlic powder, black pepper. I usually add all of these spices while cooking the beef. After ground beef is throughly cooked, drain and mix spaghetti sauce together in large bowl. Use your preference of sauce. If you like a more meaty sauce you less and vice versa. Set aside.
  • 2. I like to use oven ready lasagna noodles (less prep time but more cooking time). However, if you are using the traditional noodles, prepare as package tells you. While your noodles are cooking, prepare your white sauce.
  • 3. For the white sauce, combine cottage cheese, cream cheese, and 1/4 cup of feta in a sauce pan. Heat until everything is melted to a creamy sauce. Be careful not to let this burn. - Noodles should be done by this time - Set noodles aside on wax paper - so they do not stick to one another.
  • 4. Time for layering your ingredients. Start with 1/4 cup of meat sauce on bottom of a 9x13 casserole dish. Next a layer of noodles. Layer of meat sauce. Layer of white sauce. Layer of mozzarella. Sprinkle some feta. Repeat until all ingredients are used. Sometimes I change up the layers just for fun. There really is no wrong way to do this. The very top should be mostly mozzarella and feta.
  • 5. Preheat oven to 350. If you are using oven-ready noodles make sure to top your dish with tin foil so your cheese does not burn. Cook for alloted time on package. Make sure to uncover your dish the last 10-15 minutes to get a nice golden brown to your cheese. If you pre-cooked your noodles you should be fine without covering and cooking for 35 minutes. Everything is cooked, you just need time to head throughly and brown your cheese.
  • 6. Once out of the oven. Let your dish set 10 minutes before serving. This gives cheese time to set and you will be able to serve the lasagna better without it being a runny mess. Enjoy!!

The crespelle, which are italian crepes, add a lighter fluffy texture to the lasagna, so I go lighter on the cheese than you would with traditional lasagna. If you like a less sweet sauce, cut the sugar in half. If you want it sweeter, more power too you!

1 1/2 cups all-purpose flour
1 teaspoon salt
4 eggs
1 1/2 cups milk
2 tablespoons butter

1 cup sweet white onion, diced
1/2 cup sweet red pepper, diced
1/2 cup sweet green pepper, diced
3/4 cup sugar
3 tablespoons balsamic vinegar
2 tablespoons olive oil
3 garlic cloves (or more)
1 lb sweet Italian sausage, without casing
1 lb ground beef
1 (28 ounce) can crushed tomatoes with garlic
1 (28 ounce) can tomato sauce
2 (6 ounce) cans tomato paste
1 teaspoon parsley
1 teaspoon sage
1 teaspoon rosemary
1 teaspoon thyme
salt and pepper
crushed red pepper flakes
24 ounces ricotta cheese, good quality is important
2 eggs
1/2 cup parmesan cheese
1 1/2 cups mozzarella cheese
1/4 cup parmesan cheese
1/4-1/2 cup mozzarella cheese

Steps:

  • Make Crespelle Batter:.
  • Start with the crespelle batter by mixing together flour and salt.
  • In a separate bowl, whisk four eggs plus milk.
  • Whisk the eggs into the flour mixture, and beat until you smooth and bubbly.
  • Melt butter in microwave.
  • Whisk butter into the batter.
  • Chill in the fridge for one hour while you make the sauce.
  • Make Your Sauce:.
  • In a very large sauce pot, saute the onions, garlic, and peppers in the 2 tbs of olive oil.
  • As they start cooking, add sugar and balsamic. (Red wine can be used if you prefer, but you may need to decrease the sugar a bit unless you like really sweet sauce.).
  • Once the liquid evaporates and the veggies are softened, add the meats, and cook until browned. Be careful not to overcook, or they will be dry in your sauce!
  • Add your cans of sauce, crushed tomatoes, and paste.
  • Add your parsley, sage, rosemary, and thyme.
  • Simmer for at least one hour, stirring occasionally. Keep a very close eye out that the bottom doesn't start burning, as the sweeter the sauce, the easier it burns! Don't be afraid to taste as it simmers, and add more sugar, salt, pepper, or crushed red pepper if necessary. Remember to add only a little at a time, and then allow time for the flavors to grow before tasting and adding more!
  • NOTE: This is enough sauce for TWO lasagna's, so reserve half and refrigerate or freeze when done.
  • Cook Crespelles:.
  • While the sauce simmers, finish making your crespelles.
  • Heat a 10 inch non-stick skillet on medium high heat.
  • Put a small amount of oil in the bottom of the pan and rub it inches.
  • Add 1/4 cup of batter and swirl around the bottom of the pan so it covers making a 10 inch pancake.
  • Loosen sides with spatula.
  • When the top appears bubbled and dry, go ahead and flip. Crespelle should be very lightly browned on bottom.
  • Give another minute or two on this side until brown spots appear on bottom.
  • Stack in a plate separated by paper towels so they don't stick.
  • I generally add a dab more oil between every two or three crespelle's.
  • Should make about 12 crespelle's, with maybe one or two left over for the kids to snack on. (They LOVE these things plain!).
  • Preheat your oven to 375.
  • Make your filling:.
  • Beat two eggs into the ricotta.
  • Add 1/2 cup of parmesan and 1 1/2 cups mozzarella. (Note, if you use lasagna noodles in place of the crespelle, use a bit more cheese for 'body'.).
  • To make the lasagna:.
  • Spray the bottom of a lasagna pan with Pam.
  • Place two crespelle's on the bottom of the pan, and tear parts of another one to fill in the two gaps on the side if necessary.
  • Add about 1/2 - 3/4 cup of sauce to LIGHTLY cover the crespelle with sauce.
  • Add one third of the cheese filling a teaspoon at a time, spreading over the sauce.
  • Add another layer of crespelle, and repeat the sauce and cheese layers.
  • Do this one more time, and then top with crespelle, a little more sauce, and sprinkle with the 1/4 cup parmesan and 1/2 cup mozarella.
  • Bake at 375 for approximately 30-40 minutes until cheese is melted and sauce is bubbly.
  • Let the lasagna stand for 15-20 minutes to 'firm up'.
  • Can be frozen as well.

1/2 lb bulk Italian sausage
1/2 lb ground beef
1 medium onion, chopped
1 carrot, grated
3 garlic cloves, pressed
1 cup chicken stock
1 (28 ounce) can roasted tomatoes, crushed
1 cup tomato sauce (I use Prego or Classico)
1 bay leaf
1 teaspoon basil, dried
1 lb campanelle pasta (any shape will work, but this provides a nice presentation)
1/4 cup fresh parsley, chopped
1 cup part-skim ricotta cheese
1 cup part-skim mozzarella cheese
1/4 cup parmesan cheese
salt and pepper

Steps:

  • Brown sausage and beef until cooked through, breaking it up as it cooks. Drain off any fat.
  • Add onion, carrot and garlic. Cook until vegetables are soft.
  • Add chicken stock and deglaze pan. Then add crushed tomatoes, tomato sauce, bay leaf and basil. Add salt and pepper to taste. Bring to a boil then turn down and simmer for 20 minutes.
  • Cook pasta as directed in salted water until just al dente.(about 8 minutes) Drain. Spread pasta into a 9x13" pan.
  • Remove bay leaf from sauce and stir in parsley. Combine sauce with pasta.
  • Drop spoonfuls of ricotta into pasta and stir until combined. Sprinkle with cheeses.
  • Bake for 20-30 minutes at 350 degrees until cheese is browned and sauce in bubbley.

This is the way I encourage my kids and family to eat veggies. It is delicious and easy to make.

4 - eggplant, sliced and peeled
4 tablespoon(s) corn oil
2 tablespoon(s) garlic
2 pound(s) ground beef
1 pound(s) ground ham
- complete seasoning to your taste
1 can(s) tomato sauce
1 - envelope of annatto seasoning (latin corner)
1 - cream cheese, room temperature
1 - spaguetti sauce
3 package(s) mexican blend shredded cheese
1 package(s) shredded parmesan cheese o grated

Steps:

  • Prepare your mold by greasing it with non-stick spray or butter.
  • On a non-stick pan sauteed your eggplant discs in a bit of olive oil and sprinkle some parsley on top. Remove from pan when slightly brown and cooked to tender.
  • On another large pan sauteed your meats in some garlic and olive oil. Season your meat and incorporate the tomato sauce and the annato. Mix together until fully cooked.
  • To mount your lasagna simply make a layer of eggplant discs, then add some of the cheese. Spread half of the meat all over your mold.Add some spaguetti sauce and cheese. Cover your cheese with another layer of eggplant. **NOTICE: If at this point you are running out of eggplants; why don't you try a twist on your recipe and add fried bananas (trust me, they're delicious), or slices of potatoes or zucchini (any cooked veggie could work...I dare you to try it)
  • After that, spread a second layer of meat, your softened cream cheese, spaghetti sauce, shredded cheese topped with our final layer of eggplant, remaining spaghetti sauce as well as the remaining shredded cheese. Finish mounting with the Parmesan cheese.
  • OK...there you have it...you delicious lasagna. Now you can bake it in the oven right away until your top cheeses melt (not burn...you are going to waste some materials!); or you can save it in the freezer until it hardens a bit and section them to easy microwaveable meals during weekdays or lunch at the office...they're gonna envy you so bad!!

Okay, I know what you're thinking: Lasagna without any cheese? Not on my watch. Trust me on this; you won't miss the cheese... promise. What is lasagna? Well, it's noodles, a meat sauce, and lots and lots of cheese. You've got cheese between each layer, cheese on the top... cheese, cheese, and more cheese. Don't get me wrong, I love cheese, but in this lasagna, the meat sauce is the star of the dish. And, we're even using gluten-free noodles. So, you ready... Let's get into the kitchen.

1 large zucchini, (8 ounces) washed, not peeled, and sliced 1/8-inch thick
2 medium carrots, (8 ounces) washed, peeled, and shredded on a box grater
1 medium onion (10 ounces) outer skin removed and shredded on a box grater
2 clove(s) garlic, minced
1 tablespoon(s) dried thyme leaves
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
1 pinch(es) red pepper flakes, or to taste
1 pinch(es) cayenne pepper, or to taste
1/2 cup(s) olive oil, extra virgin
1 pound(s) ground sirloin
14 1/2 ounce(s) whole peeled plum tomatoes, or equivalent fresh tomatoes.
8 ounce(s) tomato sauce
6 ounce(s) almond meal lasagna sheets, or equivalent regular sheets

Steps:

  • Gather your ingredients.
  • Slice the zucchini, shred the carrots, and onion, and then mince the garlic.
  • Crush the tomatoes and reserve along with any juices.
  • Add the olive oil to a saucepan over medium heat, along with the dried thyme.
  • When the oil is heated up, and begins to shimmer, add the onions.
  • Cook the onions until softened, about 6 minutes.
  • Add the garlic and carrots, and continue to cook for an additional 5 minutes.
  • Add the tomato sauce and tomatoes, and bring up to a very light simmer.
  • Allow the sauce to lightly simmer, covered, for 30 minutes.
  • Chef's Note: During this time, season with the salt, pepper, cayenne, and red pepper flakes, to taste. REMEMBER: The sauce is the star of this recipe, so spice it up a bit.
  • While the sauce is simmering add the ground beef to a skillet, over medium heat.
  • Cook, breaking apart the beef, until all the pink is gone, about 10 minutes.
  • Drain and add to the tomato sauce.
  • Combine, and bring back to a light simmer.
  • Allow to lightly simmer for about 5 minutes.
  • THE ASSEMBLY
  • Place a rack in the middle position, and preheat the oven to 350f.
  • Brush some olive oil on the bottom of a baking dish.
  • Chef's Note: My glass-baking dish is 10 inches by 6.75 inches.
  • Add a layer of lasagna noodles.
  • Chef's Note: Do you have to use gluten free noodles... Up to you. If you do choose wheat noodles, cook them according to package directions, before adding to the recipe.
  • If I'm not making my own noodles, Cappello's is the brand I choose. They are ready to go right out of the box.
  • Add a layer of zucchini.
  • Add a cup of the meat sauce.
  • Repeat two more times, until you have three complete layers.
  • Bake in the preheated oven for 45 minutes.
  • Slice and serve while still warm. Enjoy.
  • Keep the faith, and keep cooking.
