APPLE CRISP IN A MUG
Make an apple crisp in a mug, in minutes, right in your microwave, using simple ingredients like oatmeal, fresh apple, butter and sugar. Serve warm from the mug topped with a scoop of vanilla ice cream. Dessert for one. Anytime you want a little something sweet.

Steps:
- Spray a 12 ounce mug with non stick cooking spray.
- in a bowl, toss diced apples with flour, 2 teaspoons of sugar and a sprinkle of cinnamon. Add them to the mug.
- Add rolled oats to the bowl, mix with 1 1/2 Tablespoons of sugar, a sprinkle of cinnamon, and cold butter, cut into chunks. Mix with a fork or your fingers until combined. Add to the mug, on top of the apples.
- Place in microwave for 2 minutes. (check at 1 minute and 30 seconds as all microwaves vary) it will bubble and be cooked across the top.
- CAREFULLY remove from the microwave, it will be very hot! Let sit for a minute or two, then give a stir with a fork.
- Serve warm with a scoop of vanilla ice cream.

- Combine butter and white sugar in a bowl using your fingers. Add flour, oats, 3 dashes cinnamon, and salt; mix until crumbly.
- Grease a mug; flatten 1/2 the crumble mixture into the bottom to form a crust.
- Microwave crust for 30 seconds on high.
- Remove mug from microwave; add 1 dash cinnamon, apple slices, and brown sugar. Add water. Mix apples, brown sugar, and cinnamon together carefully without disturbing crust. Pour remaining crumble mixture on top.
- Microwave for 1 minute and 50 seconds on 60% power. Remove from microwave; let cool about 1 minute.

- For the filling: Preheat the oven to 375 degrees F.
- Combine the apples, sugars, flour, lemon juice, cinnamon, cornstarch, salt and nutmeg in a medium bowl and stir to combine. Melt the butter in a 12-inch skillet over medium heat. Add the apple mixture and cook, stirring frequently, until the apples start to soften, 5 to 8 minutes. Turn off the heat and set aside.
- For the streusel topping: Add the flour, oats, brown sugar, cinnamon, salt and butter to a food processor and pulse a couple of times until it resembles coarse, wet sand. (Do not overmix.) Set aside. Coat the insides of 4 oven-safe coffee mugs with cooking spray, then place them in a 9-inch square baking pan. Fill the mugs about three-quarters of the way with the apple mixture, then top each with 1/4 cup streusel topping. Bake until the top is golden brown, 25 to 30 minutes. Cool until warm to the touch, about 20 minutes.

- Combine the brown sugar, flour and cinnamon in a small bowl. Thinly slice the apple and toss in sugar mixture to coat.
- In a separate small bowl, combine the oats and butter. (I prefer old fashioned oats, even though the original recipe called for instant. I add enough oats to absorb all the butter, which was more than the 1 Tbls. called for in the original recipe.).
- Place the apples in a microwave safe mug and top with the oat mixture. Microwave 2-3 minutes or until the apples are tender.
- Top with a small scoop of ice cream, or whipped cream and a drizzle of caramel sauce, or sprinkle with shredded cheddar cheese before serving, if desired.
